Mathias is one of the top wines. Together with the Pinot Nero Riserva Matan and the Cortazo red wine cuvée, it forms the top tier of Pfitscher’s quality pyramid. A white wine that offers the most complete picture of the vineyard of the same name and the family’s philosophy. The soils on which it grows are unique: grey porphyry and sandy-limestone rock dust. Two geological worlds in a single vineyard: the volcanic depth of the porphyry and the mineral-driven precision of the Alpine limestone. As James Suckling once put it, this captures the essence: "Wild herbs, gentian root, flint, white currant – with a literally breathtaking mineral freshness on final." A Sauvignon that doesn’t scream of fruit, but speaks of its terroir.
The winemaking process is remarkably complex for a white wine: around six hours of maceration before pressing, followed by fermentation in equal parts in small oak barrels and stainless steel tanks at a controlled temperature of 18°C. Eighteen months’ ageing on the fine lees in wood and steel, followed by a further few months in the bottle. The wood adds texture and structure – without overpowering the Sauvignon character. The minerality provides the immense backbone. The Pfitscher family has tasted vintages of the Mathias dating back to 2002, which still impress critics today. This is not mere flattery; it is the long-term strength of this vineyard.
