A Vermentino with a name that sounds like the sea – and that is precisely its promise: Cala Silente comes from selected vineyards blown by the mistral near the south-west coast of Sardinia. The grapes are harvested early in the morning and matured at a controlled temperature in stainless steel tanks to preserve freshness and aromatic clarity. Pale straw yellow in colour. The aroma is distinctive but subtle: white peach, lime and salty minerality, with a hint of Mediterranean herbs and wet stone. Lively and taut on the palate, with fresh acidity, a delicate melt and a long, cool finish – close to the coast and full of character. Morisfarms is located seven kilometres from the Tyrrhenian Sea. And you can taste it. The Vermentino from the Poggetti estate carries the coast in the glass: salty, mineral, fresh, with that characteristic crispness that distinguishes Vermentino from the Tuscan coast from its more opulent relatives from Sardinia or Piedmont. The wine is not a pure Vermentino, but a harmonious blend: 90 per cent Vermentino, 10 per cent Viognier – the indigenous coastal variety and an aromatic northern player. The Viognier is harvested at the end of August, the Vermentino in mid-September. Both are cold clarified separately and fermented together in steel at 18 degrees. Matured lean, short fine lees, fresh in the bottle.

Vernatsch is South Tyrol in its most honest form. The autochthonous red wine variety – also known as Schiava – has accompanied the South Tyrolean wine route for centuries: light, easy to drink, uncomplicated in the best sense of the word. Tiefenbrunner has been cultivating it since 1968 on three different sites between 220 and 650 metres – calcareous dolomite soils in the high altitudes of Penon, Hofstatt and Rain, limestone gravel soils from moraine deposits in Entiklar and on the Margreider Leiten, red sandy loam in Brenntal and Frauenriegel. Each site has its part to play. Vinified in concrete vats and large wooden barrels – the only use of wood in the entire Merus line.

Roccamonfina is an extinct volcano in northern Campania – between Caserta and the border with Lazio, a few kilometres from the Tyrrhenian Sea. Its slopes are volcanic, rich in phosphorus, potassium and microelements, and for decades have been home to the indigenous grape varieties that have characterised this coastal landscape. Piedirosso – "red foot", after the characteristic red stems of the plant – is one of them: fresh, aromatic, with a mineral lightness that no other red wine in Campania can match. Villa Matilde Avallone, known for its Falerno del Massico classics, has created the Stregamora – the dark witch – a wine that shows the character of this volcano in its most accessible form. Hand-picked at the beginning of October, cold maceration, fermentation at 24°C for around 15 days, malolactic fermentation, three months ageing in steel.

Elisabetta Geppetti is more than just a winemaker – she is the "Signora del Morellino", the energetic woman who took over the reins of the family winery at the age of just 20 and helped the Maremma region to achieve international renown. When she pressed the first Morellino in 1985, she laid the foundations for a success story that continues to this day. This wine is the quantitative and qualitative calling card of Le Pupille – a constant, authentic expression of the terroir between Pereta and Magliano in Tuscany. The Morellino combines Sangiovese (90%) with Alicante and the autochthonous Ciliegiolo (5% each) from vineyards exposed to the south-west at an altitude of 50 to 250 metres. The vines, some of which are over 40 years old, are rooted in skeleton-rich, clayey and ferrous soils, cooled by sea breezes and strengthened by pronounced day-night temperature differences. After the harvest at the end of September, the must ferments on the skins for 15 days and matures for eight months, mainly in stainless steel tanks with a small proportion in used barriques.

Since 1897, Nino Negri has been the house that represents Valtellina to the outside world – and the Quadrio is one of its most reliable ambassadors. The name refers to the 15th century Castello Quadrio di Chiuro, the ancestral seat of the winery, named after Stefano Quadrio, once governor of Valtellina. Today, cellar master Danilo Drocco, a Nebbiolo purist from Alba, manages the winemaking process with a Piedmontese view of the Alps – and brings precisely this tension to the wine. Quadrio is a cuvée made from 90% Chiavennasca – the local name for Nebbiolo – and 10% Merlot, whose terraced fruit gently balances out the alpine austerity. The grapes come from south to south-east exposed steep slopes at 350–500 metres, on sandy limestone soils behind dry stone walls, harvested by hand as they have always been. Maceration in steel for ten days, followed by 18 months in large Slavonian and French oak barrels.

A wine that tells in every facet where it comes from – that is Contado Riserva. Made from 100% Aglianico from organically farmed slopes of the Ramitello vineyard in Molise (Contrada Camarda), it shows the potential of this robust grape variety and the special region. The soil is calcareous with clay and sand, giving the wine mineral depth and vigour. The late harvest is followed by a long maceration period, after which the wine matures for a total of around three years: partly in barriques and tonneaux, partly in stainless steel tanks, and finally with extended bottle ageing. This careful ageing philosophy gives the wine complexity, elegance and a fine power of integration in every vintage.

In the Middle Ages, it was a monk from Montepulciano Abbey who was the first to write down how to make wine from the local grapes. Sabatino Lulli, known as Sabazio, did not leave behind any great works – just a few lines about the local varieties and their processing. La Braccesca has given its name to a wine that reflects this modesty: direct, fresh and straightforward. The Marchesi Antinori estate extends over 500 hectares on the border between the Val di Chiana and the hills of Montepulciano, at an altitude of around 280 metres. 85 per cent Prugnolo Gentile – the local Sangiovese clone that gives the Rosso di Montepulciano its characteristic freshness and fruitiness – supplemented by 15 per cent Merlot, which contributes body and softness. The two varieties are harvested separately: the Merlot in mid-September and the Prugnolo Gentile a month later. Separate fermentation in steel, short malolactic fermentation in large barrels, then four months of ageing. Fresh, light, without a hint of wood.

"Cerasa" – means ‘cherry’ in the Sicilian dialect. And it has not only given this wine its name, but also its colour and character. Cerasuolo di Vittoria is Sicily’s only DOCG – the highest distinction that Italy’s appellation hierarchy can bestow, and one that has designated this area between the sea and the Iblean Mountains in the south-east of the island as exceptional since 2005. The vines are planted at Tenuta Dorilli, named after the nearby River Dirillo, on loose red sand with a layer of tuff 90 centimetres deep – —a soil profile that regulates the vines’ water supply in Vittoria and explains the characteristic freshness of these wines. Nero d’Avola brings body and dark fruit. Frappato – genetically related to Sangiovese – , brings floral notes, strawberry and lightness. Both are organically grown and hand-harvested.

Grandmother Rosa would be proud: the brothers Giuseppe and Pierino Bisci dedicated this pale pink-coloured wine to the matriarch of their family – a loving tribute to the generation that laid the foundations for Bisci's success. While the winery has been world-famous for its legendary Verdicchio wines since 1972, "A Nonna Rosa" shows a rarely seen facet of Marche: elegant rosé vinification from Sangiovese and Merlot from those two hectares that are not planted with the main grape variety. In the hills between Macerata and Ancona, at an altitude of 320 to 370 metres, the red grapes thrive on calcareous clay soils – the former sea basin that also characterises Verdicchio's minerality.
