It was almost a silent revolution when Michele Satta decided to set the stage for Sangiovese in Bolgheri. While all around him his illustrious neighbours – sassicaia, Ornellaia, Guado al Tasso – were dancing the international Bordeaux party, the non-conformist from Varese dared to do the unthinkable: he planted the pure Tuscan soul in an appellation that was supposed to breathe French elegance. Cavaliere – the knight – does not bear this name by chance. It is Michele Satta's personal crusade for the grape variety that he reveres as "Tuscany's emblem of elegance and nobility". Today, he is the only producer in Bolgheri who takes on this challenge with the same passion as the international varieties.

The colour in the glass is a sparkling ruby red with violet reflections. The nose reveals all the magic of a perfectly matured Sangiovese: intense raspberry and violet notes, ripe cherries and plums, interspersed with spices, tobacco and a hint of Mediterranean scrub. With a little aeration, it becomes racy and shows its true greatness. On the palate, it is a wine of impressive structure: full-bodied and complex, with perfectly integrated tannins and the lively acidity that characterises Sangiovese. 18 months in cement give it a purist clarity that brings out its unfiltered fruitiness. The finish is long and elegant – cassis, ripe cherries and leather combine to create a harmonious final.

Cavaliere is more than just a wine – it is Michele Satta's declaration of love for the Tuscan tradition and at the same time his defiant proof that Sangiovese can also achieve greatness in Bolgheri. Today, this single-varietal Sangiovese is considered one of the most interesting in all of Tuscany – a knight who has conquered his place among the giants.
