“Majé" Pigato Riviera Ligure di Ponente DOC 2025 (BIO)
The Riviera Ligure di Ponente is not an easy landscape. There is little space between the sea and the Alps – the vineyards climb up terraces of dry stone walls, the slopes are steep, the paths winding, the harvest almost exclusively by hand. It was in this solitude that Riccardo Bruna began bottling his family's Pigato in 1970 – a bold decision at the time for a grape variety that hardly anyone knew. Majé is Bruna's most accessible Pigato: from the iron-rich, argillaceous soils around Ortovero and Ranzo, 200 to 300 metres above sea level, just 20 kilometres from the coast. Gentle pressing, fermentation and ageing in steel – the result is the character of this terroir in its most direct form.

In 1881, Anton Jermann left the Austrian Burgenland, travelled through the then Slovenian Collio and finally planted his vines in Villanova di Farra in Friuli. One family, three languages, one Ponca – the characteristic flysch soil of marl and sandstone that gives this region its unmistakable character. On the label of Vinnae, a double-headed eagle bears the legacy of this history: found on an old barrel from great-grandfather Anton, a symbol of the Danube monarchy that once ruled here. Silvio Jermann created the name Vinnae in 1983 – as a tribute to the family's hundred years of winegrowing and the birth of his son Michele. From "Vinnaioli", the winegrowers, to Vinnae: the Ribolla Gialla, the variety that the family has been cultivating in this borderland since the 18th century. Today a blend of 90% Ribolla Gialla, 5% each Friulano and Riesling Renano – three indigenous varieties for three territorial souls. Fermentation in steel, six months maturation partly in large Slavonian oak barrels.

Carte Noire is a highly limited Ligurian drip oil, which is obtained using a special process. Only completely intact olives are used for this. After grinding them between granite stones, the paste is spread on mats. These are placed on top of each other, after which the olive oil obtained in this way runs downwards without pressure and is collected there. The result is a mild oil, not without certain rustic notes, with a slight sweetness and hints of spices, almonds, pine nuts, apple and vanilla. La Rosé de Manincor is produced using the classic saignée method – as a juice extraction from the estate's best red wine batches. The grapes come from the Manincor, Seehof, Panholzerhof and Mazzon vineyards between 250 and 500 metres above sea level. Strong clay soils, interspersed with limestone gravel and glacial rock deposits, characterise the wines. The composition of the cuvée changes slightly from year to year – in 2025, it consists of 30% Cabernet Franc, 25% Merlot, 20% Pinot Nero, 13% Vernatsch, 4% Tempranillo, 4% Syrah and 4% Petit Verdot. After six to twelve hours of maceration, the must is drawn off – the part that makes the red wines more concentrated and gives the rosé its colour, structure and aromatic richness. Fermentation takes place in wooden barrels, partly spontaneously with wild yeasts. The wine then matures for five months on the fine lees, where the aromas are refined and the creamy texture that characterises La Rosé develops.

In 1973, Graziano Merotto bought plot 86 in the Rive di Col San Martino – an overgrown piece of hillside, still covered with forest. He cleared it with his own hands, planted Glera and began to shape the vineyard that would one day become his most important. Over fifty years later, this wine bears his name. The Cuvée del Fondatore is made exclusively from that historic plot – 230 metres, south-facing, clay and sand, vines over 40 years old. What Graziano Merotto decides in the cellar is unusual: mash contact before pressing – a step that most producers skip – the must then goes directly into the autoclave, undergoes a second fermentation for 60 days and then matures on its own yeasts for a further 180 days. Almost nine months from must to bottle, a comparatively long time for a Prosecco Superiore. 33,000 bottles, 670 magnum bottles, 10 Jéroboams.

The name says it all – and nothing less. Titolo is Elena Fucci's great promise: one of the most concentrated, structurally rich Aglianico del Vulture wines ever, from the oldest vines of the Contrada Solagna del Titolo at the foot of Monte Vulture. The Pink Edition is the same address, the same conviction – but a different phase in the life of the vine. For the Rosato, Elena Fucci chooses the youngest vines of the Titolo vineyard: vines between six and ten years old that give more fruit than structure, whose vigour gives the wine energy instead of heaviness. The grapes are deliberately harvested a little earlier than for Titolo Rosso – first week of October, by hand, in small crates, immediately into the cellar. This is followed by cooling, then four days of cold maceration on the skins – cryomaceration – to extract colour, aroma and the volcanic mineral character without taking away tannin or weight. Gentle pressing, steel tank, two and a half months maturation, unfiltered in the bottle.

