In Serralunga d'Alba, everything revolves around Nebbiolo. The limestone, the steep slopes, the microclimate – everything is geared towards it, everything serves Barolo. The fact that the Massolino family also cultivates Dolcetto on these soils has less to do with compromise than with conviction: What comes from a great terroir bears its signature, regardless of the variety – regardless of the variety. 2.5 hectares of Dolcetto at 330 metres, in the shadier plots of the Serralunga hills – because the variety ripens quickly and needs some protection from the midday heat of the limestone slopes. Hand-picked, 7 to 9 days of maceration in steel at around 30 degrees, BSA, short maturation in the bottle – the wine is released at the beginning of the following year.

The great white heron spends the winter in the Riserva dello Stagnone near Marsala, the tranquil nature reserve of lagoon, salt pans and wide open skies where the vineyards of Cantine Rallo are rooted. The white colour of the bottle label is reminiscent of the Marsala salt pans, the yellow of the Sicilian sun. The bird gave the wine its name. 100% Grillo, the autochthonous grape variety of western Sicily, traditionally grown in the Alberello marsalese – the bushy training system that gives the vines shade and balance in the summer heat. South-facing, at an altitude of 50 metres, loamy-sandy soil near the coast. Hand-picked in September, gentle pressing, fermentation in steel at 15 to 16 °C, no malolactic fermentation, 6 months in steel, short bottle ageing.

In 1993, to mark the 50th anniversary of Five Roses, Leone de Castris decided that such a milestone deserved a wine worthy of the occasion. The Anniversario was born – and has been making history ever since. It has won Gambero Rosso’s Tre Bicchieri award on multiple occasions, as if it were routine. 80% Negroamaro, 20% Malvasia Nera di Lecce, grown on loamy-silty soils in Salice Salentino. Hand-harvested in early September, gentle destemming, cold maceration at 7–10°C, gentle must extraction without pressure, controlled fermentation in stainless steel. Simple, precise, uncompromising.

Lumera is a woman from a Sicilian poem – written in a language that predates Italian, in the spirit of the Dolce Stil Novo: "How can a woman so tall enter through my eyes, which are so small?" The Rallo family not only dedicated the wine to her – it has given her its face, on one of the most recognisable labels in Sicily. Nero d'Avola, Syrah and Nocera – a blend from the heart of Sicilian winegrowing history, cultivated between 200 and 500 metres on the Tenuta di Contessa Entellina in the south-west of the island. Two months on the fine lees in the tank, two months in the bottle.

Caricagiola is a red grape variety that is mainly cultivated in Sardinia and Corsica. It is particularly widespread in the Sardinian region of Gallura, where it thrives in the region's unique climate and soil conditions. However, its close resemblance to the black Vermentino Nero grape suggests that it could also originate from Liguria. Another theory about its origin links it to the southern Portuguese grape variety Mourvèdre Nero or Bonvendro, which was once considered a special biotype of the Mourvèdre common in southern France and Spain.

Some vineyards have names that you never forget. The Hexenbichl – or Hexenbühel, as the older people around Tramin call it – lies on the southern slopes of the village, between 300 and 450 metres, on calcareous clay and gravel. Vernatsch has thrived here for generations; the vines for this wine are between 60 and 100 years old. They have not been replaced because they knew that no young vine could match the vigour of these roots. Fermented in steel tanks, matured in large oak barrels – without pressure, without haste. Vernatsch, also known as Schiava in South Tyrol, needs this. It is not a grape variety for feats of strength, but for precision and patience.

Neive, in the heart of the Barbaresco appellation, gives the Dolcetto its special depth: calcareous clay soil at 300 metres, temperate climate, 30 to 35-year-old vines – a root mass that ensures concentration and character. Aldo Pola and his family vinify traditionally: fermentation in stainless steel tanks at a controlled temperature, no wood. The result is Dolcetto in its most honest form.

Matteo Ascheri is the seventh generation to run the winery. Based in Bra since 1880, he has been known for decades for his Barolos – and yet he has dedicated a separate category to his daughter Cristina: the "Bianchi di Cristina", three white wines that show that Piedmont can also do white. Tenuta Il Palagio is located in the hills south of Florence, where Sting and Trudie Styler have been cultivating a 350-hectare estate dating back to the 16th century biodynamically since 1997. The Vermentino comes from eleven hectares of vineyards on the calcareous soils of the Chianti Colli Fiorentini – vinified under the aegis of Riccardo Cotarella. The grapes are harvested by hand at the end of September and fermented in stainless steel at low temperatures to preserve freshness and primary fruit.

Arneis was once almost forgotten – a difficult, unpredictable grape variety that always had to give way to Nebbiolo in Piedmont. Today it has been rehabilitated. In Neive, at the heart of the Barbaresco appellation, the Pola family cultivates their Arneis on calcareous clay soils at 300 metres above sea level – guyot training, steel, controlled temperatures. The name "the highest" – is not an empty promise here. 2025 brought cooler temperatures and more precipitation in Piedmont than the previous year – and thus an Arneis of great lightness and aromatic clarity.
