There are moments in the history of Italian viticulture that shine like beacons through time. 1962 was one such moment when Fabrizio Bianchi, driven by a vision and surrounded by the scepticism of his contemporaries, made a decision that would change Chianti Classico forever. He dared to vinify the grapes from a single vineyard separately: Il Poggio. What began as an experiment became a revolution – the first cru of Chianti Classico was born. Il Poggio – "the hill" – lies in the heart of Monsanto like a natural amphitheatre, surrounded by wild cypresses, juniper bushes and strawberry trees. Here, on the characteristic Galestro soils between 280 and 320 metres above sea level, the Sangiovese vines have driven their roots deep into the slate-like rock over the decades. These soils – a gift of geological history – give the wine the mineral depth and structural complexity that have made Il Poggio a living legend.

Here is another outstanding 2019 Brunello from a winery that is still considered an insider tip given its small size and limited annual production. Medium, bright ruby red colour. Exotic aromas of minerals and citrus fruits, reminiscent of red cherries, blood oranges and Asian spices, with a floral nuance that gains strength with air. The palate is supple and expansive, with sweet flavours of red cherries and dark plums carried by a powerful acidity. Densely packed, at once fleshy and broad, but also lively and precise. On the strikingly long finish, it shows excellent power and cut, characterised by youthful, dusty tannins and a hint of candied violets. The world-famous Caiarossa is an extremely exciting blend of the Syrah, Cabernet Franc, Merlot, Cabernet Sauvignon, Petit Verdot, Sangiovese and Grenache varieties, with the rich, dark fruit flavours of the Cabernet grapes taking centre stage. On the nose, a beautiful first wave of dark fruits that never appear too ripe, which greatly benefits the elegance of the wine. The palate is very balanced and focussed with blackberries, cassis and slight hints of salty or rusty minerals. Andrius. Here, where in 1893 courageous winegrowers laid the first foundation stone of South Tyrolean co-operative history, a Sauvignon Blanc of rare strength and elegance is still produced today. The vines thrive on the calcareous slopes between 260 and 380 metres, where dolomite rock and Andrian porphyry characterise the terroir like two old friends who complement each other. It is the Mediterranean climate that shows its cooler side up here. Temperatures drop at night, allowing the vines to breathe. During the day, the South Tyrolean sun warms the stony soils – an interplay that gives the Sauvignon Bianco that special tension that characterises great wines. In the hands of cellar master Rudi Kofler, selected grapes from the oldest vineyards are turned into a wine of remarkable depth. Six months on the fine lees. Ravera is considered one of the great Grand Cru sites of Barolo – majestically situated on a south-west facing high plateau of Novello. G.D. Vajra's plots here lie at an altitude of 320 to 340 metres, where the vines are deeply rooted in the calcareous and clayey marl soils of the Sant'Agata formation. This geological mixture gives the wine its characteristic depth, firm structure and mineral signature. Ravera is famous for Barolo with cool precision, rich fruit and enormous ageing potential. The 2021 vintage offered picture-perfect conditions: a harmonious growing season with no periods of extreme heat, a long, sunny autumn with cool nights and a late, perfectly ripe harvest at the end of October. Fermentation took place gently with an extended maceration period to maximise colour, structure and aromatic finesse. The organic ageing for 30+ months in large Slavonian barrels was deliberately restrained in order to preserve the powerful but nuanced personality of the terroir unadulterated.

"Fragrante, definite e verticale." This is how some Masters of Wine describe the 2021 Brunello vintage – fragrant, precise, vertical. Rarely does an official assessment so accurately capture the essence of a wine. Yet 2021 was not an easy year. An unusually late frost in April decimated the quantities, delayed growth and – and quietly did the wine some good. No extreme heatwaves afterwards. No drought stress to panic the vines. Instead: an even summer, dry ripening, a relaxed harvest from the end of September. The soils on the eastern slopes of Montalcino, a mixture of red clay, limestone and slate, came into their own in 2021. San Filippo's organic certification pays off particularly well in years like these: living soils that retain water and deliver precision.

Giovanni Manetti, president of the Consorzio Chianti Classico, vinifies exclusively hand-picked grapes in stainless steel tanks with indigenous yeasts on the chalky Galestro soils of his 170-hectare Tenuta. After three weeks of maceration, the wine matures for 18 months in French oak barrels of various sizes.

Montalcino is a hill. To be more precise: a single large cone of limestone, marl, slate and sand that rises above the Val d'Orcia – exposed to the north, south-east and south-west, characterised by three completely different climates. Most of the producers in the appellation have access to one of these slopes. Val di Suga has all three. Vigna del Lago in the north-west, Poggio al Granchio in the south-east, Vigna Spuntali in the south-west. Three soils, three microclimates, three characters – and a single winery that unites them all under one roof. The basic Brunello is the result of this unique position: a cuvée from all three sites that does not aim for simplification, but for synthesis. Fermentation takes eight to twelve days at a controlled temperature, with maceration lasting a further two to three weeks. Maturation in traditional 50-hectolitre Slavonian oak barrels for 24 months, followed by six months in concrete and then the bottle. The 2021 vintage brought a late frost in April – the harvest was reduced, the quality concentrated. A dry summer without extreme heat, a long, even autumn. The Consorzio and a jury of eight Masters of Wine agreed on three words to characterise the vintage: fragrant, precise, vertical.

Nine hundred (Novecento) years later, in 1990, this wine was created as a reminiscence of the incredible journey through the centuries. The grapes thrive between 300 and 420 metres above sea level on stony soils of marl, limestone and galestro. The vines, which are on average 15 years old and cultivated organically as in the early days of this domain, undergo a 14-day spontaneous fermentation with wild yeasts in cement vats before maturing for 18 months in large, unroasted French Allier oak barrels.

These five vineyards (up to 80 years old) are located in different areas of Tuscany: Lamole and Montefili in the heart of Chianti Classico at 600 and 400 metres above sea level, Vincigliata near Florence at 280 metres above sea level, Londa north of Florence towards the Rufina Valley and Siena, in the south of Tuscany, at 250 metres above sea level.

Franco and Roberto Massolino dreamed of this moment for years. A Barbaresco – was missing from their portfolio. But it had to be the right vineyard, the perfect location. Then, at the end of 2018, they struck lucky: Bernardino Gastaldi, an ambitious winemaker from Neive with plots in three of the best MGAs in Barbaresco, offered them a collaboration. Starderi, Serraboella, Albesani – three names that are making history. The first harvest in 2019 and it was clear from the outset that Albesani would be vinified separately. What this hill told was too extraordinary. Two hectares at 230 metres, south-west facing, calcareous-marly clay soils with the characteristic Marna di Sant'Agata Fossili, the fossil rock formation that also forms the foundation of Barolo. Fifty-year-old vines with deep roots. Albesani is recognised by connoisseurs as one of the most beautiful vineyards in Italy – and anyone who has tasted the wine will understand why. Even during fermentation, the brothers realised that this is an exceptional wine. The perfect combination of exposure, altitude and age of the vines produces grapes of a purity and elegance that astonishes even experienced Oenologist.
