    Thomas Bär was dreaming out loud. He spoke openly about the fact that he regarded wines such as Solaia from Antinori or Le Pin from Pomerol as a benchmark – not out of arrogance, but out of conviction: That the Pietraforte soils of the Conca d'Oro at 450 to 500 metres in Panzano have the terroir to bear something extraordinary. The Balisca was his most personal answer to this question. 100% Cabernet Sauvignon, exclusively from the estate's own Panzano vineyards – a decision that is still unusual in the Chianti Classico zone. 1,200 bottles.

    The vines grow on the stone-terraced vineyards that are listed as historical monuments in Panzano – geometric terraces that regulate the microclimate, retain heat and ensure drainage. Hand-picked, fermentation with indigenous yeasts in oak vats and steel, maceration for 30 days. Maturation in French barriques, one year in the bottle. Organic, without licence.

    Intense, deep ruby red colour. Cassis, amarena, cedar wood, graphite, a hint of clove and tobacco on the nose – concentrated, dark and remarkably precise. Full-bodied on the palate, with dense, well-integrated tannins, lively acidity and a very long final. A wine that has decades ahead of it – and should be savoured to the full while it is still available. SUPERIORE.DE

    "Made with organic Cabernet Sauvignon, the 2021 Balisca definitely shows the power and concentration of this important French grape, along with the spice and rosemary that it is known for. I would argue that those pretty herbal features take on an all-Tuscan personality in a wine like this. Beyond that, of course, you get black fruit and blackberry preserves. The tannins are grippy but not bitter, and another year or two of bottle age should serve the wine nicely. Only 1,500 bottles were produced." Wine Advocate
