Montalcino is Brunello country. Anyone who has anything to do with wine knows that. This makes the decision that Conte Alberto Marone Cinzano made in the early 1980s all the more remarkable: he planted Cabernet Sauvignon in the hills above Sant'Angelo in Colle – in a region that has belonged to Sangiovese for centuries. Not an experiment, not a whim, but out of conviction: That the exceptional terroir of Montalcino can give this grape variety what it cannot find elsewhere. The vineyard bears the name of the Elm grove that accompanies it – olmaia. The denomination has changed over the decades: what once appeared under Sant'Antimo DOC is now labelled Toscana IGT. The wine has remained the same. 100% Cabernet Sauvignon, organically grown on 140 hectares of the estate, on soils of galestro and clay, which give the Cabernet the concentrated minerality that has always characterised Col d'Orcia. The grapes ripen slowly, under the dry heat of summer, surrounded by maquis, olive trees and the silence of the hill.

Montalcino and Cabernet Sauvignon – at first sounds like a marriage against nature. Sangiovese reigns here, Brunello grows here, the grape variety has found its expression here for centuries. The fact that Count Alberto Marone Cinzano nevertheless planted Cabernet Sauvignon on the hills of his estate in the early 1980s was neither a coincidence nor an experiment – it was a conviction. The conviction that this terroir, these soils, this altitude are capable of more than just one wine. Today, Olmaia is a monument to this vision. The vineyard – 365 metres above sea level, planted in 2005 – bears his name. The DOC Sant'Antimo, founded in 1996, created the legal framework for just such wines: international grape varieties, grown in Montalcino's chalky soil, with the ambition not to imitate, but to interpret.

The idea is simple and radical at the same time: three international grape varieties in precise proportions – 60% Cabernet Sauvignon, 20% Cabernet Franc, 20% Merlot – from the clay-limestone soils of the Colli Berici near Lonigo. The label gives no history, no vineyards, no poetry. Just numbers. 60 20 20, but what lies behind these numbers is a very Venetian decision: The Merlot does not come fresh from the vineyard. It rests for 20 to 30 days in shallow crates after being harvested by hand – appassimento, as Gaspari knows it from Valpolicella. It then meets the freshly pressed Cabernets in the cement tanks, ferments for 40 days with indigenous yeasts and the three become one.

On the Colli Berici near Lonigo, where the clay-limestone soils give the international grape varieties a Venetian home, the harvest always starts last. At the end of September, beginning of October – when most other vineyards have long since harvested. For Celestino Gaspari, this is no coincidence: "Cabernet Sauvignon and Cabernet Franc need their time on these soils. Merlot even more so – although it leaves the vineyard at the same time, it then spends 20 to 30 days in shallow crates in the Fruttaio. Appassimento for a Bordeaux blend: a decidedly Venetian decision. After a cool, unsettled spring, 2021 brought a summer of distinct elegance in the Veneto – moderate warmth, good temperature fluctuations, healthy grapes. The manual harvest yielded aromatically clear, structured fruit. 40 days of fermentation in cement with indigenous yeasts, at least 24 months in new French barriques, one year in the bottle.

2022 was a vintage of concentration: dry winter, hot summer – small yields, but outstanding quality. The Tiefenbrunner family demonstrates this intensity in the Linticlarus cuvée in an impressive way. The classic Bordeaux assemblage of Cabernet Sauvignon and Merlot in equal parts grows on the south-southeast-facing slopes of Entiklar, at an altitude of 260 to 300 metres. The broodingmoraine soil – loamy sand with a high lime content – stores the heat of the day and slowly releases it at night. The result: perfect phenolic ripeness with preserved freshness. Mash fermentation in concrete is followed by 12 months in barriques, 6 months in large wooden barrels and a further year of bottle ageing.

Angelo Ambrogini was born in Montepulciano in 1454. As a humanist, poet and confidant of Lorenzo de' Medici, he wrote some of the most beautiful stanzas of the Renaissance under the name "Il Poliziano". Le Stanze, his most famous work, is a poem about beauty, transience and the power of the moment. Federico Carletti has named his winery after the great poet. And this wine the title of his masterpiece. This is no coincidence. Le Stanze is Poliziano outside its borders – no Prugnolo Gentile, no DOCG obligation, no looking back. 90% Cabernet Sauvignon, 10% Merlot, certified organic since 2021: a Super Tuscan. The grapes grow on the best plots around Montepulciano, on clay and limestone soils between 300 and 450 metres above sea level. Hand-picked, fermentation in stainless steel tanks with a long maceration period of 20 to 25 days, 16 months in French barriques – precise, without exaggeration.

