In the Arbëresh dialect of Basilicata – the language that the Albanian immigrants of the 15th century brought with them to the south of Italy – verha simply means: the wine. Elena Fucci is best known for her Titolo, one of the finest Aglianico del Vulture wines in the world. The Contrada Catavatta is right next door – the same volcanic soils of tuff, ash and pumice, the same altitude at the foot of Monte Vulture, the same manual labour. The vines here, however, were threatened with decay. Elena Fucci saved them: Not with great ambitions, but with the simple conviction that good soil should not waste good wine. 100% Sauvignon Blanc, spontaneous fermentation, steel, no touch of wood. A white wine that tells the story of the Vulture terroir in a language that is rarely heard there: fresh, direct, mineral.

Mario Schiopetto was born in 1930, he grew up in the family-owned Osteria ai Pompieri and had his first professional experiences as a fireman and later as a truck driver. In 1963, guided only by his taste and love of wine, he began to devote himself to wine production in his parents' farm and produced the first pure Tocai in 1965. The historic label at the time included the drawing of his fire engine, which he also used to deliver the wine to customers. With the 2019 vintage, the winery recalled these historical roots and resumed the cute drawing on part of its wine labels.

450 metres above sea level, on stony limestone soils around Tramin and Montan: this is where Sauvignon Blanc finds those striking day-night fluctuations that make its aromatic intensity possible in the first place. The mild, sunny climate of Bassa Atesina ensures optimum ripeness, while cool nights preserve the flavours. In the cellar, the grapes undergo an 8–10-hour cold maceration – longer than the other white wines from the estate –to release the full flavour potential from the skins. After gentle pressing and natural sedimentation, the must ferments at 19 °C in stainless steel.

Stone. The word needs no explanation – and certainly not in South Tyrol. The name describes the soil on which these vines grow: a 150 metre deep alluvial fan that the Sirmian and Nalles streams have carried down from the mountains into the valley over thousands of years. Alluvial rock, clay, marl – a soil that stores water well, releases heat slowly and gives the Sauvignon Blanc that salty minerality that is immediately recognisable in the glass. The vineyards are located in Nalles, between Bolzano and Merano, at 330 to 400 metres above sea level, exposed to the east-southeast. The climate is the typical South Tyrolean paradox: warm to hot during the day, noticeably cool at night – the temperature fluctuations create aromatic precision and preserve freshness. 100% Sauvignon Blanc, hand-picked, fermented in steel for around three weeks, then matured on the lees for five months before bottling.

Sauvignon bianco doesn't come from here. And that was never a problem – on the contrary. The variety from the Bordelais has long since found a second home in the hilly locations of the Collio Goriziano: The windy slopes, the marly soils of Eocene origin, the cool nights between the Julian Alps and the Adriatic Sea – all this forms a Sauvignon that has nothing in common with Loire or Nouvelle-Zélande. It's simply Friulian. Mario Schiopetto knew this. He had travelled Europe, learned precision in German cellars, elegance in France and elegance in Capriva del Friuli – and in Capriva del Friuli turned both into something of his own. His Sauvignon bianco was one of his early passions. The Pompiere version that Emilio and Alessandro Rotolo bottle today is the direct, accessible interpretation: hand-picked at the beginning of September, gentle pressing, fermentation in steel at a controlled temperature, a few months on the lees.

Vulcaia is more than just a wine – it is Stefano Inama's bold vision from 1991, which aimed to demonstrate the potential of the Soave Classico region not through its classic Garganega, but through a revolutionary interpretation of Sauvignon Bianco. The name Vulcaia refers to the volcanic basalt soils of Monte Foscarino, which give this French grape variety a completely new identity. The vineyards at the foot of the mountain benefit from a unique geological constellation: this is where the basaltic lava soils – formed 30 million years ago – meet a microclimate that "domesticates" the Sauvignon and transforms its typical notes in favour of a territorial character. The volcanic terroir with its iron-rich volcanic rock formations gives the grapes a mineral complexity that is unrivalled in other growing regions.

