The name says it all, as this is a rosato that is reminiscent of the unconventional times of 1968 in terms of its lightness and vivacity. In the glass, it has a radiant, delicate peach-pink colour – almost as if a sunrise had taken wing. A floral bouquet of grapefruit, pineapple, apricot and wild meadow flowers heralds various adventures. On the palate, it remains dancingly light, with bone-clear acidity and crisp fruit, slightly salty notes and an expression of redcurrants round off the picture. Unfiltered, direct, fresh – an invigorating counterpoint to everyday grey life. Morisfarms has chosen this name for a rosé that does it justice: historically rooted, botanically precise, with a quiet elegance. 100% Sangiovese from the Poggetti estate in Massa Marittima – clay-rich soils, south-west exposure, seven kilometres of sea air. The grapes are harvested in mid-September. What follows is the decisive factor: The skins are removed immediately after gentle pressing – no contact with the skins, vinification like a white wine. Fermentation in steel under dry ice protection, 15 days on the fine lees, fresh in the bottle.

There is a moment in the history of Lambrusco that changed everything. In 1984, the Medici family decided to press their best wine not from an average vineyard, but from a single vineyard: Tenuta La Rampata, near Gaida in Reggio Emilia. This was a provocation – for a grape variety that was considered a mass product at the time. The Concerto became the first single-vineyard Lambrusco in the world. And it proved that this idea was not hubris. 100% Lambrusco Salamino, organically grown on clay soils, Cordone speronato, yields far below the maximum permitted quantities. Spontaneous fermentation in steel, stopping at the desired alcohol content, second fermentation using the Charmat method at the lowest temperatures – to preserve every hint of fruit. Officially certified organic since the 2020 harvest.

Roberto Anselmi is the eternal rebel in the Soave region – a man who turned his back on the Soave DOC consortium in 2000 because, among other things, he disliked mass production. His vineyards on volcanic tuff and limestone between 220 and 350 metres above sea level provide the basis for the San Vincenzo – an "irreverent" and no less exciting cuvée made from 70 per cent Garganega, supplemented by Chardonnay and Sauvignon Blanc.

Chardonnay without wood, Zenato favours pure fruit with Santa Cristina. The grapes come from the single vineyard Podere Massoni south of Lake Garda, where 30-year-old vines are rooted in moraine soil. Harvested at the beginning of September, fermented at 16–18°C in stainless steel, then matured on the fine lees for four to five months. Straw yellow in colour with green reflections. Apulia is the heel of the boot – surrounded by two seas, the Adriatic to the east and the Ionian Sea to the west. Cool breezes moderate the summer heat, the sandy limestone soil stores the heat of the day and releases it again at night. Fiano Minutolo grows in this climate – also called "Latina Bianca" here in Apulia – on vines over twenty years old from the Masseria Li Veli. The nickname "Minutolo" describes what the eye sees: Small, compact berries with concentrated flavours. Some decisions are radical in their simplicity. Gianluigi Bergaglio has been producing exactly two wines since 1970 – both from 100% Cortese, both from his own 17 hectares in the Rovereto fraction, both exclusively in steel. No barriques, no second grape variety, no distractions. The vineyards lie at 300 metres in the hills south of Gavi, on characteristic red clay with a high iron content – a soil that gives the Cortese minerality and structure not found in other parts of the appellation. Ligurian breezes from the south cool the slopes and maintain freshness. Guyot cultivation, no extreme yield reductions, but care in the vineyard and cellar.

No winery has characterised Lugana like Zenato. When Sergio Zenato started out in San Benedetto di Lugana in 1960, the appellation was a sleepy corner on the southern shore of Lake Garda. Today, the family winery owns 70 hectares of the best vineyards – a tenth of the entire DOC. The Trebbiano di Lugana grape variety, also known as Turbiana, is rooted here on clayey moraine soils between Peschiera and Desenzano. DNA analyses suggest a relationship with Verdicchio – a debate that is causing a stir among ampelographers. One thing is certain: The 30-year-old vines produce grapes of remarkable complexity. Hand-picked at the end of September, gently pressed, fermented at 16–18°C in stainless steel.

Pinot Grigio has an image problem. Somewhere between mass-produced Veneto wine and an international run-of-the-mill wine, the impression has been created that it is a wine without ambition. If you want to correct this impression, look to South Tyrol. In the Alto Adige, the variety – originally from Burgundy – has found a terroir that gives it what it doesn't get elsewhere: cool nights, altitudes between 300 and 500 metres, calcareous soils, alpine precision. Cellar master Hans Terzer, who has been one of the defining figures of South Tyrolean white wine for decades, has clearly formulated the line: clean, varietally pure, clear in tonality. The St. Michael-Eppan winery, founded in 1907 and supported by 340 member families, has turned it into one of its best-selling wines – and rightly so. 100% Pinot Grigio, fermented and matured exclusively in steel.
