44 hectares, six parcels and one goal: to express Sangiovese Grosso as precisely as possible in a Rosso di Montalcino. Altesino extends over the eastern hills of the municipality – altesino, Macina, Pianezzine, Castelnuovo dell'Abate, Cerbaia and the legendary Montosoli, the first cru in the history of Brunello. The Rosso di Montalcino comes from the younger vines of these parcels – the same grape variety, the same terroir, an earlier moment in the life of the vine. 100% Sangiovese Grosso, the Brunello clone that has been cultivated here for decades. Fermentation in steel at a controlled temperature, then 6 to 8 months maturation in large Slavonian oak barrels of various ages – no barrique, no wood pressure, but that gentle structure that carries the Sangiovese without masking it. Three months in the bottle before release.

Saxum: the rock. A wine name derived from Latin that states quite simply what this Sauvignon grows on: Ice Age limestone soils, shaped and left behind by glaciers, with a minerality that gives the wine its unmistakable character. Not the volcanic depth of the Schlerngestein, but the bright, clear precision of Alpine limestone. Montan is best known as the home of Pinot Nero. The fact that Sauvignon Blanc of such high quality also thrives here is down to the very same conditions that lend the red wines their elegance: cool sites, good air circulation and well-structured soils. Pfitscher vinifies the Saxum in stainless steel at a controlled temperature of 18°C, with yeast ageing to develop texture and body.

In 1985, estate manager Giuseppe Bianchini inherited this estate in Castelnuovo dell'Abate from the childless Countess Elda Ciacci Piccolomini. His dream: to produce great Brunello. Today, his children Paolo and Lucia run the estate, which comprises 55 hectares of vines overlooking the Abbey of Sant'Antimo. Their Rosso di Montalcino comes from the 'Fonte' vineyard. 100% Sangiovese, aged in Slavonian oak. Bright ruby red in colour, with aromas of raspberry and wild strawberry on the nose; on the palate, it is medium-bodied with fine tannins and lively acidity. The Vinschgau is the driest valley in the Alps – less than 500 millimetres of rainfall per year, intense sunshine, dramatic temperature fluctuations between day and night. Not an obvious place for great wine. And yet: Franz Pratzner has believed in it since 1989 – when he gradually transformed the family fruit-growing business above Hochnaturn Castle into a vineyard. Today, Falkenstein is regarded as one of South Tyrol’s most distinctive estates. The Pinot Blanc grows on dry, ancient porphyry soil, on steep south-facing slopes between 550 and 900 metres – austere, mineral, uncompromising. Hand-harvested in mid- to late September. Then comes the estate’s hallmark: fermentation in large acacia wood casks, ten months on the coarse lees. No stainless steel neutrality, no barrique influence – acacia gives the wine a delicate, creamy texture without detracting from its freshness. This is followed by around twelve months’ bottle ageing.

The name already reveals the philosophy: DA-DI means "great earth" in Chinese – virginie Saverys' homage to the yin-yang principle that characterises her biodynamic work at Avignonesi. This experimental white wine from Cortona combines four indigenous grape varieties in just as many vinifications: Orpicchio matures in amphorae and used barriques, Vermentino exclusively in amphorae, Grechetto undergoes a six-day carbonic maceration, while Trebbiano macerates for 48 hours. After ageing on the fine lees, the components are assembled in the summer.

Three thousand years of wine-growing history are encapsulated in a single road name: the Strada Provinciale 68 near Vittoria, the route along which generations of Sicilian farmers carried their amphorae – and later their barrels – to market. Arianna Occhipinti, a pioneer of Sicilian natural wine, has created a liquid tribute to this country road. Albanello and Zibibbo, two indigenous Sicilian varieties, grow here on red sand over limestone. The grapes ferment together with wild yeasts in concrete vats; two weeks" maceration give the Bianco its characteristic texture. Bottled unfiltered, it retains its lively cloudiness.

