Clay and limestone soils and pronounced temperature fluctuations between day and night create ideal ripening conditions for the Pinot Bianco. Straw yellow with greenish reflections in the glass, while the nose convinces with pear, apple and subtle peach aromas. On the palate, the wine is fresh and opulent at the same time, with a harmonious structure and persistent minerality. Pinot Bianco is the most cultivated white wine variety at the St. Michael-Eppan winery – and there is a reason for this. At altitudes of 480 to 650 metres in the municipality of Appiano, the grape variety finds exactly what it needs: calcareous gravel soils with a light clay content, south-east exposure and the cool night winds that blow down from the Mendel Mountains. These winds are the invisible tool of the terroir – they slow down the ripening process and maintain the freshness that distinguishes Pinot Bianco at this altitude from all others. Founded in 1889 by Pastor Christian Schrott, the Tramin Winery is today one of the most renowned co-operative wineries in Italy – supported by around 270 winegrowing families who cultivate their vineyards around Termeno, Neumarkt, Montan and Auer. Oenologist Willi Stürz, who has been at work since the 1990s, has turned this collective strength into a portfolio that has won many international awards. His credo: purity and terroir character – not a word too much in the cellar. The Pinot Bianco grows on chalky and clayey soils with gravel and crushed stone, between 250 and 500 metres above sea level.

Andrian's Burgundian classic finds its southern Alpine interpretation between 300 and 500 metres on calcareous clay-dolomite soils. Berg. The name gives away its origins. The higher elevations in the Adige Valley, on the right bank of the Adige, on soils of porphyry and limestone, which give the Pinot Bianco its mineral freshness and structure. The alpine climate, with mild summer months and cool autumns, slows down the ripening process – and the harvest takes place in mid-October, considerably later than for comparable white wines. This patience pays off. In 1932, the winegrowers of Nals and Margreid founded their cooperative on a simple principle: better together than alone. This principle still applies today – for 140 member estates, which supply their grapes with the same care as they did back then.

In 1907, Josef Hofstätter founded his winery in the heart of Tramin – in an imposing 16th century building, which is still the centre of the estate today. Since then, the name Hofstätter has stood for what South Tyrol is capable of in its purest form: White wines of clear varietal typicity, elegant freshness and unobtrusive minerality. The Pinot Bianco comes from Cortaccia, one of the best sites along the South Tyrolean Wine Route, on light marl soils that give the grape variety precisely the delicate structure and aromatic purity for which Hofstätter is known. Dellago comes from Pinot Bianco plots personally selected by cellar master Stephan Filippi on characteristic porphyry and limestone soils, where Archduke Johann of Austria established Pinot Blanc in South Tyrol as early as 1850. The special terroir with its distinctive temperature fluctuations between warm days and cool nights gives the hand-picked grapes the mineral precision that characterises Dellago. After careful manual harvesting, the grapes are gently pressed and vinified in two parts: The majority matures traditionally in stainless steel tanks on the fine lees, while a small but decisive proportion undergoes alcoholic fermentation and malolactic fermentation in French barriques – a subtle use of wood gives the wine additional structure and complexity without overpowering its Burgundian elegance.

Pinot Bianco arrived in South Tyrol as early as 1850 – and the Schulthaus site, above Castel Moos in Appiano Monte, is probably the most historic Pinot Bianco site in the entire municipality. The Schulthauser has been bottled as an independent wine since 1982 – and since then it has become one of the best-known expressions of this grape variety in South Tyrol. The vineyards lie at an altitude of 540 to 620 metres, exposed to the south-east, on limestone gravel soils with a light clay content – high enough for the evening downdraughts from the Mendel Mountains to have a daily cooling effect. Hand-picked at the end of September. In the cellar: 85% fermentation in steel, 15% in large wooden barrels with malolactic fermentation. Blending in February to create a wine that combines creamy softness and pronounced acidity in rare harmony.

At the Ebnerhof farm in Atzwang, the Unterthiner family works on sandy marl at an altitude of 500 to 550 metres. The eastern slopes benefit from warm winds from the Bolzano valley basin, while cool downdraughts provide freshness at night – ideal conditions for a Pinot Blanc with substance. After temperature-controlled fermentation in stainless steel tanks, the wine matures on the fine lees, part of it in acacia wood barrels, which gives it additional depth.

Pinot Blanc is not a fad in Terlan. It is the foundation. The grape variety around which cellar master Rudi Kofler has been thinking for decades is Pinot Bianco – and no other place in Italy produces it as clearly, as long-lived, as unmistakably as these slopes. The vineyards lie at 350 to 900 metres, on steep to very steep slopes on Monte Tschöggl – higher and cooler than most other Terlan parcels. Quartz porphyry, hand-picked, gentle pressing, slow fermentation in steel, 6–7 months on the fine lees.

