The white enigma of Bolgheri. In a region that has achieved immortality through Cabernet Sauvignon, Cabernet Franc and Merlot, few dare to make history with white wine. But Cinzia Merli dared to – and created the white alter ego of her legendary red Paleo line in 1991 with Paleo Bianco. What began as a modest creation for local restaurants developed into one of the most enigmatic and sought-after white wines in Italy. The name – derived from "pagliaio", the Tuscan haystack – has the same poetic soul as its red brother, but its character is completely unique. 70% Chardonnay and 30% Sauvignon Blanc merge here to create a symphony of Mediterranean intensity that translates international grape varieties into Tuscan terroir. Originally, Sauvignon Blanc dominated this blend, but over the decades Cinzia has reversed the proportions – an evolution that led the Paleo Bianco from the citrusy freshness of its youth to the structured complexity that characterises it today.

Pietradonice 2020 is so easy and pleasant to drink that it is almost dangerous: the bottle is finished much quicker than you would like. In Montalcino, there are few alternatives to the local Sangiovese grape, and wines of this quality made from Cabernet Sauvignon can be counted on one hand. Rich, dark ruby red in colour, followed by ripe aromas of blackberries, plums, spices and sweet tobacco. Complex and multi-layered on the palate, with wonderfully polished tannins and already a beautiful accessibility. Juicy on the attack and on the palate, very well-developed fruit, monumentally long final. Giacomo Neri's Pietradonice is Cabernet Sauvignon at the highest level and has become a legend, as there is hardly a wine in Montalcino that can even come close to equalling it. SUPERIORE.DE

Federico Giuntini-Antinori runs the area's most traditional estate, whose family tree can be traced back to the 15th century. Rufina is the northernmost district in Chianti, where the vineyards grow around the Villa di Selvapiana and in the vineyards of San Martino a Quona, Pian de' Marroni and Cerbognole. Mainly Sangiovese with small additions of Canaiolo, Colorino and Malvasia Nera are harvested between the end of September and the beginning of October, partly by hand. Spontaneous fermentation takes place in steel tanks at 28-30°C with a 25-day maceration period. Maturation lasts 12 months in 25-litre French oak barrels and concrete vats.

White wines from Etna are always special and are in a league of their own due to the generally very old vines, the extreme altitude and the usually minimal yield per hectare. The area around the small town of Milo is the only vineyard site on Etna where an Etna Bianco can be bottled as Superiore - and for good reason: only Carricante can be planted on the steep vineyard, which consists of dozens of small terraces. When the origin of the Carricante grapes is the small parcel (Contrada) Caselle with mostly 100-year-old ungrafted bush vines (Alberelli), even connoisseurs can be excited. The soil, which was formed by centuries of volcanic activity, has numerous layers of minerals and salts, pumice, lapilli, fine and light ash. This extremely rare terroir is particularly fertile and produces late-ripening, healthy, fresh and very flavourful grapes despite the generally high thermal excesses during the summer. Less than 1,000 bottles of this exceptional wine are produced in good years, so you can imagine that we consider ourselves lucky to be able to offer a few cases of this rare wine.

A story of renaissance in the truest sense of the word: after more than twenty years of silence, Le Caggiole recently shone in new splendour. What Federico Carletti describes as an "importante lavoro di recupero" is akin to oenological archaeology – the systematic rediscovery of a 14-hectare site that had once been forgotten. At an altitude of 350 metres, on the road from Montepulciano to Gracciano, intensive research revealed the true potential of this east-facing slope: soils of marine origin, decidedly sandy, of a completely different geological character to the famous Asinone just one kilometre away. Through meticulous selection of Sangiovese rootstocks and clones, precise planting and a deep understanding of the soil and microclimate, this 100 per cent Prugnolo Gentile emerged from its decades-long hiatus.

Moscato Giallo was one of the first grape varieties chosen by Nonino for its exclusive cru line of grape brandy – and for good reason. This golden yellow variety of the Muscat family has an aromatic potential that comes to full fruition in the distillate. The grapes come from Besenello in the Lagrein Valley, the southern tip of Trentino, where the Vallagarina combines an Alpine climate with Mediterranean influences. Harvested at perfect ripeness and processed immediately, they undergo the ÙE method: the skin, pulp and juice are distilled together, slowly, in Benito's copper steam stills.

