Agretto di Montevertine is made from Sangiovese grapes from the vineyards of Montevertine. It is a traditional wine vinegar that matures in small batches at the Acetaia Castelli in Rio Saliceto, around 20 kilometres north-west of Modena. It has a typical red wine vinegar profile, sweet and sour notes and the acidity is always present despite the balsamic character. SUPERIORE.DE

The organic green olives are harvested by hand and then processed in the company's own oil mill within 12 hours. An olive oil full of character with intense coratina fruit, bitterness and spiciness, rounded off with notes of fresh grass and tomato. Olio CampoCorto is the result of years of work and study. It is mainly produced from olives of the Frantoio variety, the most typical and characteristic variety of this region. The olive groves are located among the woods of Badia a Coltibuono in an unspoilt environment. Golden yellow colour with green reflections. It has an intense herbaceous aroma with notes of artichoke and aromatic herbs. The flavour is full of character, intense and lively with a spicy aftertaste. SUPERIORE.DE

A small part of the olive groves around Podere Albereto is reserved exclusively for the production of this very special oil, which is only bottled in very limited quantities (5,000 bottles). The colour of Albereto extra virgin olive oil is an intense emerald green. It has an intense, herbaceous fragrance with notes of asparagus and aromatic herbs such as tarragon and sage. The production of high-quality olive oils at Pandolfa dates back to the 16th century. The olives all come from the company's own olive groves around Predappio. Intense, bright yellow-green colour. The aroma is reminiscent of freshly picked olives with an intense flavour of wild herbs. The olives for this oil are picked exclusively by hand. Some of them are only picked in December. Immediately after harvesting, the olives are ground and cold-pressed to preserve the characteristics of the fruit in the oil. Before bottling, the oil is filtered through cotton wool to separate it from the fruit water deposit, which would affect the original quality over time.

The higher degree of ripeness of the olives achieved by the late harvest guarantees the production of an olive oil with a distinctly soft and delicate character. SUPERIORE.DE

The fruit for this oil is harvested by hand in the first decade of November. Immediately after harvesting, the oil is cold-pressed to preserve the fresh flavours of the not fully ripened fruit. Before bottling, the oil is filtered through cotton wool to separate it from the fruit water deposit, which would affect the original quality over time.

The Fanti family owns over 8,500 olive trees of typical Tuscan varieties, all planted in the hilly areas of the estate. The extra virgin olive oil is produced in the estate's traditional oil mill, where the olives are processed at room temperature to preserve their natural flavours. The olives from the Uccelliera farm grow near Castelnuovo dell'Abate, are carefully hand-picked and immediately cold-pressed to preserve the aroma and fruity flavour. Just two hours after harvesting, the olives are gently pressed and processed in the company's own oil mill. Very delicate oil from Tuscany.
