Pas Dosé – here, the dosage that is normally added is omitted; this dosage, applied after disgorging, determines not only the sugar content but also the style of the sparkling wine that has fermented in the bottle. Instead, the volume naturally lost during the years of bottle ageing is replaced by other wines from the estate, which do not, however, further affect the sugar content. The result is an extremely dry sparkling wine that is by no means lacking in body, character or finely nuanced flavours.

Vigna Crivelli is one of the most renowned white wine vineyards in the South Tyrolean Unterland. The unique microclimate of this single vineyard is characterised by strong downdrafts from the Fennberg and the daily southerly wind, the ‘Ora’, which ensures perfect aeration of the grapes. The marked day-night temperature fluctuations allow for a long ripening period with optimal aroma development. The vines are planted on low-growth rootstocks and trained using the Guyot system.

Feudo di Mezzo is one of the most prestigious contrade on the northern slope of Mount Etna, a place where viticulture and volcanic rock have had a symbiotic relationship for centuries. At an altitude of around 600 metres, old Nerello Mascalese vines take root here in porous, ferrous ash, interspersed with lava boulders and basalt veins – a soil that gives the wine finesse, tension and depth. Alta Mora is Cusumano's ambitious project on Etna, and Feudo di Mezzo epitomises this vision: single-varietal, rigorously selected, with maximum focus on origin and character. The 2019 vintage on Mount Etna was characterised by elegance: a cool spring followed by a long, dry summer with cool nights. The grapes ripened slowly and harmoniously, with fine phenolic ripeness and a balanced acidity structure. After manual harvesting, fermentation took place with gentle maceration, followed by 12 months of maturation in French tonneaux and a long period of rest in the bottle.

Vorberg – the name gives away its location: on the steep southern slopes of the Tschöggelberg, at altitudes between 450 and 650 metres, a Pinot Blanc thrives that reveals the full potential of this famous South Tyrolean grape variety. The stony, sandy-loam soils, formed from weathered porphyry, with their high quartz content and slightly acidic pH levels, characterise a terroir of extremes: high water permeability, limited nutrient availability and naturally low yields. This microstress elicits unique, terroir-specific polyphenols from the vines. Hand-harvested, gently pressed as whole bunches, followed by natural sedimentation. Slow fermentation takes place at a controlled temperature in large oak casks (70 and 30 hl), followed by partial malolactic fermentation and 12 months' ageing on the fine lees in traditional wooden casks.

Misco Riserva is more than just a flagship wine – it is the concentrated result of decades of experience with Verdicchio at the highest level. Only the best harvestare vinified – selected for its potential to develop fully, first in stainless steel and then for years in the bottle. Intense straw yellow in the glass with golden reflections. The nose reveals yellow apple, citrus zest, lime blossom and a fine spiciness, underpinned by salty minerality and a hint of fennel. Guardiola is a name with weight on Etna. One of the highest and steepest cru sites in Sicily, between 800 and 1,000 metres above sea level, exposed to the harsh sun, cool winds and the contrasts of a volcanic climate, which shapes not only the landscape but also the character of the wine. The vines – predominantly Nerello Mascalese – are deeply rooted in lava rock and volcanic ash, the soil is lean, black and mineralised, a barren terroir that combines strength and elegance rather than playing them off against each other. The vintage brought ideal conditions for a wine with a firm but accessible structure: after a cool spring, the grapes ripened under consistently warm summer sunshine, accompanied by pronounced day-night differences. The grapes were harvest late, by hand, in small crates – a decisive moment for precision and balance. After spontaneous fermentation, the wine was matured in French oak barrels – not to dominate the wine, but to give it contour.

A summer that Europe remembers as hot – and Montalcino as surprising. The vines of Col d'Orcia, deeply rooted in the calcareous, clay-poor soils of the Orcia hill, showed in 2020 what biodynamic cultivation means in years of stress: resilience. Early bud burst after a mild winter, followed by a balanced spring with well-distributed rainfall. The summer remained warm, but without extreme heat phases – sporadic downpours at the end of August cooled the soil at the last moment and allowed the grapes to develop aromatic compounds instead of simply ripening. In addition, there were pronounced day-night temperature differences in September. Harvest from mid-September, clean and structured. The result has a character that Montalcino connoisseurs describe as "captivante": simultaneously accessible and enigmatic. Maceration for 18 to 20 days, shallow 150-hl steel tanks, gentle extraction. Three years in large barrels, twelve months in the bottle: Col d'Orcia's traditional vinification process – unchanged for decades because it works.

Juvelo is the crown jewel of Andrian. A wine that only comes into being when nature plays its part. December in South Tyrol – while others have long since harvested their grapes, here a few Gewürztraminer vines are still waiting for the perfect moment. The grapes hang on the vine until they are clearly covered in noble mould. Botrytis cinerea, the "noble rot", perforates the grape skin and allows the water to evaporate. What remains is pure concentration. The harvest are picked by hand, berry by berry. There is no rush. The grapes are gently pressed, then fermentation begins in small oak barrels. This is followed by 11 months of ageing in barriques, time that this wine needs to develop its complexity.

Sometimes a great vintage needs a little scare first. In April 2021, the thermometer dropped to minus seven degrees in parts of Montalcino – late frost, which hit the more sensitive sites and reduced the harvest to around 15 per cent below the previous year. What was a loss for some farms proved to be a gift for quality. Fewer grapes, more concentration. The surviving vines seemed to know what was at stake. The rest of the year followed the textbook pattern of classic Brunello meteorology: regular spring, hot and dry summer – then two decisive rain events in the second half of August, which gave the vineyards water and the grapes their final aromatic complexity. The September nights cooled the Sant'Angelo vineyard in Colle to temperatures that distinguish phenolic ripeness from genuine elegance. Harvest did not start until mid to late September – patiently waited, fully redeemed.

