The Sottimano winery has five vineyard sites, with the Pajorè site near Treiso having the poorest soils of all. These wines are therefore more elegant and ripe. The current 2018 vintage is a super-classic, explosive wine, with tremendous depth and character. Although it has a lot of breadth and texture, it remains light on its feet. Lavender, mint, liquorice and purple berry fruit are beguiling and wonderfully vibrant in the glass. There are locations that you know without ever having visited them. Asili is one of them – a gentle hollow to the south-west of the village of Barbaresco, protected from the Tanaro by the ridge, warmer during the day than the neighbouring vineyards, quieter, more concentrated. Marl and limestone alternate in layers, the vines are deeply rooted and the result is less impression than personality. The Produttori del Barbaresco have been vinifying Asili separately since 1967 – as one of the first five sites to be bottled individually by the co-operative. The process is the same as for all nine crus: maceration for 28 days at 30 degrees, followed by at least thirty months of ageing in large Slavonian oak barrels with a capacity of 25 to 50 hectolitres, and finally a further year in the bottle. No secret – but a craft that requires exceptional patience. 2021 gives the Asili a special depth. The frost in April decimated the harvest, the remaining grapes grew in concentration during a long, temperate season; the harvest only began after 8 October – almost like in the old days.

Between Montestefano and Ovello lies Montefico – has always been recognised by connoisseurs as the most precise, intellectual wine in the Produttori range. The site opens up to the south and south-east, sharing the limestone-rich subsoil with its mighty neighbour Montestefano, but is at the same time exposed to occasional northerly winds that blow through the narrow valley between Barbaresco and Neive, refreshing the mornings even in hot summers. This gives the Nebbiolo here a characteristic coolness that it wears with dignity. The Produttori del Barbaresco vinify Montefico according to the same logic as all of their other nine crus: 28 days of maceration, then thirty months or more in large Slavonian oak barrels – without haste, without compromise. The April frost of 2021 reduced the harvest to the essentials; the grapes ripened slowly and completely, and the harvest only took place after 8 October – under almost perfect conditions.

Before there was Barolo, before Barbaresco bore its name, there was Boca. In 1300, a chronicler from Novara described the wines from these hills as "famous since ancient times". Perhaps even before the Romans. Today, seven centuries later, Boca is almost forgotten – a DOC with barely more than 15 hectares, surrounded by woods that were once vineyards. The fact that we have this wine in our glass at all is thanks to a Swiss man who decided to revitalise a dying appellation at the end of the 1990s. Christoph Künzli took over Antonio Cerri's legacy and with him a philosophy that knows no compromise: large barrels, long ageing, no intervention. The Boca is made from 85% Nebbiolo – here called Spanna – and 15% Vespolina, the capricious grape variety that contributes spice and floral sweetness without masking the structure of the Nebbiolo. The grapes come from the Traversagna and Le Piane parcels, where vines between 30 and 60 years old are rooted in volcanic porphyry soils – a terroir that is unrivalled in Italy. Harvested in mid-October, thirty days on the skins, punched down daily by hand. Then aged for three to four years in large Slavonian oak vats, followed by one year of bottle ageing. No filtration. No rush.

Le Ragnaie is located on the highest vineyards in Montalcino. Riccardo Campinoti, who took over the estate in 2002 together with his American wife Jennifer, has created a vineyard here at an altitude of – 530 to 600 metres above sea level, surrounded by oak forests, olive groves and a small lake – has realised a philosophy that cannot be taken for granted in Montalcino: maximum transparency. No purchasing, no concentration through technology, no new barriques. Natural yeasts, concrete tanks, long macerations, Slavonian oak barrels. The wine tells what the vineyard says – and nothing more. The name of the estate refers to the ragnatela, the spider's web – the shape of the traditional bird-catching nets that were once spun here when Montalcino was poor and people caught birds to feed themselves. The history of Brunello has changed this. But the nets – in the figurative sense – have remained: fine, taut, precise. Brunello di Montalcino is the assemblage of all the parcels of the estate – a combination of the different exposures and altitudes of the central zone, vinified separately and only bottled together after three years.

The grapes for this exceptional wine thrive at the highest altitudes in Tuscany, at over 600 metres above sea level, where the air is already cool like the Alps and the vines are bathed in sunlight all day long. Sangiovese vines, old Tuscan clones of exceptional purity, are rooted in the same sandstone soils that have been producing great wines since 1172 – while Cabernet Sauvignon, with its international nobility, interprets the mountainous personality of this unique terroir in a new way.

South Tyrol's Chardonnay legend writes another chapter. Since 1994, the Löwengang has characterised the perception of Alpine white wine excellence like no other. The historic estate above Margreids holds a secret: Chardonnay vines, whose roots reach up to five decades deep into the South Tyrolean soil, thrive on barren limestone soils between 230 and 330 metres. The warm microclimate with its nightly drops in temperature produces grapes of concentrated minerality. The Lageder family gives this terroir free rein. Organic farming without compromise, spontaneous fermentation in hand-picked barriques from the Tronçais and Vosges forests. One third new wood lends structure, while eleven months on the lees give the wine its silky texture. A further twelve months of ageing in the cellar bring the final harmony.

