For decades, the Porer vineyard on the Margreider Schuttkegel has been the source of Lageder's most refined interpretation of Pinot Grigio. Grapes of exceptional complexity ripen between 230 and 240 metres, where stony, sandy and highly calcareous soil with dramatic day-night temperature fluctuations creates a unique microclimate. The organic cultivation of this single vineyard follows strict principles of sustainability. The secret of Porer lies in its three-part vinification: one third is pressed immediately, another part remains on the skins for 15 hours, while the last component macerates with stems and skins for up to eight months. This orchestrated composition of different textures gives the wine its characteristic tension. Six months of ageing on the fine lees in stainless steel round off the complex flavour profile.

The ColBajé vineyard above Cividale produces wines with a clear structure and delicate tension – including this expressive Pinot Grigio. Schiopetto has been producing Pinot Grigio since 1968 – long before it became (unfortunately, in some other regions) Italy's best-selling mass-market white wine – and the Rotolo family has never forgotten what it truly excels at: depth, juiciness and mineral vigour. On the Ponca hills of Capriva del Friuli, in marly soils of Eocene origin, the variety finds a terroir that leaves no room for mediocrity. Gentle pressing, brief sulphur-free decanting, fermentation in stainless steel at a controlled temperature – followed by eight months' ageing on the lees. No oak, no detours, everything focused on the Ponca.

A Pinot Grigio with ambition and from one of the estate's best vineyards. The wine comes from the eponymous Zuc di Volpe hill in Togliano, whose clay and limestone soils, combined with consistent manual harvesting and low yields, provide the basis for this cru-worthy Pinot Grigio. Matured in stainless steel with extended maturation on the fine lees, the wine is light golden yellow in colour with a slightly coppery sheen in the glass – a subtle hint of the natural pigmentation of the grape variety. Yellow pear, some ripe quince, white almonds and a hint of hay flower on the nose. Surprisingly structured on the palate, with mineral tension, good depth and a fine salty vein. A delicate phenolic note on the finish gives the wine grip and length.

In the local dialect, ‘Giatl’ means ‘small plot of land’ – and this name is steeped in history. The ten-hectare single vineyard in the valley floor of Kurtinig a.d.W. is one of the most exceptional terroirs for Pinot Grigio in the South Tyrolean Unterland. On sandy alluvial soils with calcareous gravel, vines grafted onto low-vigor rootstocks thrive here under ideal conditions, trained using the Guyot system. The unique microclimate of this sun-drenched spot is shaped by two contrasting wind systems: the warm ‘Ora’ blows northwards from Lake Garda in the afternoons, tempering the daytime heat, whilst at night cool downdrafts from the Dolomites provide relief. These extreme temperature fluctuations allow for long, slow ripening phases whilst perfectly preserving acidity and concentrating the aromas. Following hand-harvesting and destemming, a short cold maceration takes place to emphasise the fruitiness. The gently pressed grapes are clarified by natural sedimentation before alcoholic fermentation takes place in small and large French oak barrels (12 months) and in stainless steel tanks (6 months). Yeast ageing lends the wine valuable complexity and depth, whilst further months of bottle ageing round off its profile.

The vines for the St. Valentin Pinot Grigio grow on selected, higher-altitude plots around Eppan, where calcareous gravel soils, alpine altitude and long hours of sunshine create an exceptional interplay. Pinot Grigio can be many things. With Dessimis, it is one thing above all: itself. Gianfranco Gallo realised early on that this grape variety only shows its full profile if it is given the time on the skins that it deserves and the result is not pressed immediately – and the result is not pressed immediately. Dessimis comes from two separate parcels on nine hectares in Mariano del Friuli, on shallow, gravel-rich soils with iron and aluminium oxide inclusions, which give the soil its characteristic redness and the wine its mineral structure. Prolonged maceration on the skins – not an orange wine, but a deliberate extraction of colour, aroma and texture. Then nine months on the lees in steel, no wood, no intervention. Further months in the bottle.

Innovation often means leaving the beaten track and exploring entirely new paths. Fuoripista – meaning "off-piste" – is Elisabetta Foradori's most radical response to conventional notions of Pinot Grigio. What began in 2016 as an experiment with the biodynamic winemaker Marco Devigili has evolved into a redefinition of what a white wine can be. Just two hectares on the Campo Rotaliano provide the grapes for this extraordinary project. Pergola-trained Pinot Grigio vines thrive on the typical alluvial soils of gravel and sand, and their fruit takes an unusual path. After being hand-harvested, the destemmed berries are transferred directly into Spanish tinajas – those egg-shaped clay amphorae that Elisabetta favours for her revolutionary winemaking process. Here, the impossible happens: for eight months, the grapes remain in contact with their skins, a process that gives the wine its amber-gold colour and structural complexity.
