Mazzei's top wine Siepi is not only an outstanding Tuscan wine every year, but also a 6-hectare vineyard in the middle of dense oak forests with an ideal altitude and a unique climate. The sunshine is optimal throughout the day and a constant breeze from the west prevents excessive heat and creates a mild, Mediterranean climate. The oak forests also provide an ideal protective barrier against extreme weather conditions. Rocky soils of marl, limestone and clay from the Pliocene period ensure a special balance of elements in this geological complex.

In 1988, the Boscarelli family acquired the Vigna del Nocio – four hectares in the eastern part of the estate, named after the walnut trees that once lined its edges. A small vineyard, but one with an intrinsic complexity that transcends any simple description: The soils are of alluvial origin, but of completely different textures depending on the location – sandy zones alternate with loamy ones in close succession. The same grape variety, the same plot of land, and yet several characters that only reveal themselves to the attentive eye. The family has not simplified this complexity – they have mapped it.

There is one wine at Quintarelli that is regarded as the benchmark – not only for the estate itself, but for the entire region. Anyone who wants to understand what these Veronese hills and this legendary producer are truly capable of must taste this Valpolicella. Not an Amarone, not a Recioto, but the supposedly 'simplest' wine in the range – yet it is precisely this that most clearly demonstrates what the Quintarelli family makes of centuries-old tradition and an unwavering spirit of innovation. The technique is the real revolution: half of the Corvina, Corvinone and Rondinella grapes are pressed immediately after harvest, whilst the other half are air-dried for two months – a form of partial appassimento applied to a wine that is officially known simply as Valpolicella. The blended must is then aged for seven years in large Slavonian oak barrels, far exceeding the appellation's average, where most Valpolicella wines are bottled after just a few months.

The St. Michael-Eppan winery began crowning selected varietal wines for the first time with the 2015 vintage. Only just over 3,000 bottles of these top selections are sold worldwide each year. In 2019, the choice again fell on a single-varietal Sauvignon Bianco from the best grapes from selected micro-locations. Gentle pressing with 3 days of skin contact, followed by 12 months of fermentation in tonneau and a further 15 months on the fine lees in stainless steel tanks give it a unique depth and finesse. After a further 9 months in the bottle, it is released for sale.

Barolo Dagromis bears its name in memory of the family that once owned and cultivated these vineyards in the 19th century – a symbol of the combination of history and modern vision that is at home at Gaja. Today, this wine is a stylistic bridge: Nebbiolo grapes from the legendary La Morra and Serralunga vineyards are vinified separately, matured first for a year in barriques and then for a further year in large oak barrels – a deliberate blend of finesse and substance.

The grapes come from the historic single vineyard Ornato in Serralunga d'Alba: steep, windy slopes on calcareous marl with ferruginous inclusions, at an altitude of around 350-400 metres, predominantly south/south-west facing. Each parcel is harvested separately and fermented in stainless steel; long maceration with gentle extraction. Maturation takes place classically in large Slavonian barrels, with a finely dosed proportion of French oak for texture and lustre. The typically long autumn of 2019 brought fully ripe, aromatically dense grapes with a cool acidity.

Gaja's Barolo Dagromis still flies under everyone's radar ... because Barolo Dagromis 2020 shows how tradition steeped in history and modern precision can be perfectly balanced. It bears its name in homage to the Gromis family, former owners of these historic parcels near La Morra – today married to the vineyards of Serralunga, whose cuvée is skilfully crafted. Each parcel delivers its Nebbiolo separately for fermentation, undergoes long maceration periods and matures for twelve months in barriques, followed by a further twelve months in large wooden barrels and bottle ageing.

