Il Borgo del Balsamico has been producing the genuine Aceto Balsamico Tradizionale di Reggio Emilia DOP and very good condimenti in the Acetaia in Albinea for 40 years. Cristina Crotti is the mistress of ancient vinegar barrels in the attic, which her father bought from the noble family of the province of Modena and Reggio Emilia. The barrels are made from six different types of wood: Chestnut, oak, cherry, acacia, juniper and ash.

The younger Aceto Balsamico di Modena IGP are also of outstanding quality. The vinegars are aged for 3 (yellow label), 4 (orange label) and 5 years (red label) in oak barrels. The Aceto Balsamico di Modena are an interesting addition to conventional condiments in the kitchen. As with olive oils, it is worth having different flavour intensities to hand for cooking and seasoning.

Aged for five years in small oak barrels, this Aceto Balsamico di Modena is wonderfully viscous with a rich spectrum of flavours ranging from grape to caramel. Noble, opulent and powerful, it harmonises perfectly with mature cheese, as an accompaniment to a hearty antipasti platter or with ripe fruit and, of course, desserts. SUPERIORE.DE
