ÙE – is what the grape is called in Friuli. And that is precisely the difference: while grappa is made from the pomace, Nonino distils the whole fruit for the ÙE – peel, pulp and juice together. The result combines the elegance of a brandy with the character of grappa. On 27 November 1984, the Nonino family created this new category and obtained ministerial approval. Today, distillers all over the world follow their model. For Uvabianca, they choose three aromatic white grape varieties: Moscato, Malvasia and Ribolla. Each is fermented separately and distilled in Benito's copper steam stills; the three distillates are only combined after maturation.

In memory of grandfather Antonio, the Nonino family celebrates a return to its origins with Amaro Nonino Quintessentia by creating a Riserva for the first time in 2021, which undergoes more than 24 months of natural ageing in oak barriques and small casks. Antonio Nonino, the third generation of the distiller family, used to store Amaro Carnia in small wooden barrels; steel was prohibitively expensive at the time. Through contact with the oak, the liqueur was enriched with new notes and aromas. Although there are no clear regulations for the maturation of liqueurs, in line with the Nonino philosophy, maturation takes place in the dedicated cellar, sealed and under constant supervision by the customs and monopoly office.

A wonderfully mature Salice Salentino with character and depth: "Per Lui" Salice Salentino Riserva comes from selected Negroamaro plots that are deeply rooted in the iron-rich soils around Salice. The long maturation in wood - partly barrique, partly tonneau - gives the wine density and expression without jeopardising its balance. Dark ruby red in the glass with a light garnet-red rim. The aroma is warm and complex: black cherry, plum, dried herbs, some tobacco and a hint of cedar. Structured and powerful on the palate, with well-integrated tannins, juicy fruit and a spicy finish. Pinot Nero has always been a challenge for every winemaker. It is a grape variety that places the highest demands on soil, climate and winemaking expertise. The Burgundian noble grape has been cultivated in South Tyrol since 1850, where it has become the region's most important red wine under the name Blauburgunder. Only the best and oldest vineyards in Eppan and the surrounding area are selected for the Sanct Valentin Pinot Nero, which has been part of the winery's prestige line since 1995 – sites between 400 and 550 metres on moraine debris and calcareous gravel. Minimal yields and meticulous care in the vineyard form the basis for a wine of exceptional finesse. The grapes are harvested by hand from the end of September to the beginning of October. After three days of cold maceration, fermentation begins in stainless steel tanks, followed by gentle pressing. Malolactic fermentation and subsequent maturation take place in barriques and tonneaux. After around twelve months, the wine is blended before maturing for a further six months in large wooden barrels – a combination that combines structure with Burgundian class.

There are wines that define an appellation. And there are wines that show where an appellation can go. The Gran Selezione from Lilliano belongs to the second category. When the Chianti Classico producers created the new top of the quality pyramid in 2010, there was a great deal of scepticism: is there really a need for another category above the Riserva? Lilliano answered this question with deeds rather than words. While other estates defined their Gran Selezione with an international use of wood and concentrated opulence, Lilliano remained true to its line: tradition, terroir, typicity. The Gran Selezione comes exclusively from the two best single vineyards of the Tenuta – piagge and Casina, both situated at an altitude of around 300 metres, both characterised by the calcareous Alberese soils that make Castellina in Chianti one of the most mineral terroirs in the entire appellation. Piagge is south-facing, fully exposed to the sun, and produces Sangiovese of concentration and vigour. Casina, on the other hand, exposed to the east-south-east, produces Colorino and Sangiovese of elegance and aromatic finesse. Together they produce a cuvée of 90% Sangiovese and 5% each of Colorino and Merlot – an assemblage that seeks perfection within the rules rather than innovation.

This classic Barolo, based on an exciting blend of plots from Serralunga d'Alba, Castiglione Falletto and Barolo, shows the stylistic signature of the region at its best. The soils are structurally diverse: rich in calcareous marl, loam and mineral intersperses, each parcel contributes its part to the tension of the wine. The 2020 vintage reveals a model year of balance: a cool, precise ripening process with milder temperatures early on, followed by warm but balanced days and cool nights until the harvest. After traditional vinification – including daily pumping over during the 25-day maceration period – the wine matured for around 24–30 months in tonneaux.

In the 6th century AD, Cassiodorus, minister to the Ostrogoth king Theodoric, wrote to the treasurer of Veneto requesting supplies of a special wine for the royal table: Acinaticum. He described it as "of such a royal colour that one could believe that the purple itself had its origin in it" – a wine "so dense that it would rather be eaten than drunk". This ancestor of today's Recioto was already the result of the Appassimento technique that still characterises Valpolicella today. The Tedeschi family, rooted in Valpolicella since 1630, preserves this heritage in the Fontana chapter.

Dellago comes from Pinot Bianco plots personally selected by cellar master Stephan Filippi on characteristic porphyry and limestone soils, where Archduke Johann of Austria established Pinot Blanc in South Tyrol as early as 1850. The special terroir with its distinctive temperature fluctuations between warm days and cool nights gives the hand-picked grapes the mineral precision that characterises Dellago. After careful manual harvesting, the grapes are gently pressed and vinified in two parts: The majority matures traditionally in stainless steel tanks on the fine lees, while a small but decisive proportion undergoes alcoholic fermentation and malolactic fermentation in French barriques – a subtle use of wood gives the wine additional structure and complexity without overpowering its Burgundian elegance.

Essence Noir is the prestigious top of the Essence line – an Extra Brut made from 100% Pinot Nero, carefully vinified in white using the classic method with perfect dosage. Around 48 months on the lees give it depth, texture and savoury sophistication. On the nose, aromas of yellow citrus fruit, grapefruit, brioche, toasted almond and a hint of dried herbs. On the palate, it is complex and focussed – an ultra-fine perlage carries a dense, yet linear texture. The acidity is precise, the body powerful, yet compact and with terrificinterplay of fruit, flavour and minerality. Serralunga d'Alba stands for powerful Barolo with depth, structure and astonishing ageing potential. Giovanni Rosso draws the best from this origin: south-east to south-west facing vines on calcareous, clayey-maceous soils at high altitudes (300-350 metres), combined with rigorous natural cultivation. The 2020 vintage recorded optimal ripeness, favoured by warm days, cool nights and a flawless autumn. After careful manual harvesting, each parcel underwent separate 25-day maceration, after which the wine matured for between 24 and 60 months in large oak barrels.
