One hundred and forty months. Almost twelve years in complete darkness, resting on the lees, in the historic vaulted cellars of Canale d'Alba, where wines have been maturing to perfection since 1878. No other Italian sparkling wine takes so much time. No other demands so much patience – and rewards it so overwhelmingly. Zero140 is the culmination of a journey that Enrico Serafino began in 1991 as a founding member of the Alta Langa project. In 2004, they dared to do the unthinkable with the first "Zero": a Pas Dosé from Piedmont, without any added dosage, without any concession to favour. In 2014, Gambero Rosso named this uncompromising purist the best Italian sparkling wine of the year. But the 140 goes much further – it triples the ageing time and makes time itself the protagonist.

It is more of a traditional, classic Barolo with an exciting bouquet of deep, dark fruit and a pretty potpourri of rose petals, spices, smoke and tar. While the Chianti Classico Ruspoli Annata shows the accessible, fresh side of Lilliano, the Riserva reveals the depth and maturity that lie dormant in the estate's best parcels. Selected only in outstanding years and from the Tenuta's best vineyards, it represents the potential of the Sangiovese grape on the chalky Alberese soils of Castellina in Chianti. The 2020 vintage is considered exceptional in Tuscany: balanced temperatures, moderate rainfall and a long, warm autumn allowed the grapes to ripen perfectly. The cuvée of 95 per cent Sangiovese and five per cent Merlot is fermented in small stainless steel and cement tanks after selective hand-picking before the wine matures for 14 to 15 months in large French oak barrels – a conscious decision in favour of traditional ageing, which gives the Sangiovese structure without dominating it. A further six months of bottle ageing round off the development.

The texture is more like pure silk, delicately lapping the palate, leaving a satisfying mix of intense dark fruits, minerals and fine-grained tannin. There is so much depth and concentration to work with that even when it finishes youthfully structured and dry, it lingers for well over a minute with notes of redcurrant, sage and dark chocolate. This exceptional Sagrantino is undisputedly not only Caprai's top wine, but also one of Italy's most characterful wines, which, with a little more ageing, is an incredible pleasure and should therefore definitely be aerated for 3-4 hours when young. Uva dei Colombi – the grape of the doves. A name like a poem, for a wine that epitomises everything that Piaggia stands for. And what Carmignano can be when no compromises are made. The grapes come from the founding vineyard: the plot in Poggio a Caiano that Mauro Vannucci planted in 1972 when he built his house here and saw the slopes above. He was convinced that this exposure, this soil – clay and galestro, permeable and calcareous – was destined for great wines. Fifty years later, the vines prove him right. 70% Sangiovese, 20% Cabernet Franc, 10% Merlot. Each variety is harvested separately, fermented separately – with natural yeasts, eighteen to twenty-eight days on the skins. Malolactic fermentation already takes place in the barriques: one hundred per cent new French oak, for thirty-six months. Then a further twelve months of bottle ageing before the wine leaves the winery. Only around a thousand bottles are produced in each vintage.

Pianrosso comes from a south-western site of the Castelnuovo dell'Abate subzone at an altitude of about 300 m with mainly Galestro soils. It opens the pleasure cinema with a rich, sparkling garnet red. The bouquet is seductive and deep with hints of dark and black fruits, sage, rose petals and violets. On the palate, there is a distinct salty-fresh minerality, which soon enters into a wonderful harmony with the fine-grained tannins and the perfectly layered fruit, leading the wine powerfully with optimal balance into a soft, hardly ending finish.
