The Vintage Collection Extra Brut is the backbone of Ca' del Bosco – a cuvée that embodies everything that makes this style great: depth, precision and energy. No gimmicks, no overt fruitiness, but rather the archetype of a high-quality Franciacorta with a distinct character and tremendous inner tension. The cuvée is composed of Chardonnay, Pinot Nero and a small proportion of Pinot Bianco, harvested from the finest plots in Erbusco, Cazzago San Martino and Passirano. Each harvestand each batch is fermented separately – partly in small oak barrels, partly in steel – after which the wine rests on its lees, is blended, bottled and aged in the bottle for over 48 months. The dosage is kept to a minimum so as not to mask the structure of the vintage.

In the glass, it is a radiant straw yellow, with a delicate and persistent effervescence. This is followed by a fine, crystalline bouquet: lemon oil, white peach, toasted almonds, chalk and a hint of fennel greens. On the palate, it is taut but not harsh, with delicate acidity, a slightly salty note and a wonderfully clear texture. The fruit remains in the background – the interplay between minerality and ripeness takes centre stage. The final is long, dry and almost architecturally structured. Ca' del Bosco's Extra Brut is not a complacent Franciacorta, but one that challenges and delivers.