The Mazzei family has been cultivating the hills around Fonterutoli near Castellina in Chianti since 1435. Almost 600 years of experience also flow into this olive oil. The olive groves are located on barren, stony soils with southern exposure at altitudes between 300 and 490 metres. Four classic varieties characterise the olive oil: Frantoio, Moraiolo, Leccino and Pendolino. The olives are harvested by hand and processed the same day in the company's own mill, in the complete absence of oxygen, in order to optimally preserve flavours and nutrients. Extra virgin olive oil with a lively green colour and golden reflections. Artichoke, green tomato and fresh herbs on the nose. From wine to oil, from west to east: Donnafugata has been cultivating olive groves on the northern slope of Mount Etna since 2016 – where volcanic soils and extreme temperature fluctuations between day and night produce olives of particular intensity. The Nocellara Etnea is the defining variety of this region: large-fruited, juicy, with a favourable ratio of flesh to stone. For this single-variety oil, the olives are harvested by hand in the second half of November and immediately cold-pressed – gramolatura is carried out in a controlled atmosphere to prevent oxidation and preserve the flavours.

In Liguria, the question of whether Pigato and Vermentino are the same grape variety is answered with a Ligurian shoulder movement. Bruna cultivates both, appreciates both and gives each its own space. Vermentino grows in Valle Arroscia on loose, stony soil made from weathered sedimentary rock – lighter and more permeable than the Pigato plots, aromatic earlier, with a characteristic saltiness. 100% Vermentino, hand-picked, gentle pressing, fermentation in steel at a controlled temperature, short bottle ageing.

A highly interesting white natural wine that is far more than just a casual pleasure, as it offers an extremely full, well-structured flavour. Fermented with the skins using the red wine method. Strong yellow colour with golden reflections. Intense aroma of dried herbs, incense, candied lemon peel and a hint of bitter orange. Fresh citrus notes on the palate, an exciting acidity and a powerful structure lead into a very long finish, crowned by a hint of bitter almonds. Burdigai is the Ligurian dialect for the shrubs of the Mediterranean maquis – the fragrant, wild vegetation that occupies every free spot in western Liguria that is not cultivated by man. This small, isolated terrace facing west is surrounded by it – and it is here that a grape variety grows that nobody can fully explain. It is alternatively called "Franseise" because it apparently originates from the south of France. Nobody knows who planted the vines. Nobody knows how old they are. Not even the Bruna family knows their exact origin. Nevertheless, the vines have been cultivated and cared for over decades – out of that instinctive respect for old vines that good winegrowers never give up. At some point, the family council decided to press an independent rosé from them.

Balduccio is made up of around 9,000 organically cultivated olive trees, all located on the picturesque Montalbano hills between Florence and Montecatini Terme, and an oil mill that is so popular with local farmers that the most popular dates for pressing between 15 October and 15 November have been fully booked on the waiting list since the summer. This is because Balduccio not only presses its own olives, but also makes its modern technology available to other olive producers. Over the last 20 years, Balduccio has gained recognition and respect as an oil mill among local producers. It is not only the customers who are impressed by the quality. The ambition to produce top-quality oils is also increasingly inspiring other olive growers.

“Winkl” Sauvignon Bianco Alto Adige Terlano DOC 2025
The Winkl has been vinified as a single variety since 1956 – at a time when Sauvignon Blanc was still a rarity in South Tyrol. Winery manager Rudi Kofler says that this grape variety has always felt at home around the oldest farms in the Terlan DOC area. You believe him when you taste the wine. The vineyards lie at 280 to 580 metres above sea level, exposed to the south-southwest, on steep to very steep slopes. The soil is quartz porphyry – volcanic primary rock, crystalline-mineral, with a slightly acidic pH value and an almost natural self-limitation in yields. It is precisely this microstress that produces the terroir's own polyphenols, which give Terlano wines their characteristic saltiness and tension. No other soil, no other result. Hand-picked, gentle whole-cluster pressing, slow fermentation – then 7 to 8 months on the fine lees, 80 per cent in steel, 20 per cent in large wooden barrels. This silent wood component only serves the texture, it gives the wine substance without masking its origin.

In the Conca d'Oro, the golden amphitheatre of Panzano, around 400 olive trees per hectare grow alongside the famous Sangiovese vines. Giovanni Manetti, the mastermind behind the legendary Flaccianello della Pieve and president of the Chianti Classico Consortium, applies the same precision to his olive oil as he does to his wines. The cuvée of 80% Correggiolo and 20% Moraiolo is harvested by hand and gently pressed on the same day – freshness and fruitiness are thus fully preserved. Fontodi has not used herbicides or pesticides since it was founded and has been certified organic since 2008.

Pinot Nero Rosé Vigneti delle Dolomiti IGT 2025
While Lagrein traditionally dominates rosé production in South Tyrol, Franz Haas goes his own way. As a Pinot Nero specialist who has vinified and meticulously documented 592 different Pinot Nero versions in over three decades, he devotes the same attention to his rosé. The vines for this wine grow on Guyot vines at extreme altitudes of between 700 and 750 metres – significantly higher than usual for rosé. Grapes of exceptional quality ripen on dolomite weathered rock, with a high planting density and selected clones. Only 5,000 bottles are produced annually. Vinification consistently follows the white wine method: after destemming, the grapes are pressed directly, without maceration. The must ferments at a controlled temperature in stainless steel, undergoes malolactic fermentation and matures for several months before being bottled. This purist approach preserves the freshness and elegance that can be expected from Pinot Nero at altitude.