Now in its 30th vintage, it has long been an icon of modern Sicilian winemaking: Planeta’s Chardonnay combines the tradition of French grape varieties with the sun-drenched terroir of the south, producing one of Italy’s most distinctive white wines year after year. The grapes come from two different altitudes: Ulmo at 250 metres and Maroccoli at 415 metres above sea level. In the glass, it is a radiant golden yellow with slightly greenish highlights. The aroma is intense and refined: yellow tropical fruits, toasted almonds, citrus blossom, vanilla, wet stone and a hint of salty butter. Pàtrimo is no ordinary southern Italian. Vinified purely from Merlot, this exceptional wine comes from ancient, ungrafted vines that Feudi di San Gregorio once discovered at high altitudes in Irpinia – a viticultural rarity and the foundation of one of Italy's most iconic red wines. Deep dark ruby colour with a violet rim in the glass. The bouquet shows Merlot in an unusual, Mediterranean way: Black cherry, ripe plum, liquorice and rosemary, underpinned by mocha, tobacco leaf, vanilla and graphite. Structured and opulent on the palate, but never overloaded: velvety tannins, extract-rich fruit, dark spice and a hint of balsamic freshness that balances the richness. The long ageing in new French barriques lends the wine noblesse without putting it in uniform.

Gewürztraminer is named after Tramin. This is not a marketing story – this is etymology. The name of the world's most famous aromatic grape variety bears the village itself, where Hofstätter has been based since 1907. And the Kolbenhof plot is located above Tramin, in the hamlet of Söll, on an eastern slope between 360 and 420 metres above sea level – one of the most historic estates in the entire village. This is where the Bolzano quartz porphyry slab meets the limestone of the Mendelzug. A geological interface that does not exist in this form anywhere else in the South Tyrolean wine-growing region. The soils with a high clay content absorb the warmth of the morning sun – the Kolbenhof is exposed to the east, protected from the midday heat – and slowly release it again. Cool, structured, elegant. This is the opposite of a sweetish mass-produced spiced Traminer: dryness with character.

On 11 September 2001 – the day that changed the world – luca Sanjust planted 5,000 Cabernet Sauvignon vines on half a hectare of natural terraces, directly below the medieval watchtower of Galatrona. "Campo Lusso" – the luxury field – is what the local farmers have called this place at an altitude of 450 to 500 metres, surrounded by the pristine forests of the Chianti hills. A place of such beauty and favourable climate that it really was a luxury. Here, where calcareous slate mixes with marl and sandstone, Cabernet Sauvignon finds the mineral complexity that distinguishes it from the usual interpretations of this Bordeaux grape variety. Troy is no ordinary Chardonnay. Rather, it is the archetype of a Chardonnay, as Wolfgang Klotz, managing director of what is probably the most successful winegrowers' cooperative in South Tyrol, sees it. The grapes come from two selected vineyards in Söll, near Tramin. The climate there is not only Mediterranean, but the vegetation is also characterised by rather cold downdraughts at night. Both factors guarantee optimal development of the plants and fruit. The berries are hand-picked one by one, so it is clear to any wine connoisseur that this is an absolutely prestigious project for the co-operative. It is therefore not surprising that only 3,000 bottles of this grape variety are sold in selected specialist shops and top restaurants.

Troy – in the language of the South Tyrolean ancestors, it means ‘path’ – the path that Cantina Tramin has followed over decades to create one of Italy’s most exceptional Chardonnays. A path of exploration, experimentation and patience. For complex Chardonnays from high-altitude Alpine vineyards are a rarity – and that is precisely where the appeal lies; that is precisely where the challenge begins. At altitudes of 500 to 550 metres, where the Mediterranean heat of the day and cold downdrafts from the mountains clash in stark contrast, 25-year-old Chardonnay vines take root in calcareous gravel and loam over porphyry. South-east-facing slopes, Guyot and pergola training systems, just 38 hectolitres per hectare – each berry is inspected individually during the hand-harvest in October. This is followed by whole-bunch pressing: the grapes are gently pressed together with their stems and stalks, an archaic method that lends structure and depth. Both alcoholic and malolactic fermentation take place in French barriques. The wine rests on its fine lees in the wood for eleven months before being transferred to small stainless-steel tanks, where it spends a further 22 months on the lees – a total of 33 months’ ageing, before four months’ bottle ageing completes the process.

Some wines carry the history of an entire movement within them. Camartina belongs to the handful of Tuscan icons who changed everything in the early 1980s – those rebellious Super Tuscans who did not care about the narrow rules of Chianti Classico and instead pursued their own vision of greatness. 1981 was the birth year of Camartina, and with this wine Querciabella not only laid the foundations for its own success, but also wrote Italian wine history. The name itself is the programme: a fusion of "Casaocci" – the first office on the first hectare of vineyard – and "Martina", the younger daughter of Giuseppe Castiglioni, the visionary founder. What originally began as a Sangiovese-dominated cuvée has undergone a fascinating evolution over the decades. Today, Cabernet Sauvignon is the clear protagonist with seventy per cent, while Sangiovese contributes thirty per cent, the elegant Tuscan linearity that distinguishes Camartina from other Super Tuscans. The reason for this lies in the Ruffoli vineyards near Greve in Chianti, where Cabernet has found a home on the arid sandstone soils, giving it an unusual finesse – lighter, more sophisticated, more refined than elsewhere.
