Three letters, a whole story: BIP stands for "Benjamin Ingham Palermo". The Englishman came to Sicily in 1806 – not as a tourist, but as an entrepreneur with vision. He followed in the footsteps of John Woodhouse, but surpassed him by far: Ingham built up a trading empire that shipped Marsala all over the world and left a lasting mark on the city. Pellegrino still preserves his archive today – 110 volumes of Sicilian economic history. Pellegrino dedicates its elegant Oro Riserva to this man. Grillo, Catarratto and Inzolia, from sandy coastal soils between Marsala and Petrosino. The fermentation is stopped with an acquavite aged in oak for at least five years – a detail that stacks depth upon depth. Then: more than 48 months in large oak barrels, a further six months in barriques. The 2013 is a wine that has clearly benefited from time.

Fermented with natural yeasts in concrete, matured for six months in cement tanks, bottled unfiltered – no intervention, no make-up, pure essence.

The grapes come from the historic centrepiece of the Planeta estate in Ulmo near Sambuca di Sicilia – a vineyard that was planted back in the mid-1980s. The vines are rooted at an altitude of around 250 metres in loamy-sandy soils with a high lime content, not far from Lake Arancio. Deep ruby red in the glass with a purple rim. The nose opens powerfully and invitingly: black cherry, plum, cassis and blueberry, accompanied by cocoa, tobacco, fresh leather and a subtle herbal spice. On the palate, Sito dell'Ulmo is both full-bodied and elegant: dense, with polished tannins, fresh acidity and a long, silky finish. The integration of the wood is finely balanced and the fruit always remains in the foreground. A Sicilian Merlot with format, origin and depth. SUPERIORE.DE

Cabernet Sauvignon and Cabernet Franc from the best vineyards around Menfi, selectively harvested and matured for 14 months in French oak barriques (Allier and Tronçais) – burdese has been a Sicilian statement in the style of great Bordeaux wines for many decades. Deep, dark ruby red colour with an almost impenetrable core. Dense aromas of ripe black cherry, blackberry and cassis on the nose, accompanied by cedar wood, mocha, dried herbs and a hint of graphite. Powerful, concentrated and yet surprisingly fresh on the palate: ripe tannins, vitalising acidity and a balanced body carry the dark fruit into a long, spicy final with an elegant hint of wood.

700 to 800 metres above sea level, in the Piana degli Albanesi south of Palermo – where Sicily stops being what you expect it to be. Tenuta Ficuzza is located in the heart of an extensive nature reserve, with forests, Mediterranean scrub and vineyards woven into the landscape like a mosaic. Chardonnay has found a home here that makes it reminiscent of Burgundy – without copying it. Jalé comes from the historic single vineyard "del Ventaglio", named after its fan shape. The altitude creates temperature fluctuations that Chardonnay rarely gets on this island: slow ripening, cool fruit, natural tension. Hand-picked at the beginning of August, cold maceration, fermentation in old Liters oak barrels – no new wood to cover up, but silent integration. Six months sur lies, then bottled.

A multi-faceted introduction to the world of Benanti wines – this Etna Rosso reflects the polyphony of the volcano. The grapes come from altitudes between 450 and 900 metres, distributed on all sides of Mount Etna. The soil is barren and volcanic-sandy, rich in minerals and perfectly aerated – conditions that enable finesse, freshness and crystalline structure. 80% Nerello Mascalese/20% Nerello Cappuccio. The Nerello Mascalese matures predominantly in stainless steel, with only around 20% in used oak barrels, while the Nerello Cappuccio remains entirely in stainless steel tanks. Both varieties ferment with Benanti's experimental, indigenous yeasts for several weeks at a controlled temperature, followed by blending and further ageing in the bottle.

Etna Bianco DOC 2024
An island within the island. This is what Giuseppe Benanti called Etna, the world he opened up for himself in 1988 as a pioneer of modern Etna wines. Today, his sons Antonio and Salvino are continuing his legacy as the only winery with vineyards on all four slopes of the volcano. The Etna Bianco combines 100% Carricante from the eastern and southern slopes, where altitudes between 700 and 950 metres, volcanic sandy soils and pronounced day-night fluctuations create ideal conditions. The 20 to 60-year-old vines grow partly as traditional Alberello, partly on trellis wire. Hand-picked in mid-October, gently pressed, fermented for twelve days at 18 °C in stainless steel with the estate's own Carricante yeast selected from Etna vineyards. Maturation on fine lees and brief rest in the bottle.

The grapes are harvested at the end of August when they are ripe and then dried in the fruit cellar in 5kg crates at 23⁰C. After around 40 days, when half their weight has been lost, the grapes are pressed and the resulting must, which is particularly rich in sugar, ferments slowly at 18°C for over a month in stainless steel containers, where it remains until bottling. Light golden yellow in colour, with a fine bouquet of orange blossom, some quince, apricot and peach. Sparkling on the palate with surprisingly lively acidity, spreads out beautifully, with orange peel and some grapefruit on the long final. SUPERIORE.DE

This single-varietal Carricante from Tenuta Tascante comes from the districts of Feudo in Castiglione di Sicilia and Salice in Milo. The vineyards grow at an altitude of 600 metres on the north side of Mount Etna on volcanic sedimentary soils from different eras. The majority of the grapes grow on a terrace in Contrada Sciaranuova. The olives are harvested by hand directly from the tree, early in the second decade of October, when the polyphenol content reaches its maximum. Immediate cold pressing and gramolatura in a controlled atmosphere preserve the exceptional fineness.

From wine to oil, from west to east: Donnafugata has been cultivating olive groves on the northern slope of Mount Etna since 2016 – where volcanic soils and extreme temperature fluctuations between day and night produce olives of particular intensity. The Nocellara Etnea is the defining variety of this region: large-fruited, juicy, with a favourable ratio of flesh to stone. For this single-variety oil, the olives are harvested by hand in the second half of November and immediately cold-pressed – gramolatura is carried out in a controlled atmosphere to prevent oxidation and preserve the flavours.

After harvesting, it is cold-extracted immediately so that the vibrant flavour and powerful character of the variety remain unchanged in the bottle. There, the oil is a light green colour with a golden shimmer, as if the Sicilian sun is shining once again. The bouquet is fine and clear: green tomato, fresh grass and a subtle herbal flavour reminiscent of lemon thyme and young leaves. The flavour is harmonious, with a delicate bitterness, elegant, well-integrated spiciness and a juicy, green-fruity length.

The Faro family has dug deep into the volcano here since 2005 – literally, because the sandy soils of weathered lava rock allow roots to travel far. 100% Nerello Mascalese, Alberello, vines between 50 and 65 years old. Hand-picked, two weeks of maceration, three months in fine-grained oak barrels. Not a wood wine – a volcanic wine. Brilliant ruby red colour in the glass. The nose opens dark and complex: boysenberry, crushed black cherry, wild flowers, ash, a hint of rosemary and thyme, pink pepper. Silky and medium-bodied on the palate – juicy acidity, fine tannins, a persistent mineral flavour. The finish is long and tense, with a tart cherry flavour that lingers.