Three letters, a whole story: BIP stands for "Benjamin Ingham Palermo". The Englishman came to Sicily in 1806 – not as a tourist, but as an entrepreneur with vision. He followed in the footsteps of John Woodhouse, but surpassed him by far: Ingham built up a trading empire that shipped Marsala all over the world and left a lasting mark on the city. Pellegrino still preserves his archive today – 110 volumes of Sicilian economic history. Pellegrino dedicates its elegant Oro Riserva to this man. Grillo, Catarratto and Inzolia, from sandy coastal soils between Marsala and Petrosino. The fermentation is stopped with an acquavite aged in oak for at least five years – a detail that stacks depth upon depth. Then: more than 48 months in large oak barrels, a further six months in barriques. The 2013 is a wine that has clearly benefited from time.

62 years after the cooperative was founded in 1962 – this explains the name of this Riserva, which surpasses the Sessantanni in terms of ageing time and quality. The grapes come from the oldest plots of the cooperative, bush vines in Alberello training on the characteristic red clay soils of Salento. The grapes are harvested by hand, followed by prolonged maceration to maximise extraction. Then aged for 18 months in small oak barrels – six months longer than the Sessantanni –followed by further ageing in the bottle before release.

What makes Alberto Passeri's Rosso di Montalcino so special? He is a stranger to compromise. The grapes come from the same plots as the great Brunello, from the historic vineyards of Canalicchio in the cooler north and the warmer slopes of Castelnuovo dell'Abate in the south. This dual origin is the secret: the elegance and finesse of the north merges with the strength and maturity of the south. Where other producers bottle their Rosso after just a few months, La Gerla allows it to mature for a full two years: six months in steel tanks, twelve months in large Slavonian barrels and a further six months in the bottle. This patience pays off.

At altitudes of 450 to 550 metres, on the steepest slopes at the foot of the Schlern, it grows on espalier vines at a density of 7,500 vines per hectare, on the same limestone moraines over quartz porphyry, but a little higher up and noticeably cooler. This produces a different character: not the gentle delicacy of Pinot Blanc, but tension and density. A vibrant acidity that creates a pull on the palate. Gently pressed, fermented in stainless steel, aged on fine lees for 8 months. The result is a Sauvignon that demonstrates what altitude and porphyry can do for this grape variety.

Punggl – is the name given to a small hill in the local dialect. 50 metres high, south of Margreid, at an altitude of between 220 and 250 metres: a geological feature in the flatlands of the Unterland. Composed of grey, loamy sand with a high clay content. A soil that stores heat, retains moisture and lends the Pinot Grigio a richness and structure that barren soils can never achieve. Margreid’s Mediterranean climate, the daily Ora breeze from Lake Garda – —this interplay provides ideal ripening conditions for the vines here, some of which are up to 80 years old. The vinification of Punggl differs significantly from simple grape processing: pressed immediately, the juice is clear and aromatic – followed by three weeks’ fermentation in 30-hectolitre wooden barrels. No steel, no concrete. The neutral wood gives the must a texture that steel cannot provide. Eight months’ ageing on fine lees in the same wooden barrels further deepens this structure.

Buchholz – as early as the Austrian land register of 1858, the name referred to the valley slopes above Salurn, where terraced vineyards lie on dolomite sedimentary rock at altitudes between 400 and 800 metres. Peter Zemmer, whose family has been making wine in Kurtinig on the Weinstraße since 1928, has chosen this diverse site for his Chardonnay: a mosaic of microclimates and soils that combines alpine freshness with southern ripeness. In the mornings, the breeze from the north cools the vines; in the afternoons, the ‘Ora’ from the south warms them: a daily cycle that gives the grapes time to develop. The winemaking process is deliberately restrained: a short cold maceration to preserve the fruit, followed by fermentation at 19°C in large wooden barrels.

Giovanni Neri founded the winery in Montalcino in 1971. What he built and his sons continue to run is one of the most precise houses in the appellation – known for its Brunelli, but also for the high standards that run through all its wines, regardless of the denominazione on the label. The IrRosso is Casanova di Neri's most accessible wine – a Toscana IGT that applies the house's craft to younger vines. Sangiovese from the Fiesole vineyard, right next to the estate, complemented by a small proportion of Cabernet Sauvignon and Petit Verdot from the southern Montalcino parcels. Hand-picked, hand-selected and optically sorted, spontaneous fermentation in open conical steel tanks, 13 days of maceration with regular pumping over.
