Standing on one's own two feet is regarded as a sign of maturity. The bush vines at the Caselle vineyard have been doing just that for a long human lifetime – quite literally: they are ungrafted, never having been grafted, as was common practice everywhere before the phylloxera plague and is now a rarity. Here, 100% Carricante is grown at 950 metres near Milo on the eastern slope of Mount Etna. The soil is fertile, with layers of minerals and salts, pumice, lapilli and fine, light ash. The estate attributes the wine's high acidity to these soils, and its salinity to the proximity of the Ionian Sea. It covers just half a hectare, yielding around 650 bottles a year.

This variety ripens late, with the harvest taking place in October; the grapes are selected by hand and the wine is matured in stainless steel and French oak. The wine is then left to age for a long time in the bottle. According to the estate, its high acidity gives it great Storage potential.

Pale yellow with a greenish rim. The nose opens with herbs, lemon thyme and citrus zest, along with aniseed and wild fennel; later, wax, bread crust and candied lemon emerge, with vanilla only upon closer inspection. On the palate, it is complex, straightforward and clear; the acidity provides structure, the saltiness lingers, accompanied by a hint of iodine. Anyone who thinks white wine from Etna is just for a summer's day should let this one rest for a while first, then treat it to a decanter and a Burgundy glass. SUPERIORE.DE