A bold experiment that became a success story: In 2000, Valeria Viganò and Luca Orsini ventured into international grape varieties and created Camalaione, a Supertuscan that expresses the special terroir of Panzano in every bottle. This organically certified cuvée of 70% Cabernet Sauvignon, 15% Syrah and 15% Merlot impressively demonstrates the Orsinis' conviction that the unique interplay of soil and climate can be found in every wine, regardless of the grape variety. The grapes come from the estate's oldest vineyards, where an extreme vine density of 9,000 vines per hectare ensures natural competition and each plant produces no more than 500 grams of grapes. This concentration is also reflected in the exceptional quality of the vintage. Vinification is carried out using traditional methods: spontaneous fermentation with wild yeasts in Liters oak barrels, which act as small open fermentation vats and allow regular hand pressing. After fermentation, the wine matures for around 24 months in French barriques, followed by at least twelve months of bottle ageing.

Marciliano is a truly ambitious Cabernet cuvée from the Sangiovese-dominated Montecchio/Orvieto region and reflects uncompromising quality and craftsmanship. The 2019 vintage was characterised by mild but structure-enhancing weather conditions: cool nights during the harvest phase and warm days that perfectly balanced the ripeness of the aromas. In the glass, it has a dense ruby red colour with a garnet red hue. The nose intones ripe sour cherry, stewed plums, ripe wild berries, and further develops smoke, leather, hints of white truffle and a touch of vanilla and cedar wood. Powerful yet polished on the palate – clearly structured, with fine-grained, ripe tannins, lively acidity and a substrate-rich, spicy texture. The ageing in barriques was selectively dosed and supports the spiciness without masking the varietal typicity. Marciliano is a serious, mature red wine with depth and potential. Volpolo embodies the pure essence of this exceptional location between the municipalities of Castagneto Carducci and Bibbona; the name is a tribute to the ancient Tuscan grape variety Volpola and at the same time an expression of the deep roots in the Bolgheri terroir. This organically certified cuvée of Cabernet Sauvignon, Merlot and Petit Verdot thrives on the estate's 27 different soil types – a mosaic of sand, clay, limestone and sea pebbles, which owes its mineral richness to the former marshlands. The farmers of Menfi call it "Burdisi". This is no nod to France – it is dialect. Burdese is the Sicilian pronunciation of “Bordolese”, and it reveals just how naturally Cabernet Sauvignon and Cabernet Franc have become part of this landscape in south-west Sicily. Not as imported goods, but as part of the local vocabulary. Planeta has adopted the name – and turned it into one of the island’s most distinctive red wines. The vines are planted at the Dispensa estate near Menfi, at altitudes of up to 430 metres, in brooding, calcareous soils of medium texture. A site that provides the Cabernets with the necessary coolness to retain their aromatic precision. Limited quantity, selected plots, harvested in mid-to-late September. Aged in wood for a wine made for long ageing.

The heart of the Lageder revolution beats on the spectacular steep slope of the Römigberg, where Lake Kaltern stretches like a mirror at the foot of the vines. Here, on the plot of land that has always borne the name Herz – latin "Cor" – alois Lageder dared to do the impossible in 1986: In an unprecedented act of courage, he planted the first large vineyard in South Tyrol in dense planting on a wire frame, radically breaking with the centuries-old pergola tradition. What began as a scandal became a legend. Working with winegrowers from all over the world – the legendary Robert Mondavi from California and several chateau owners from Bordeaux – inspired Lageder to make this visionary decision. He recognised that the steep south-southeast-facing slopes between 250 and 330 metres, characterised by stony, gravelly dolomite limestone over ancient moraine deposits from the third ice age, had the potential for world-class wines. Here, where warm Mediterranean influences meet Alpine coolness and intense sunshine meets millions of years of geological history, conditions of unique complexity are created.