Mazon is not silent. If you listen carefully, you can hear something different in every vintage – sometimes warmth, sometimes coolness, sometimes the Alpine downdraughts that sweep across the plateau in the evening and sharpen the flavours of the grapes. The 2020 is a vintage that listens and responds: fresh, transparent, with a precision in the fruit that only emerges in calm conditions. The Barthenau estate, built 150 years ago by Ludwig Barth von Barthenau, has belonged to the Foradori-Hofstätter family for decades. The single vineyard Vigna San Urbano – south Tyrol's first officially classified single-vineyard wine, declared a "Vigna" by Paolo Foradori in 1987 – lies at the heart of this estate. Clay-limestone over the Werfen formation, vines over 65 years old, a site that gives the Pinot Nero what it needs: mineral subsoil, cool nights and the time it deserves. Harvested entirely by hand, completely destemmed. Fermentation in concrete vats, ten days of skin contact with remontage. Then twelve months in barrique, eight months in large cask, eight months in bottle – always in the cellars of Barthenau, where the temperature remains constant and the wine finds its own peace.

As always, the grapes come from our own vineyards in Treiso and San Rocco Seno d'Elvio. Each parcel is harvested separately by hand, fermented in stainless steel and left on the skins for around four weeks; gentle remontages ensure a fine extraction. Malolactic fermentation takes place without haste. For ageing, the Boffa family primarily chooses large Slavonian barrels, supplemented by a smaller proportion of French oak – used as a textural tool, not as a flavour enhancer. 2021 was a top year in Piedmont. It was characterised by a long, cool ripening process with clear day-night amplitudes, the harvest was late and selective with excellent results.

A highly linear personality on the palate with flavours of sour cherry, aniseed, crushed rock and blue flowers. A Barolo from a great vintage: the 2021 wine year brought a long growing season with clear day-night amplitudes and precise harvest: fully ripe phenolics, bright acidity, impeccable health. The grapes come from family-owned plots in Serralunga d'Alba, La Morra, Grinzane Cavour, Monforte and Mosconi. Each vineyard is fermented separately in stainless steel; prolonged maceration with gentle extraction, followed by unhurried malolactic fermentation. For the ageing process, the winery primarily uses large Slavonian oak barrels (botti), discreetly supplemented by French oak.

Poggio di Sotto was founded in 1989 in Castelnuovo dell'Abate, at the south-easternmost tip of Montalcino, where the view extends over the Orcia Valley and Monte Amiata breaks the hot summers. The estate lies at an altitude of 200 to 400 metres, on Galestro and Alberese – those slate-rich, poor soils that leave the Sangiovese no choice but to grow deep roots and concentrated yields. 20 of the 48 hectares are planted with vines. More than 180 Sangiovese biotypes grow here – a genetic heritage that no clone in the world can replace. The Rosso di Montalcino comes from the same vineyards as the Brunello – selected according to the same criteria, with the same hands, at the same time. What distinguishes it is not the quality of the grapes, but the time of release. Fermentation in wooden and concrete vats, spontaneous fermentation, long maceration periods, then 24 months maturation in 30-hectolitre Slavonian oak barrels. Unfiltered.

A mistake made history. Generations of wine lovers translated "Negroamaro" as "black and bitter" – but the name tells a different story: Greek "mavros" and Latin "niger" both mean "black". Black like the berries, black like the night over the Ionian Sea, which has washed this grape variety onto Puglia's coasts since the 8th century BC. So it is no wonder that Gianfranco Fino calls his Negroamaro Jo – after the sea that washes Manduria and whose salty breeze caresses his vineyards. While the Primitivo is Fino's "loud" masterpiece, the Jo whispers. But if you listen carefully, you can hear the whole soul of Salento. The vines, forty years old, grown in classic Alberello bush training, are rooted just a few kilometres from the Ionian Sea in chalky, loamy soil. Each vine bears barely 800 grams of grapes, concentrated essence instead of southern abundance. harvest begins by hand in mid-September, when the berries are already slightly dry. Two to three weeks of maceration, then nine months of ageing in French barriques, half new and half used. No filtration, no fining – fino leaves the wine its integrity.

Contrada Feudo is located on the northern slope of Mount Etna at an altitude of around 650 metres, where the vines are rooted in volcanically mixed, sandy and stony soils. Some of the plots with Nerello Mascalese are over 70 years old and deliver concentrated but cool fruit year after year. 2021 was a classic vintage on Etna with a pronounced balance: not too hot, not too humid – ideal conditions for a precise style. The wine is aged for around 16 months in used tonneaux, which emphasises the characteristics of the vineyard and refines the tannin structure.
