Alma – the soul in its purest form. Whilst the Extra Brut, with its minimal dosage, still builds a gentle bridge, the Non Dosato takes the most uncompromising approach: zero grams of residual sugar, zero compromises. Since 2024, Bellavista has been writing a new chapter with the Alma Assemblage collection, and the number 3 marks the 2023 vintage – interpreted with absolute purism. Francesca Moretti and Richard Geoffroy, who served as Chef de Cave at Dom Pérignon for twenty-eight years, created this trilogy with a clear vision: Franciacorta not as an imitation of Champagne, but as a world-class terroir in its own right.

The Non Dosato is the most uncompromising response – a wine that hides nothing, embellishes nothing, but reveals the raw truth of the terroir. Alma Non Dosato Assemblage 3 is based on 70 per cent Chardonnay and 30 per cent Pinot Nero from thirty selected vineyards, complemented by reserve wines from previous vintages. After at least thirty months’ ageing on the lees, disgorging takes place without any dosage – the wine is topped up with itself.

In the glass, it is a brilliant straw-yellow colour with a creamy effervescence. The nose reveals white flowers, citrus, minerality and subtle yeast notes. On the palate, it is crystal-clear and taut, with vibrant freshness and final salty, mineral final. Pure energy, the most straightforward elegance without any pretence or hidden agenda.
