In the early hours of the morning, when the Maestrale is still gently caressing the hills between Bolgheri and Bibbona and the first light kisses the red earth, the true essence of what Massimo Piccin has been moulding as his life's work for over two decades is revealed. Sapaio – named after the ancient Tuscan grape variety Sapaia – is more than just a wine. It is the manifesto of a visionary who came here in 1999 as a Venetian engineer and created a kingdom of the senses from eight hectares of bare earth. The name bears a crown as a logo, a tribute to the nobility of wine and the daily devotion of those who leave their souls between the vines and barrels. Since 2015, Sapaio has deliberately been labelled Toscana IGT, not out of embarrassment but out of conviction: Because the best grapes grow beyond the administrative borders of Bolgheri, in Bibbona, where ferruginous red clay soils provide a minerality that no decree in the world can regulate.

Batàr is undoubtedly reminiscent of Burgundy, but with unmistakable Tuscan authenticity. Vintage after vintage, Querciabella's forward-thinking winemaking has moved beyond the hedonistic idea of growing foreign, albeit noble, white grapes in a stronghold of red wines to focus on expressing a particular sense of place. The Batàr's inherent vitality and classic minerality clearly come from the high altitude vineyards of Ruffoli and the Galestro soils typical of the best Chianti Classico sites.

A clockwork that ticks once a year and strikes once a millennium – designed for 10,000 years. Brian Eno and a group of thinkers founded the Long Now Foundation in 1996 to broaden the view: away from the immediate and towards the long now. Giorgio Pelissero recognised this as the essence of his profession – because there is time in wine. In 1999, he acquired Cascina Tolino between Treiso and Neviglie, steep terrain divided by a municipal border: Only the Nebbiolo on the Treiso side is allowed to become Barbaresco. He combined the rest with Barbera to create perhaps the oldest assemblaggio in Piedmont – only rethought. Vinified separately, ten days of maceration for the Nebbiolo, up to twenty-five for the Barbera, then fifteen months in small oak barrels.

"An expression of elegance in Serralunga", Luca Currado underlines at the tasting of Lazzarito, and we already agree with him on the nose. Gravel, pebbles, red fruits, rose petals, lavender and sage permeate this plastic and very lively Serralunga Barolo. Baroli from Serralunga d'Alba are often in a category of their own thanks to their richness and sheer abundance of fruit. The balsamic symphony opens the doors to a sip that is undoubtedly powerful, but at the same time refreshing and rich in vitamins. With added aeration, Lazzarito delivers mint and balsamic herbs. Lazzarito sets the pace and never loses its rhythm, the great texture of the tannins flanks this palate spectacle in an ideal way and we will discover much more about this great Barolo in the years to come. Angelo Gaja makes his wines with broad brushstrokes that form shapes of perfect harmony and grandeur, he makes them modern but never too fashionable. Rennina 2019 is a dark, lush and juicy red wine with a seamless overall integration. On the palate, bold fruit, oak spice, acidity and a well-knit tannin hold the overall composition together in an overwhelming and warm embrace. SUPERIORE.DE

Like a precious legacy, this wine rests in the history of the patrician Serristori family, who acquired the land of Donoratico in 1512 and built the magnificent villa in 1660. Today, from the shadow of these historic walls springs a wine that bears the soul of the Tuscan Maremma – where the salty whisper of the Tyrrhenian Sea meets the warm hills of Bolgheri. In the vineyards of Argentiera, the DOC Bolgheri estate closest to the coast and at the same time the highest, the grapes ripen between the Mediterranean scrub and the endless blue of the archipelago. Here, on just twelve hectares of the Villa Donoratico site, Cabernet Sauvignon and Merlot take root in sandy and rocky soils, while the subsoil is criss-crossed by marine flysch rock, a geological memory of seas long past.

Full-bodied, noble cuvée from the winery of the same name: aromas of red fruits, a light hint of roasted coffee, juniper, pepper and animal notes, an excellent tannin structure and a beautiful acidity give the "Bordeaux from Bolgheri" its exceptional independence and great elegance. SUPERIORE.DE

Luca Currado cultivates the Brunate Cru on the La Morra side of the vineyard (opposite the Barolo side) and this wine contains fruit from new plots. It convinces with an impressive aroma of red berries, cherries, wild herbs, mint, minerals and rose petals, rounded off by a hint of blood orange. On the palate we find a terrific softness and textural silkiness, this continues with hints of mint, liquorice and camphor ash for many minutes. In 1991, Turriga was one of the first bottled wines ever to be exported from the island. Turriga has a 100% Sardinian soul - the famous blend of four red autochthonous grape varieties was once created by the famous OenologistGiacomo Tachis and is continued today by his "heir" Mariano Murru, technical director and Oenologist at Argiolas. The DNA of this exceptional wine sounds as simple as it is perfect: its refined blend of grape varieties gives it its unique structure, roundness, fullness, fruit and a perfectly balanced portion of tannins.

