The Greeks knew two types of time. Chronos: the measurable, constant, inexorable one. And kairós: the right moment – the moment that cannot be forced, but must be recognised. Celestino Gaspari has dedicated his wine to this concept – and chose the name carefully: Kairós is created in those years when Gaspari decides that the moment is not ripe for his great Harlequin. No second choice – another decision.

At least 15 grape varieties from our own plots in the province of Verona – four white grape varieties, eleven red: Garganega, Trebbiano toscano, Sauvignon Blanc, Chardonnay, Corvina, Corvinone, Rondinella, Cabernet Sauvignon, Cabernet Franc, Merlot, Syrah, Teroldego, Croatina, Oseleta, Sangiovese, Marzemino. Each variety is hand-picked at its own moment of ripeness, placed in plateaux (flat harvest) – from zero to forty days, until the last grape of the year has arrived. Then cryo-maceration, fermentation in steel and cement with indigenous yeasts, 20 to 25 days, manual intervention only. At least 36 months in French oak barriques, without a single racking. One year in the bottle.

Brilliant, deep ruby red colour. Cherry confit, tobacco, cinnamon, undergrowth, a hint of graphite and oriental spices on the nose – multi-layered, never completely closing. Enveloping and complex on the palate, with well-integrated tannins and a long, warm and spicy final. Kairós: the right moment, even if it is a different one. SUPERIORE.DE
