Coste & Fossati is not only the estate's finest Dolcetto, but also a carefully nurtured project: Dolcetto clones selected by Aldo Vajra from old vines between 1979 and 1985 and grafted onto rootstock in the Coste di Vergne and Fossati vineyards. The vines – with their characteristic red foliage – were re-grafted as a distinct genetic line, forming a cornerstone of the estate's enriching diversity. The grapes were carefully harvested once the stems had changed colour, typically in mid-September, followed by approximately 25 days of maceration.

In the glass, the wine impresses with its deep, brilliant violet colour. The nose reveals an intense bouquet of red berries and sour cherry, accompanied by liquorice and fresh menthol notes – an elegant, lively aroma that immediately captivates. On the palate, Coste & Fossati displays a depth and precision that is remarkable for a Dolcetto: silky tannins that combine mineral freshness with subtle spicy nuances. Aged in stainless steel for around eight months, this preserves the pure fruit whilst the wine also displays sufficient structure to offer ageing potential. The long, clean finish reveals the same fruit, complemented by a pronounced yet elegant freshness with a subtle mineral undertone. An exceptional Dolcetto of remarkable class and, at the same time, serenity. SUPERIORE.DE