Vietti's Ravera is one of the great stars of Piedmont in its precision and structure. It uses fruit from Novello, from a site that looks out over the castle of the same name on the hill in the distance. This wine offers an impeccable balance between nose and mouth, showing immense purity and power in one package. Rose petals, chalk, pepper and a hint of pomegranate make this Barolo one of the most sought-after in the appellation every year. With some ageing, the powerful tannins give way to an elegant impression that does not deviate one millimetre from the coveted style of this great vineyard. Vintage 2018 marks Vietti's exciting Barolo debut from one of Piedmont's most famous vineyards, characterised by exuberant aromas and bright, red-tinged fruit. The bouquet is enormously opulent with ripe fruit aromas ranging from wild cherry to red currant. This is joined by original tones of jam, plum and a hint of ragout. Barolo Brunate is a powerful and vertical wine, endowed with enormous explosive energy and intensity. Crushed flowers, mint, spices and dried flowers open up in the glass, but it is the energy of the wine that really lifts it into the stratosphere. In the glass, the 2019 is dark, almost sombre, and full of the sepia-coloured nuances that are so typical of this great Barolo vineyard. 2019 is an outstanding vintage for Brunate and the first with organic certification. Barolo Lazzarito 2019, which obtains its fruit from Serralunga d'Alba, is built like a pyramid. It stands on a thick base of robust fruit and power and rises in intensity thanks to its wonderfully elevated bouquet. It shows direct and solid lines with blackberries, plums, spices, tar, liquorice, candied orange peel and truffle-infused earth. A second wave of flavours offers dark minerals, iron ore and rust. Baroli from Serralunga d'Alba are often in a category of their own thanks to their richness and sheer abundance of fruit. Pelago is a tribute to the harmonious combination of classic Marche flavours with international influences. The cuvée of Montepulciano, Cabernet Sauvignon and Merlot brings together the best of the region in a finely structured red wine. The grapes are harvested by hand and placed in stainless steel tanks for controlled fermentation before the wine matures for 14 months in Liters barriques and then develops for a further twelve months in the bottle.

Barolo Ginestra Ciabot Mentin DOCG 2019 comes from one of Monforte's most prestigious parcels with a south-south-easterly exposure at an altitude of around 400 metres. The old Nebbiolo vines are deeply rooted in calcareous marl with veins of clay and sand, which gives the wine intensity and finesse. The 2019 vintage is considered one of the most classic of the last decade: long, balanced vegetation, mild summer heat and cool September nights produced grapes of rare aromatic precision. After being harvested by hand, the grapes were carefully vinified and matured in French oak for around 30 months.

Troy is no ordinary Chardonnay. Rather, it is the archetype of a Chardonnay, as Wolfgang Klotz, managing director of probably the most successful winegrowers' cooperative in South Tyrol, sees it. The grapes come from two selected vineyards in Söll, near Tramin. Not only does a Mediterranean climate prevail there, but also quite cold fall winds at night determine the vegetation. Both factors ensure optimal development of the plants and fruits. The berries are handpicked piece by piece and it is therefore clear to every wine connoisseur that this is an absolutely prestigious project of the cooperative. It is therefore not surprising that only 3,000 bottles of this vintage are sold in selected specialist shops and top restaurants.

The fruit for this wine comes from a single vineyard that stretches over the crest of a hill. The name Schiena d'Asino (donkey ridge) is a reminder of this unique geography. The purity of the fruit is breathtaking and the wine emphasises the qualities that make Sangiovese one of the noblest of all Italian grapes. It offers a crystalline intensity with forthcoming flavours of bright cherries, balsamic herbs, aniseed, pressed violets and spice. This ensemble is balanced and nuanced. Galatrona is a pure Merlot in a class of its own. Black-red ruby in the glass. On the nose, black berries, fine wood spice and some leather. Very generous fruit aromas and extremely complex on the palate, it glides elegantly into the depths until it is caught by a finely woven tannin and passes into a long and finesse-rich finish.
