Whilst Santo Spirito unfolds its floral elegance at an airy altitude of 700 to 800 metres, Calderara Sottana is rooted in a completely different world. Just a few kilometres away, yet geologically distinct, this Contrada lies at an altitude of 620 to 670 metres directly adjacent to the vineyard – and it is here that the extraordinary complexity of the Etna terroir reveals itself. In Calderara Sottana, Marc de Grazia discovered one of Sicily's rarest treasures: a pure, elliptical terroir, formed 60,000 years ago by volcanic eruptions. Of the hundreds of contrade on Mount Etna, only three possess this unadulterated geological fingerprint, and Calderara is one of them. Whilst the Santo Spirito captivates with its crystalline minerality and maritime freshness, the Calderara Sottana is more opulent, creamier and warmer.

SP68 Rosso is perhaps Arianna Occhipinti's most direct expression of terroir, grape variety and philosophy. The Frappato and Nero d'Avola grapes come from organically farmed plots on limestone and sandy soils at an altitude of 280 to 290 metres. Fermented with natural yeasts in concrete, aged for six months in cement tanks, bottled unfiltered – no intervention, no embellishment, pure essence.

La Rosé de Manincor is produced using the traditional saignée method – by drawing off the juice from the estate's finest red wine batches. The grapes come from the Manincor, Seehof, Panholzerhof and Mazzon vineyards, situated at altitudes of between 250 and 500 metres. Rich clay soils, interspersed with limestone gravel and glacial rock deposits, define its character. The composition of the cuvée varies slightly from year to year – in 2025, it consists of 30% Cabernet Franc, 25% Merlot, 20% Pinot Nero, 13% Vernatsch, 4% Tempranillo, 4% Syrah and 4% Petit Verdot. After six to twelve hours of maceration, the must is racked off – that part which makes the red wines more concentrated and gives the rosé its colour, structure and richness of aroma. Fermentation takes place in wooden barrels, partly spontaneously with wild yeasts. The wine then matures on its fine lees for five months, during which time the aromas refine and the creamy texture that characterises La Rosé develops.

In 1881, Anton Jermann left the Austrian Burgenland, travelled through the then Slovenian Collio and finally planted his vines in Villanova di Farra in Friuli. One family, three languages, one Ponca – the characteristic flysch soil of marl and sandstone that gives this region its unmistakable character. On the label of Vinnae, a double-headed eagle bears the legacy of this history: found on an old barrel from great-grandfather Anton, a symbol of the Danube monarchy that once ruled here. Silvio Jermann created the name Vinnae in 1983 – as a tribute to the family's hundred years of winegrowing and the birth of his son Michele. From "Vinnaioli", the winegrowers, to Vinnae: the Ribolla Gialla, the variety that the family has been cultivating in this borderland since the 18th century. Today a blend of 90% Ribolla Gialla, 5% each Friulano and Riesling Renano – three indigenous varieties for three territorial souls. Fermentation in steel, six months maturation partly in large Slavonian oak barrels.

Some wines have a history. This one has a founding history. The Terlaner Cuvée (formerly Classico) was already there in 1893, when 24 winegrowers founded a cooperative in the small village of Terlan – with the conviction that more is possible together than alone. Over 130 years later, this idea remains unchanged, as does the wine. 60 per cent Pinot Bianco, 30 per cent Chardonnay, 10 per cent Sauvignon Blanc – the three great white Terlans in an assemblage that cellar master Rudi Kofler describes as compositional logic: Pinot Bianco provides freshness and acid structure, Chardonnay the ripe warmth and fullness, Sauvignon Blanc the fine aromatic play. Not a product of chance, but a wine with architecture. The grapes grow at 280 to 700 metres above sea level, on the characteristic quartz porphyry of Terlan – volcanic primary rock, which gives the wines their salty minerality and exceptional longevity.

There are wines that speak not only of soil, climate and grapes – they also speak of light and space. Vistamare is undoubtedly one of these rare creations. Named after the sweeping view of the sea that can be seen from Bolgheri on clear days, this wine is a Mediterranean promise, fulfilled with the care and elegance with which Angelo Gaja has been setting standards for decades – only this time not in Piedmont, but on the Tuscan coast. The grapes are harvested plot by plot and deliberately staggered: Vermentino, Viognier and Fiano from coastal vineyards on sandy alluvial soil, in small batches that were vinified separately and then blended to create the final cuvée.

The Winkl has been produced as a single-varietal wine since 1956 – at a time when Sauvignon Blanc was still a rarity in South Tyrol. Winery manager Rudi Kofler says that this grape variety has always felt at home around the oldest farms in the Terlano DOC area. You believe him when you have the wine in your glass. The vineyards lie at altitudes of 280 to 580 metres, facing south-south-west, on steep to very steep slopes. The soil is quartz porphyry – ancient volcanic rock, crystalline and mineral-rich, with a slightly acidic pH and an almost natural self-limiting effect on yields. It is precisely this micro-stress that produces terroir-specific polyphenols, which lend Terlan wines their characteristic salinity and tension. No other soil, no other result. Hand-harvested, gentle whole-bunch pressing, slow fermentation – followed by 7 to 8 months on the fine lees, 80% in stainless steel and 20% in large wooden casks. This subtle oaky component serves solely to enhance the texture; it gives the wine body without masking its origin.

Raccaro's philosophy on white wine knows no compromise: stainless steel, and only stainless steel. No barrique ever comes into contact with these wines – a conscious decision that allows the grape variety itself to take centre stage, rather than being overpowered by oak aromas. Nowhere is this approach more evident than in the Vigna del Rolat, the single vineyard plot over fifty years old that gives the wine its name. The vineyard is situated in the Monte Quarin area, in the municipality of Cormòns, in the heart of the Collio Goriziano, at an altitude of 90 metres, facing north-south, on Ponca – the white clay and marl soil characteristic of the region. A light Bora wind, gentle sunshine and the right distance from the sea create a unique microclimate here for this indigenous variety. Guyot training, 5,000 vines per hectare, hand-harvested in the second ten-day period of September. The grapes are gently processed in a membrane press; the must is cold-settled, followed by temperature-controlled fermentation in stainless-steel tanks. After bottling, the wine rests briefly in the bottle – wood is not used at any stage.

1989 marked the debut of the St. Michael-Eppan Winery's most famous wine. Cellar master Hans Terzer created the Sauvignon Sanct Valentin as the flagship wine of the top-tier range of the same name: selected plots on the slopes of the Mendel Mountains, strict quality guidelines, low yields and intensive manual labour. Since then, it has been regarded as one of Italy's most award-winning white wines – a title it earns anew year after year. Today, the responsibility lies with Jakob Gasser, who carries on this legacy with the same care.