Names carry stories. Dagromis tells of an encounter that took place in 1995, when Angelo Gaja acquired a ten-hectare estate in La Morra – from the hands of the Gromis family, who had lived there since the 19th century. "Da Gromis" means "by the Gromis" in Italian, a linguistic nod to the people who shaped these slopes for generations. It is a nod to the past and at the same time a statement of the present: Gaja in Barolo, not just in Barbaresco. The vineyards are located in two of Barolo's most important terroirs: La Morra and Serralunga d'Alba. The grapes from La Morra come from the legendary Cerequio cru – the south-east exposed part from which the great Conteisa also comes – and from the Silio vineyard. Grapes from Serralunga, directly adjacent to the Sperss vineyard, give the wine the strength and structure for which this municipality is famous. The vinification follows Gaja's philosophy of separate processing: each vineyard is fermented separately, macerated and matured for twelve months in small French barriques. Only then are the wines blended and matured for a further eighteen months in large tonneau barrels. A total of thirty months before the wine is bottled – time that you can taste.

In the 1930s, Konrad Oberhofer was one of the first in South Tyrol to begin vinifying wine separately from a single, precisely defined parcel. No cuvée, no blending of different vineyards – just this one patch of earth, its vines, its character. An idea that hardly anyone understood at the time and which Paolo Foradori, Oberhofer's son-in-law, later elevated to a philosophy for the entire Hofstätter estate decades later. Pirchschrait – a historic part of the Kolbenhof farm in Söll – has been his monument ever since. What distinguishes the Pirchschrait from all other plots of the Kolbenhof is its tranquillity. Exposed to the east-west to north-east, with a slope angle of 35 per cent, it receives the least amount of sunlight of all the Kolbenhof terraces. While the other sites soak up the Mediterranean light, this one retains a cool precision – and that rare combination of long, even ripening and exceptional ageing potential that only shady sites can offer. The soil is a geological sediment from three eras: glacial dolomite, volcanic porphyry and sandstone all in one.

"The wine must be nurtured until it is ready to face the world on its own." Mateja Gravner, Josko's daughter, describes the estate's philosophy more precisely than any technical specification ever could: every wine is a child that is raised until it can embody its own soul and character. For his 2016 Ribolla Gialla, this meant hand harvesting in the Dedno vineyard and Alberello training. After gentle pressing, the grapes are transferred to deeply buried Georgian qvevris, sealed with solid granite lids. There, in the darkness of the earth, spontaneous fermentation begins – without temperature control, without selected yeasts, on the skins for seven months. After the amphora comes six years in large Slavonian botti, followed by half a year of bottle ageing. No fining, no filtration.

Cepparello – named after the small stream that rises at the highest point of the Isole e Olena vineyards. This name has borne the revolutionary vision of Paolo De Marchi since 1980, when 100 per cent Sangiovese was still a taboo in Chianti Classico. With this wine, the Piedmontese visionary not only created one of the first Supertuscans, but also probably the most authentic portrait of the Sangiovese grape – pure, uncompromising, unadulterated. The Sangiovese vines grow on the characteristic Galestro soils from the estate's best sites, exposed to the south-west at an altitude of 400 to 480 metres. These slatey clay soils give the wine its unmistakable minerality and elegance. The 2020 embodies De Marchi's signature style in its purest form. A mild, dry winter and a drop in temperature in March, which required extreme vigilance against frost damage, was followed by a classic Tuscan summer. Dry and mild until the end of August, then scattered rainfall before the weather calmed down in September – ideal conditions for grapes of exceptional quality and quantity.

1981 – a year that would change the Italian wine world forever. Giovanni Manetti was barely twenty when, together with the legendary OenologistFranco Bernabei, he created a wine that broke all the rules. "Flaccianello and I grew up together," says Manetti today about that first vintage, which was supposed to be a one-off – until 1982 came along. The revolution was both simple and radical: 100 per cent Sangiovese. At a time when the Chianti Classico regulations stipulated that at least ten per cent white grapes had to be added, this was an affront to tradition. What began as a rebellious table wine became an icon of the Supertuscan movement and inspired a whole generation of winegrowers to throw off the shackles of rigid regulations. The name itself tells a story: Flaccianello della Pieve is named after the small Romanesque Pieve di San Leolino, which towers majestically over Panzano. Until 2000, the grapes came from a single vineyard of the same name. Then Manetti took the next evolutionary step: a blend from the best parcels of the entire estate, mainly three vineyards near the town, on the dense, stony soils of the Conca d'Oro.

