Medium ruby red. Opens with ripe fruit notes of redcurrants, wild cherries and dried raspberries, then grilled herbs and liquorice in the background. This Rosso is more powerful and opulent than many of its competitors, almost reaching the intensity of a Brunello. Nevertheless, the aromas are more precise than one would expect from a young red wine. Siebeneich is not a fantasy name. The small village to the west of Bolzano gives its name to the wine – and itself bears one of the oldest wine stories in South Tyrol. Archaeologists found vine knives from the late Iron Age here, which are considered the oldest evidence of prehistoric Weinwirtschaft in the region. Merlot on this soil: a young grape variety on ancient ground. Cellar master Rudi Kofler says that Merlot grows best in Terlan on the warm, south-facing clay slopes. This is exactly where Siebeneich is located – a terroir that gives this international variety the substance to tell the story of South Tyrol instead of imitating Bordeaux. Hand-picked, destemming, slow maceration in steel, malolactic fermentation – then 12 months of ageing: 70 per cent in large wooden barrels, 30 per cent in barriques, one third of which are new. Ciampagnis is a name, not an adjective. It refers to a single vineyard – nine hectares, brought to maturity by Gianfranco Gallo over decades, on those finely layered soils of sand, silt and gravel that give Chardonnay in the Isonzo Valley a tropical generosity that one would not expect at this latitude. What Burgundy achieves with depth and limestone, Ciampagnis achieves with richness and mineral lustre. Vinified according to the same principle as all the other whites of the house: anaerobic destemming, short cold maceration, fermentation at a controlled temperature, approx. seven months maturation on the yeasts in stainless steel. No malolactic fermentation – freshness as a principle.

Tannenberg – a parcel within the Lieben Aich vineyard that stands alone. While the Lieben Aich represents the entire Tenuta, this Sauvignon concentrates on a specific parcel: the one with the most pronounced mineral structure. South-western slope, 300 metres above sea level, warm and breezy microclimate. The soils of sandy loam over porphyry weathered rock are water-permeable and low in nutrients – conditions that require concentration. 2024 was a challenging vintage: a wet spring, then a hot and dry summer, followed by a golden autumn that allowed for perfect physiological ripeness. In mid-September, the grapes showed ripe fruit, cool character and moderate alcohol – ideal conditions for long-lasting wines with tension. The yield per hectare was 43 hectolitres. Vinification follows Manincor's biodynamic philosophy: the destemmed berries macerate on the press for twelve hours to extract flavour and structure from the skins. Spontaneous fermentation with the grapes' own yeasts takes place in wooden barrels, followed by nine months of ageing on the fine lees. The phases of the moon determine sowing, cultivation and harvesting: Rudolf Steiner's principles, consistently implemented. 11,900 bottles and 217 magnums were filled.

Until 2012, this wine bore the name of the estate itself – passopisciaro. However, when Andrea Franchetti began to vinify his best individual vineyards separately in 2008, he renamed the basic Etna Rosso: Passorosso. A blend from different altitudes and contrade – from Malpasso to Guardiola and Santo Spirito –which shows the full range of what Nerello Mascalese can achieve on Mount Etna. The higher vineyards lie on coarse-grained lava gravel, the lower ones on finer, oxidised lava powder: each layer contributes to the complexity of this wine. 80 to 110-year-old vines, fermented in steel tanks, matured for 18 months in large neutral wooden barrels and concrete tanks, bottled unfiltered.

When Andrea Franchetti arrived on the northern slope of Mount Etna in 2000, he found an abandoned volcanic landscape – dilapidated vineyards, overgrown terraces, the gloom of a forgotten wine region. But he recognised the potential of these extreme altitudes. Passobianco, first vinified in 2007, is his white answer to the volcanic terroir: pure Chardonnay from the Contrada Guardiola, planted between 850 and 1,000 metres on steep terraces, where the powdery lava soil glistens black like the night. Fermented in steel tanks at cool temperatures, matured partly in concrete and partly in large wooden barrels – a vinification that preserves purity and creates complexity.

Collepiano (gentle hills) is what Marco Caprai calls the vineyards where his vision took shape at the end of the 1980s: to restore the Sagrantino, this ancient Umbrian vine with the highest tannin content in the wine world, to its lost greatness. Not as a sweet passito behind monastery walls, but as a dry red wine of international calibre. What followed was a revolution: collaboration with the University of Milan, clone selection, high-density plantings – and, in 1996, the legendary "25 Anni", the Sagrantino that Michael Douglas and Catherine Zeta-Jones chose for their wedding. Collepiano comes from pure Sagrantino from the Val di Maggio vineyards. After the harvest, the must underwent temperature-controlled fermentation, followed by gentle extraction over ten to fourteen days. The cuvée matured for twenty-two months in French barriques and a further six months in the bottle – time that gave this tannin-rich wine structure and soul.

