A single-vineyard Soave as it should be: pure Garganega from vines over thirty years old on volcanic soils in Colognola ai Colli. The Castagnedi brothers press the whole grapes under nitrogen and use dry ice to preserve the aromas even before fermentation – a technique that demands precision and rewards character. Six months on the fine lees give the wine depth without taking away its freshness.

Straw yellow in colour with greenish reflections, it has an aroma of grapefruit and white peach. On the palate, it is slender, mineral and characterised by a fine citrus tension that leads to the typical final almond finish of Soave. As the new Unità Geografica, Monte di Colognola stands for precisely this identity: volcanic, vertical, unmistakable. SUPERIORE.DE