Syrah Suisassi is rich and expressive. The bouquet convinces with aromas of sage, rosemary, wild flowers, liquorice, violets and plums. On the palate very full and round with memories of berries, chocolate and nuts. Elegant and intellectual. SUPERIORE.DE

Ornato, Serralunga d'Alba, that is: stony limestone marl, warm vats with good aeration, the south/south-west exposure ensures deep ripeness, the altitude ensures balance. Hand-picked, separate vinification in stainless steel, extended maceration time. Maturation in large barrels is supplemented by a small proportion of barriques/tonneaux – more for texture than flavour. 2020 offered a stable summer and clear nights for the harvest: ripe harvest, supple phenolics, brilliant fruit.

Just 500 bottles come onto the market, if Luca even decides to present this single-varietal Cabernet Franc to the public. And if he does, this red is certainly one of the world's best Cabernet Francs. Deep dark, almost black ruby. In the bouquet a large aroma spectrum of black and red berries, intense and beguiling, rounded off by a fine spicy note with white pepper and some sandalwood. On the palate, very fine tannin, complex red-fruity notes and again this terroir-influenced mineral-salty note in the seemingly endless finish. Giovanni Manetti was just twenty when, in 1981, he was due to press the first vintage together with Oenologist Franco Bernabei: a pure Sangiovese, at a time when the rules governing Chianti Classico still stipulated a proportion of white wine. What began as an act of rebellion became a legend. Flaccianello della Pieve, one of the first single-varietal Super Tuscans, proved that Sangiovese can achieve world-class status without any blending. The name derives from the original vineyard, but since 2001 Flaccianello has been a selection of the finest grapes from three plots on the estate, primarily those at the highest altitudes of 480 metres, where Pietraforte soils predominate. This conglomerate of sandstone varieties lends the wine the freshness and structure that set it apart from the rest.

1908 is the year in which the Gries winery was founded. The history of the winery is closely linked to three rivers, but it is the Talvera that has shaped it the most. Bolzano is not called the city of Talvera for nothing. The old floodplains have given the winegrowers very special soils. These alluvial soils on porphyry provide the ideal basis for Lagrein in particular, but also for Cabernet and Merlot. With its good water permeability and mineral deposits, Bolzano's volcanic porphyry has always been one of the keys to wines full of character.

This coveted Riserva is only vinified in top vintages and comes from the highest vineyards of the winery. On the nose, the essence of dark cherries, blackberries, flowers, violets, liquorice and spices, which are then carried away on the palate by firm, structured tannins. The Brunello Riserva 2016 impresses with its remarkable fruit and a big, explosive finish. It presents itself fresh and surprisingly lively, yet very focused and balanced. Luciano Sandrone on his intention to rename his world-famous Barolo Cannubi Boschis "Aleste" with the 2013 vintage. This Barolo is a masterpiece from Luciano Sandrone in every respect. Not only a historic product but also the only cru of the house from the renowned Cannubi area in Barolo. Rich ruby colour, balsamic bouquet, ripe and sweet. Ornato 2021 comes from the single vineyard of the same name in Serralunga d'Alba, exposed to the south – a cru with a distinctive altitude and calcareous soils that captures the depth and power of the Barolo region like no other. The 2021 vintage was characterised by a cool spring, a stable summer without extreme heat and a long, dry autumn. These conditions allowed the Nebbiolo to ripen slowly and evenly, giving the grapes aromatic complexity with full phenolic ripeness. The wine was fermented traditionally after a long maceration period and then matured for around 30 months in French oak – partly in tonneau and partly in barrique.

The Piero selection was created as a tribute to the work of Pierluigi Talenti, who has selected and worked the Sangiovese with passion over the years. A 1.95 hectare vineyard near the centre of the winery, with unique pedoclimatic characteristics, is distinguished from all other vineyards by its consistent quality. The gently sloping terrain is surrounded by woods rich in marl, with a south-eastern exposure at an altitude of 410 metres above sea level, where Pierluigi followed and cultivated his personal clonal selection in the 1970s. It is a wine with intense and persistent character, ruby colour, fine and elegant tannins. After ageing in tonneaux for at least 24 months, it is bottled until it is released to the market.