The answer: plant grape varieties from southern wine-growing regions of Europe and observe how they behave in cooler environments. The hypothesis was that these varieties would develop higher acidity and moderate sugar levels in South Tyrol. Today, VIO XIII is one of the most successful experiments in this series.

There is one decision in the cellar that says it all: no dosage. Zero grams of sugar after dégorgement – no equalisation, no softening, no correction. What goes into the bottle must stand on its own. Christian Bellei makes this decision at La Prima Volta consciously and anew every time: Dosaggio Zero is an attitude. 100% Lambrusco di Sorbara from the alluvial soils of Secchia. Only the Mosto Fiore – the first, purest part of the gentle pressing – is fermented in steel at a controlled temperature. Bottle fermentation takes place in the spring after the harvest according to the metodo classico, followed by at least 36 months on the lees at a constant 12°C. Rémuage, dégorgement – and instead of the liqueur d'expédition, the same wine is returned to the bottle. Nothing else.

Bright ruby red in colour with a slight garnet hue – a lively start to this elegant Nebbiolo from the breathtaking vineyards of Ravera near Monforte d'Alba at an altitude of around 400 metres. The vines are around 15 years old and are deeply rooted in chalky clay soil, which gives the wine its characteristic freshness and precision. After manual harvesting and gentle fermentation in stainless steel, the wine matures for around 14 months in used French barriques before being bottled.

Roberto Voerzio founded his cantina in La Morra in 1986. The address is Loc. Il Cerreto is the home vineyard, the house's place of origin, the plot of land where it all began. The Barbera that grows here therefore comes from the garden of the man who was one of the first to make the Langhe internationally famous as a terroir producer. Voerzio treats his Cerreto vineyard no differently to his famous Barolo vineyards: only natural manure from Alpine cows, no herbicides, no chemical intervention. A maximum of one kilogramme of grapes per vine. Hand-picked. Fermentation in steel, 12 to 14 days on the skins. Maturation in tonneaux (70% new) and large 25-hectolitre barrels for a total of 12 months, followed by a further 8 months in steel. No filtration. No intervention that changes the character of the wine – this is Voerzio's principle for every wine of the house, without exception. In his own words: "Time does not make the wine great – time unfolds what is in it from the start."

In the glass, it is a delicate old rose colour with a bright shimmer and a lively, creamy perlage. The nose opens with redcurrants and raspberries, a hint of red grapefruit and floral nuances such as rose petals. On the palate, the Extra Dry enchants with its racy freshness, compact fruit structure, integrated residual sweetness and delicate flavour. It was no coincidence, but opportunity, that Roberto Voerzio embarked on a new adventure in Monferrato a few years ago. As the latest addition to his exquisite collection, he put himself to the test as a passionate Barbera lover by acquiring some plots of land near Canelli and Nizza Monferrato. These are vineyards that are around 35 years old with clay and limestone soil, which gives the wine complexity and minerality. The old planting was then greatly reduced according to his modus operandi: to 3,500 to 8,000 vines per hectare with a production of less than 1 kg (!) per plant. Fermentation and maceration take place in steel tanks using indigenous yeasts, malolactic fermentation and ageing take place in barriques (70% used) for 12 months and then in steel tanks for a few months before bottling without filtration.

Pure Syrah from the volcano? This is not a matter of course, but a courageous commitment to the international grape variety, embedded in the alpine character of the northern slope of Etna. Sole di Sesta refers to the midday sun that hits the vines with full force in the terraced vineyards around Castiglione di Sicilia – flanked by cold downdraughts from Mount Etna, which balance out the day at night. The vines are rooted at 750 metres above sea level in sandy volcanic soil with a high stone content. The result is a Syrah that brings together the special origin and the international variety in an exciting balance.

In the dizzying heights of Lamole, one of the highest appellations in Chianti Classico, the Sangiovese grapes for this exceptional Riserva grow at 470 to 655 metres. The historic terraces of local Macigno del Chianti – the characteristic sandstone that stores the sun's heat during the day and releases it again at night – create a unique microclimate for this organically certified wine. Lareale combines grapes from two of Lamole's best vineyards: "Il Prato" and "Le Masse". 95 per cent Sangiovese, supplemented by five per cent Canaiolo Nero, produce a Chianti Classico of remarkable elegance and oysteriness after optical berry selection and two weeks of maceration. Maturation in oak barrels for over two years gives the wine additional complexity and structure.