Above Margreid, where the Mediterranean climate of the lowlands gives way to the coolness of the higher altitudes, lies the Penon. A single vineyard at an altitude of 500 to 600 metres, facing east-southeast – to the morning sun, which sweeps gently and evenly across the vineyard before the afternoon heat sets in. The soil is pure: exclusively limestone gravel with a high humus content. No porphyry, no volcanic deposits, no mixed rock. Just limestone – and, within this limestone, the most concentrated minerality that Nals Margreid has to offer for Pinot Bianco. The Penon is not a ‘Tradition’ wine, but one of the estate’s ‘Selection’ wines: a single vineyard vinified according to the estate’s own style. Hand-harvested, carefully processed, and further aged sur lies in stainless steel.

The name Lepus – latin for "hare" – refers to the heraldic animal of the Haas family, which has been rooted in picturesque Montagna, south of Bolzano, since 1880. What began as a small family business developed under Franz Haas into one of the most visionary wineries in South Tyrol, causing a sensation with striking artist labels by Riccardo Schweizer and consistent screw caps. The Lepus embodies classic South Tyrolean white wine elegance: vinified from pure Pinot Bianco, the grapes come from vineyards in three different locations between 400 and 800 metres above sea level around Montagna, facing south and south-west on geologically diverse soils – from loose sandy soils to dense, weathered porphyry. The wine is vinified 80 per cent in temperature-controlled stainless steel tanks and 20 per cent in small oak barriques, followed by several months of ageing on the lees.

The Vinschgau is the driest valley in the Alps – less than 500 millimetres of rainfall per year, intense sunshine, dramatic temperature fluctuations between day and night. Not an obvious place for great wine. And yet: Franz Pratzner has believed in it since 1989 – when he gradually transformed the family fruit-growing business above Hochnaturn Castle into a vineyard. Today, Falkenstein is regarded as one of South Tyrol’s most distinctive estates. The Pinot Blanc grows on dry, ancient porphyry soil, on steep south-facing slopes between 550 and 900 metres – austere, mineral, uncompromising. Hand-harvested in mid- to late September. Then comes the estate’s hallmark: fermentation in large acacia wood casks, ten months on the coarse lees. No stainless steel neutrality, no barrique influence – acacia gives the wine a delicate, creamy texture without detracting from its freshness. This is followed by around twelve months’ bottle ageing.

Verso l'alto – upwards. The name reveals the philosophy behind this Pinot Bianco, which is the result of the tension between two fundamentally different worlds. On the one hand, the Bassa Atesina near Salorno and Magrè: calcareous soils, Mediterranean warmth, vines on both banks of the Adige. On the other, Dorf Tirol near Meran: volcanic rock, alpine climate, a completely different energy. Alois Clemens Lageder, sixth generation at Tòr Löwengang, calls such wines "compositions" – deliberate arrangements of contrasts that only develop their full tension when they interact.

Pinot Bianco, or Pinot Blanc, comes from the French Pinot family with Pinot Noir, Pinot Gris and Pinot Blanc. In old Italian wine books, it was equated or confused with Chardonnay for a long time, which is why many winemakers thought they had Chardonnay in their vineyards.
After the Second World War, the vine nurseries delivered Pinot Bianco, Pinot Grigio and Chardonnay at the same time in new plantings, which often actually resulted in a mixed set of Burgundy varieties. Many winegrowers found this quite good, by the way. In the meantime, the vineyards were cleaned up and Pinot Bianco was often displaced by the other two varieties.
While there were still over 5,000 hectares in 2000, the latest statistics from 2010 only show just under 3,000 hectares. The main cultivation areas are Friuli-Venezia Giulia, South Tyrol, Lombardy, Lazio and Veneto.
However, Pinot Bianco can be found as a blending partner for white cuvées as far away as Sicily. The variety is particularly cultivated in South Tyrol and in the Collio, where it is considered a perfect accompaniment to food (e.g. the examples from Lageder, Hofstätter, Schiopetto, Volpe Pasini and others). The relatively neutral variety often smells of pears and delicate nuts, can also show floral notes and is vinified in many variations. As a classic food companion, Pinot Bianco usually comes from the steel tank.
Somewhat riper examples are often vinified in large, neutral wooden barrels. Pinot blancs from good sites and best vintages can also be aged - at least partially - in barriques and undergo a little batonnage (this means the stirring of the fine lees in the barrel), especially in South Tyrol and the Collio. These are then quite finely structured, delicately creamy wines that benefit (even very much) from a few years of storage.
A speciality is the Incrocio Manzoni or Manzoni bianco, a cross between Pinot Bianco and Riesling, which succeeded at the Conegliano School of Viticulture in the 1930s and gained local distribution. To this day, Elisabetta Foradori's version, vinified in amphorae, is highly praised internationally. SUPERIORE.DE