Tenuta San Leonardo is a name that stands for red wine. For generations, the Guerrieri Gonzaga family in Avio, in southern Trentino, has been cultivating a Bordeaux blend that is considered by connoisseurs to be among the best wines in Italy. The fact that the house also makes white wine (and rosato) – and with the same precision – far fewer people know. Vette di San Leonardo owes its name to the peaks that surround the vineyards. Vette – summits, peaks – is the image San Leonardo has chosen for this Sauvignon Blanc: high, clear, unmistakable. The grapes come from Roveré della Luna, a village on the border between Trentino and Alto Adige, which is one of the best Sauvignon Blanc vineyards in northern Italy. The Dolomites as a backdrop, cool nights, a long ripening process on the vine. Hand-picked in September. Only steel, no wood. Five months sur lie on the fine lees – for texture and depth without external ageing.

“Gennen” Sauvignon Bianco Alto Adige DOC 2024
While the Magred thrives in the Mediterranean south of South Tyrol, the Gennen lies at the opposite end of the winery – in Nals, north of Bolzano, at 330 to 400 metres above sea level. A different world, a different character. No Ora wind, no Mediterranean flair. Instead: a continental climate, warm days, cool nights and a soil that has been washed. Literally. The subsoil is a 150 metre deep cone of debris from the Sirmian and Nals streams – 80% limestone gravel, 20% porphyry gravel, orientated east-southeast. This soil gives the Sauvignon Blanc its tension: striking minerality, salty flavour, aromatic precision. Cellar master Harald Schraffl ferments the clarified must for around three weeks in cool steel tanks and then matures the young wine for seven months on the fine lees – pure, without the influence of wood, focussing on freshness and structure.

The name reveals the origin: pepis made up of the classic Sauvignon vineyards Penon and Pinzon, which are located in the municipalities of Kurtatsch and Montan on opposite sides of the valley. A clever move – while one side receives its full ration of sunshine in the morning, the other is only spoilt in the afternoon. The result: grapes from 250 to 550 metres above sea level that ripen on calcareous, loamy, gravelly soils and benefit from extreme day-night fluctuations. Fermentation takes place in stainless steel tanks at a cool 19°C.

Sauvignon Bianco is a rather old bouquet grape variety with many stories about its origin. Today, most geneticists assume that it comes from the Loire region. There are mentions from the 18th century onwards, although Sauvignon blanc is certainly much older as it is a parent variety of Cabernet Sauvignon. DNA analyses identify the Savagnin blanc (Traminer) as a parent, the second partner is still unknown.
For a long time it was assumed that it was a cross with Chenin blanc, but this was recently refuted. In the past, many synonyms were used, especially in Italy, but often these were other grape varieties such as Spergola or Friulano (Sauvignonasse). Pellegrina and Pissotta are still occasionally used today, which in the Venetian dialect is probably meant to be similar to cat urine, according to which the scent of immature Sauvignons can sometimes actually remind us.
Today the abbreviation Sauvignon Bianco has become established, in Italy Sauvignon Bianco, in the export however mostly the French original designation Sauvignon blanc is used.
From the Dolomites to the Aetna.
The white grape variety is widespread in many wine-growing regions of Italy, in total it can be found on almost 4,000 hectares from South Tyrol to Sicily. While in the northern regions like Alto Adige (South Tyrol), Collio and Friuli (Friaul) as well as in the Veneto mostly pure wines are pressed from it, in the southern regions Sauvignon is often used as a blending partner for white cuvées.
Sauvignon Bianco needs good, sunny locations, but poor soil. The bouquet can be greatly altered by the work of the leaves and the time of harvest, so it is in the hands of the agronomist which aromas are characteristic. With dense foliage and early harvest, green aromas of paprika and nettles dominate, medium ripeness often smells of gooseberries, asparagus and artichokes, while very ripe grapes yield a complex wine with tropical aromas or black currants to hints of celery tubers.
Mineral and fragrant.
Sauvignon Bianco can become very mineral and has a very animating and pleasant acidity. This is why you will often find lighter, fresh wines that have been aged in stainless steel tanks, while the more mature versions are often allowed to be aged in barriques and are then complex and long lasting.
Some Sauvignons from South Tyrol, such as the legendary Quartz of the Terlan winery or the complex representatives from Collio (Friuli) have achieved worldwide recognition. And in such famous estates as Sassicaia or Ornellaia Sauvignon Bianco is increasingly relied upon for white wines. SUPERIORE.DE
