The Vintage Collection extra brut is the backbone of Ca' del Bosco – a cuvée that combines everything that makes this style great: depth, precision, energy. No effects, no superficial fruit, but the archetype of a high-quality Franciacorta with a clear edge and enormous inner tension. The cuvée is made up of Chardonnay, Pinot Nero and a small proportion of Pinot Bianco, harvested from the best parcels in Erbusco, Cazzago San Martino and Passirano. Each harvest, each batch is fermented separately – partly in small oak barrels, partly in steel – the wine then rests on the lees, is blended, bottled and matured in the bottle for 48 months. The dosage remains minimal so as not to mask the skeleton of the vintage.

Brilliant straw yellow in the glass, the perlage is delicate and persistent. Then a fine, crystalline aroma: lemon oil, white peach, roasted almonds, chalk, some fennel green. Taut on the palate, but not harsh, with delicate acidity, a slightly salty flavour and a wonderfully clear texture. The fruit remains in the background – the interplay between minerality and ripeness takes centre stage. The final is long, dry, almost architecturally constructed. Ca' del Bosco's extra brut is not a pleasant Franciacorta, but one that demands and delivers.
