The single vineyard Bufaleffi is considered one of the most historic cru zones around Pachino, the historic heart of Nero d'Avola. The deep red soils with a high iron and lime content, the hot climate tempered by the sea air at night and the organic cultivation form the foundation of this single vineyard wine. The ungrafted vines are over fifty years old, the yield is low and the harvest is selective and manual. After the classic mash fermentation, the wine matures for over two years in used barriques and then for a long time in the bottle – this gives it density, structure and expression.

On the nose, ripe plum, baking spice, menthol and new leather. On the elegantly structured, delicious palate, notes of ground pepper and liquorice accentuate a core of juicy black cherry and crushed raspberry, supported by a backbone of taut, refined tannins. A wine with origin and signature: The grapes come from the renowned Scarrone vineyard directly below Castiglione Falletto – a warm south-east exposure with calcareous marl soils. Vietti cultivates the vineyard organically and vinifies the Vigna Scarrone with respect for the grape variety and terroir. Temperature-controlled maceration is followed by ageing in large barrels and used barriques – an approach that promotes both structure and elegance.

In 1991, Alois Lageder succeeded in acquiring Casòn Hirschprunn, a historic estate that was mentioned in documents as early as the 13th century and today forms the spiritual heart of Lageder's biodynamic philosophy. Here, in the Renaissance palazzo in the middle of Magreid, where over 30 hectares of vineyards between 230 and 360 metres adorn the gentle slopes of the Margreider Schuttkegel, a revolution began in 1995: the first biodynamic experiments on Italian soil, which made the winery one of the pioneers of this holistic form of cultivation. "Tasting the unpredictable" – is how Alois Lageder himself defines the nature of this extraordinary white wine, which epitomises the joy of experimentation and innovative strength of the estate like no other.

A tribute to Luigi, Valeria's father, without whose support the life project of Valeria Viganò and Luca Orsini in Panzano would never have been realised. Aluigi embodies the highest level of the art of Sangiovese from Le Cinciole – only 4,000 bottles are produced annually from the single vineyard "Campo ai Peri". This Gran Selezione comes from organically cultivated vineyards at an altitude of 440 metres, where south-west-facing vines are rooted in the characteristic Galestro soil over sandstone. The traditionally dense planting of 9,000 vines per hectare and the cool, high-altitude climate give the wine its characteristic elegance and complexity. Vinification follows the original principles of the estate: hand-picking and careful selection of the grapes, spontaneous fermentation with wild yeasts in cement tanks for four weeks. After malolactic fermentation, the wine matures for 24 months in French oak barrels of 25 hectolitres, followed by a further year in concrete and twelve months of bottle ageing.

This genuine Aglianico speciality from 70-year-old vines is aged in terracotta amphorae for 18 months, giving it greater juiciness, freshness and depth. Intense ruby red in colour with garnet hues. Spicy hints of pepper and fruit jam, blackcurrant and tobacco on the cautiously reductive nose. Ruby red in colour with a violet hue. Ripe cherry, blackberry and violet on the nose, with a hint of herbal spice. Juicy, fresh and precise on the palate, carried by fine tannins and lively, pure-toned fruit. The pure stainless steel maturation reinforces the varietal character. The year was 1090, the year in which Leif Erikson discovered North America, the Chinese discovered gunpowder and Pope Urban II conquered Jerusalem. On that day, the notary Bellundo recorded a contract in the Siena state archives: two capons, three loaves of bread and six coins of good silver as an annual lease for a vineyard in the divine valley of Dievole. "Dio vuole" – god wants it. This is the etymological root of this name, which has symbolised the special connection between man and nature in this corner of Tuscany for over nine centuries.

Away from the dominance of Sangiovese in the Conca d'Oro, Giovanni Manetti shows the international side of Fontodi with this single-varietal Syrah. The hand-picked Syrah grapes grow in the south-facing single vineyards Case Via and Pecile around Villa Pecile, where the calcareous-clay soils and the Mediterranean microclimate with pronounced day-night temperature fluctuations prove to be ideal for the Rhône grape variety. After three weeks of spontaneous fermentation in stainless steel tanks with indigenous yeasts, the organically certified wine matures for twelve months in French barriques from Troncais and Allier.

Animanaturale from vines over 60 years old is the lightest and freshest wine from the new Animaetna line of the small garage winery Contrada Santa Spirito, which belongs to Feudo Maccari. Matured almost entirely in amphorae, the Nerello Mascalese grape presents itself here in all its fruitiness and freshness, completely unadulterated and pure. The grapes are foot-pressed, spontaneous fermentation is carried out using the grapes' own yeasts, racking and bottling take place according to the phases of the moon. A Burgundian soul in the Tuscan terroir: Giovanni Manetti vinifies this single-varietal Pinot Nero from the west-facing Case Via vineyard in the heart of the Conca d'Oro. The hand-picked grapes from 4,000 to 6,000 vines per hectare undergo a two-week spontaneous fermentation in cone-shaped Allier wooden vats with indigenous yeasts and manual racking. Twelve months of ageing in French Troncais barriques give the organically certified Pinot Noir its characteristic elegance.

Every year, Istine's Chianti Classico is one of the most racy and authentic representatives of its genre. Its weightlessness and at the same time precision make up a large part of its appeal. A finely knit bouquet of red berries, flowers, chalk and white pepper. Medium-bodied on the palate, its fine fruit, creamy tannins and plenty of personality come to light with further aeration. Le Baròncole Riserva impresses with its juicy fruit and stone fruit flavours on the nose and continues this beautiful impression on the palate. Cherry, sour cherries, blackberry, very juicy and powerful in appearance, completely fills the palate, but always remains lively and elegant. Of the four Gulfi-Cru, this is the vineyard closest to the sea, less than 700 metres away and only 10-15 metres above sea level. With vines that grow on sandy soils. A beautiful, multi-layered wine that shows the elegant side of Nero d'Avola that few producers are ever able to present. Precise aromas of ripe red cherries, flint, orange peel, lavender and violets. Silky and juicy on the palate, with a refined but very concentrated extract that almost crushes the taste buds, yet remains lively and not at all heavy, giving the flavours of red cherries, raspberries, flowers and minerals beautiful definition and lift. Trefiano was created in 1979 from an idea by Vittorio Contini Bonacossi to show all the complexity and longevity that Carmignano is capable of. Named after the historic hamlet of Trefiano, where a magnificent 16th century villa is surrounded by two exquisite vineyards, this Riserva represents the absolute pinnacle of what Tenuta di Capezzana has to offer. With just over 5,000 bottles produced each year, Trefiano is one of the rarest and most sought-after Tuscan riservas – a wine that not only celebrates the present, but was created for the future.

The wine comes from a neighbouring walled vineyard around the Villa di Trefiano, which produces a wonderfully elegant variant of Carmignano. Trefiano Riserva remains in used 350-litre tonneaux for 18 months after spontaneous fermentation. Bright, noble ruby red colour. Black cherry and cassis on the nose, with an intense, ripe and juicy plum flavour. Long, multi-layered and complex on the palate, the Riserva needs a little more air and shows a little more depth than the classic Carmignano.