Doran is no accident. This wine demonstrates what happens when French Chardonnay clones meet South Tyrolean limestone soils. The Andrian Winery takes exactly the time this Riserva needs: twelve months in tonneaux, 30% of which are new French oak barrels. This is the Burgundian school in its purest form. The grapes come from the highest vineyards around Andrian, at altitudes of between 350 and 450 metres. There, the calcareous loam soil is interspersed with white dolomite rock. The microclimate makes all the difference: cooler temperatures than elsewhere, a longer ripening period, and higher acidity. Perfect for a Chardonnay with ambition. Cellar master Rudi Kofler opts for full fermentation in wood. Regular bâtonnage ensures that the oak integrates elegantly, without ever becoming overpowering. Following malolactic fermentation, the wine matures for a further three months in stainless steel – to achieve the final balance between opulence and freshness.

Since 1871, the name Garofoli has embodied the spirit of the Marche's wine culture – a history spanning five generations, with roots in the holy city of Loreto, where Antonio Garofoli once refreshed weary pilgrims with local wine. What began as a modest tavern developed under his son Gioacchino into one of Italy's most venerable wine houses, which is now being steered into the future by the brothers Carlo and Gianfranco, together with their children Gianluca, Caterina and Beatrice. Podium originates from the classic hills of the Castelli di Jesi, that historic heartland of Verdicchio, where medium-textured loamy soils, interspersed with sandy and calcareous deposits, form a mosaic that lends the Verdicchio grape its unmistakable minerality. These factors lead to extreme microclimatic conditions under which the grapes of Montepulciano d'Abruzzo Sant'Eusanio ripen, making it a unique wine. The grapes for the Vigna Pedale come from vines that are over 30 years old. The vines are planted in a sapling system, which allows only a few grapes per vine. The harvest does not begin until mid-October, which is very unusual for this location so far south. Purple dark red colour. Spicy aroma of cherries, thyme, wild mushrooms and earth, the typical, unadulterated flavour is strong and concentrated with a subtle sweetness. The grapes for Clerico's entry-level Barolo come from younger vines in the top vineyards of Pajana, Ciabot Mentin and Percristina (Mosconi). The 2021 vintage is considered one of the best of the last decade: a balanced vegetation cycle with warm, sunny days and cool nights promoted even ripening and preserved the concise acidity structure. In the glass, it shines a rich garnet red with ruby-coloured reflections. The nose reveals a clear, complex aroma of ripe cherry, dark plum and dried rose, complemented by hints of violet, tobacco, liquorice and a fine, balsamic note. Powerful and precise on the palate, with juicy fruit, present, well-integrated acidity and taut, fine-grained tannins that promise a long development. The 2021 still needs to develop a little, but the essential components are already very convincing today. SUPERIORE.DE

Vintages write wine history – and 2021 is deeply engraved in Montalcino. Extreme drought, intense sunshine, nights that remained cool despite everything: The Sangiovese vines responded with concentrated, aromatically dense grapes that yielded little but showed a clear signature. For La Quinta, the wine from Ferrini's fifth vineyard at 400 metres above the Castello di Sant'Angelo in Colle, this meant an emphatic vintage. The vinification follows the tried and tested rhythm: 7 days of fermentation in steel, 13 days of maceration, then a year of ageing in tonneaux, large oak barrels and cocciopesto amphorae made of baked clay, before the wine is left to rest in cement and finally matures for at least 6 months in the bottle.

Difficult vintages make honest wines. 2023 presented Tuscany with unusual challenges: a cool, rainy spring with peronospora pressure, hail damage in parts of the region, followed by a hot summer. In Montalcino, the favourable protective effect of Monte Amiata and the altitude came together in a positive way: Where the conditions were right, wines of surprising lightness and floral freshness were produced – less powerful than last year's vintage, but with a grace that becomes a strength in good hands. Carla Ferrini's fifth vineyard at 400 metres also yielded single-varietal Sangiovese in 2023, which was vinified according to a tried-and-tested method: 7 days of fermentation, 13 days of maceration, 12 months of ageing in tonneaux, oak barrels and cocciopesto amphorae, rounding off in cement, 6 months in the bottle. A rhythm that allows the wine to tell the story of the vintage – without correcting it.

Tasca got involved in Etna early on and the latest result of these years of experience are four new single vineyard wines from the Tascante estate: Contrada Rampante, Pianodario, Sciaranuova and Sciaranuova Vigna Vecchia (V.V.). The wines are delicate and profound, and despite their power, acidity and taut tannin, very elegant, finesse-rich and light-footed on the palate. Each of the four plots brings a slightly different style and personality to the wine - due to the altitude, soil composition and morphology of the historic lava flows. A high annual rainfall ensures that the soil has all the water it needs, and the temperature fluctuations between day and night support the aromatic diversity of the grapes and ultimately the ripening potential.

Benanti's latest white wine comes 100% from the small vineyard (Contrada) Cavaliere. The vineyards in the municipality of Santa Maria di Licodìa develop at a considerable altitude (approx. 900 metres above sea level) with favourable conditions for all indigenous varieties, both red and white berries, which are cultivated here with Guyot pruning. Here, both the Nerello and the Carricante produce wines with a well-defined structure and typical varietal flavours. The vines are around 50 years old and grow on sandy, volcanic soil that is rich in minerals. The climate is alpine, with little rainfall and provides the vines with a high degree of ventilation and very large temperature differences between day and night.Straw yellow in colour with bright green reflections. The bouquet is intense, rich, generous and delicately fruity with hints of orange blossom and ripe apple. The palate is dry, mineral, harmonious with a pleasant acidity, aromatic pressure and an interesting aftertaste of aniseed and almonds. SUPERIORE.DE