The grapes for this Supertuscan come from the San Giovanni vineyard near San Giovanni a Cerreto. In the church next to the vineyard there is a painting by Rutilo Manetti depicting St John the Baptist (San Giovanni). Deep ruby red, youthful, rich, dark fruit, berry and cassis flavours meld with French oak. On the palate with deep, subtle fruit flavours and an excellent balance of fruit and tannin, plus some smoke, liquorice and tar. Guidalberto bears the name of a man who shaped the Bolgheri landscape forever in the early 19th century: Guidalberto della Gherardesca, the visionary agricultural pioneer who created the famous cypress avenue – the Viale dei Cipressi – was created. What was initially intended as a practical demarcation between different areas of cultivation became the iconic silhouette of an entire region. 2023 marks a turning point for this exceptional wine. For the first time, Tenuta San Guido is positioning its Guidalberto separately from the legendary Sassicaia – a deliberate move to demonstrate that this is not a "second wine", but an independent interpretation of the Bolgheri terroir. As Priscilla Incisa della Rocchetta puts it: "You can't compare them. They are completely different worlds." The 2023 vintage is a synthesis of 55 per cent Cabernet Sauvignon and 45 per cent Merlot. While the Cabernet Sauvignon provides structure and depth, the Merlot brings the silky texture and accessible sweetness that makes Guidalberto so distinctive. Fifteen months in French and American barriques give the wine its characteristic balance between strength and elegance.

In the early decades of the 19th century, one man shaped the landscape of Bolgheri like no other: Guidalberto della Gherardesca, an ancestor of the Incisa family, commissioned the construction of the area’s first mills and churches, laid out fields and designed the Viale dei Cipressi – that famous avenue of cypresses which Carducci immortalised and which still marks the entrance to Tenuta San Guido today. This wine is dedicated to the pioneer of this landscape. Nicolò Incisa della Rocchetta, who had long maintained that he wished to produce just one wine, recognised in the mid-1990s the potential of new plots along the Viale dei Cipressi, on clay-loam soils that proved particularly well-suited to Merlot. The first harvest was in 2000. Today: 58% Cabernet Sauvignon and 42% Merlot, from vines with an average age of 18 years. Hand-harvested, short maceration, indigenous yeasts, malolactic fermentation in stainless steel, followed by 12 months in French barriques, approximately 40% of which are new.

Sammarco occupies a special place in the history of Super Tuscans – not only as one of the first of its kind, but as a testament to a visionary rebellion against tradition. When Alceo di Napoli presented the first vintage of this extraordinary Bordeaux blend in 1980, he made wine history: with the legendary Giacomo Tachis at his side – the architect behind Sassicaia, Tignanello and Solaia – he created a wine that would change Italy forever. The name honours Marco di Napoli, the brother of the current owners Maurizia and Luca, and embodies the continuity of a family whose land has been rooted in the golden Conca d'Oro near Panzano since 1739. Here, on calcareous Galestro soils at an altitude of 360 metres, the vines thrive according to biodynamic principles – a philosophy that makes Sammarco the first fully biodynamic Super Tuscan.

The farmers of Menfi call it "Burdisi". This is no nod to France – it is dialect. Burdese is the Sicilian pronunciation of “Bordolese”, and it reveals just how naturally Cabernet Sauvignon and Cabernet Franc have become part of this landscape in south-west Sicily. Not as imported goods, but as part of the local vocabulary. Planeta has adopted the name – and turned it into one of the island’s most distinctive red wines. The vines are planted at the Dispensa estate near Menfi, at altitudes of up to 430 metres, in brooding, calcareous soils of medium texture. A site that provides the Cabernets with the necessary coolness to retain their aromatic precision. Limited quantity, selected plots, harvested in mid-to-late September. Aged in wood for a wine made for long ageing.

L'Alberello is a beautiful Rosso made primarily from Cabernet. The wine comes from a two-hectare plot planted entirely with long rows of Alberello vines planted at an altitude of 30 metres above sea level on predominantly clayey soils. Fermentation takes place in stainless steel and the wine matures for 18 months in barriques. Starts fresh and vehement with warm, dark fruit flavours, then opens up further with a bouquet of herbs, coffee and a pinch of pepper.
