Celestino Gaspari stood next to Giuseppe Quintarelli – in that cellar in San Pietro in Cariano, which is a place of pilgrimage for many wine lovers. He learnt the language of the Appassimento, the patience of the large barrels, time as an instrument. Anyone who knows this will be surprised when they look at the Metodo Classico label: dancing bubbles, delicate and light, like the exact opposite of what Zýmē is known for. That is the intention.

100% Pinot Nero. Hand-picked in small crates, gentle pneumatic pressing, fermentation in steel. Bottle fermentation follows in winter – then the patience of the Metodo Classico: yeast ageing on the sediment, remuage, dégorgement. Dosaggio Zero: no added sugar, no correction. What goes into the bottle stands for itself. The label captures precisely this moment: "Il movimento continuo delle bollicine sulla superficie del vino, come un ballo ad un festeggiamento." The continuous movement of the bubbles – like a dance.

Delicate, bright salmon pink colour. Fresh strawberry, white cherry, citrus blossom, a hint of brioche and yeast on the nose – elegant, precise, with a lightness that you would not expect from Gaspari.
