More than a hundred years ago, a white bull named Desiderio lived on the Capezzine farm in Avignonesi. He was the largest bull in Tuscany at the time – and what's more, he is one of the recognised ancestors of the Chianina breed, the noble breed of cattle from which the Bistecca Fiorentina is cut. Anyone enjoying a Florentine-style T-bone steak today is likely to have a little bit of Desiderio's DNA on their plate. It was therefore a natural choice for Avignonesi to name its most powerful red wine after him. The label shows him – and changes with every vintage. The sky, lighting mood and details in the illustration tell of the climate of the year: whether hot or cool, dry or balanced. A quiet commentary on the vintage in pictorial form.

Masari only brings its famous Merlot to the cellar and bottle in the best years. Dark, deep garnet red in colour. Aromas of black, ripe fruit with spices, balsamic herbs, aniseed and liquorice on the nose. Well and firmly structured on the palate with silky tannins and a wonderful mouthfeel. The Rosso della Centa is a 100% Merlot that comes from a small vineyard on the south-western slopes of the hills of San Giorgio in Brazzano. Red grapes are grown on this one-hectare plot of land, most of them Merlot. The soil of this marvellous field is typical of the Collio, as it was formed by the fragmentation of the alternating layers of marl and sandstone that form the foundation of the hills. The slopes are very steep, which is why the field was terraced and stabilised with dry stone walls.

A wine that made history. When Francesco Ricasoli presented Casalferro for the first time in 1993, it marked the beginning of a new era for the venerable Castello di Brolio and cemented Ricasoli's membership in the elite of Italian oenology. Today, almost three decades later, Casalferro 2019 is a prime example of how a French grape variety matures to exceptional perfection on Tuscan terroir. Casalferro is the essence of three exceptional individual vineyards: Vigna Casalferro, Vigna Pecchierino and Vigna Sodacci. These 13 hectares of Merlot vineyards between 400 and 500 metres above sea level are the result of decades of meticulous terroir studies. Each site has its own personality: Vigna Casalferro with its sandstone and limestone soils, Vigna Pecchierino on pure Alberese limestone and Vigna Sodacci on iron-rich sandstone soils. They all share the characteristic altitude, which gives the grapes the crystalline freshness and lively acidity that characterise the DNA of the Brolio terroir.

Palafreno 2019 is wonderfully polished and lively. Firm but well-integrated tannins form the backbone for a Merlot that is endowed with considerable energy. Spicy herbs, tobacco and wild flowers add complexity. Very nuanced on the palate, opulent to expressive, then at second glance supple, downright elegant. Almost unbeatable in complexity, depth and richness of finesse, it will reveal more and more of its first-class repertoire in the coming years. SUPERIORE.DE

The grapes come from the historic centrepiece of the Planeta estate in Ulmo near Sambuca di Sicilia – a vineyard that was planted back in the mid-1980s. The vines are rooted at an altitude of around 250 metres in loamy-sandy soils with a high lime content, not far from Lake Arancio. Deep ruby red in the glass with a purple rim. The nose opens powerfully and invitingly: black cherry, plum, cassis and blueberry, accompanied by cocoa, tobacco, fresh leather and a subtle herbal spice. On the palate, Sito dell'Ulmo is both full-bodied and elegant: dense, with polished tannins, fresh acidity and a long, silky finish. In the pantheon of Tuscan winemaking, there are moments of pure alchemy – and Sette from Tenuta Sette Ponti epitomises such a moment. Seven different Merlot vineyards, seven different souls, seven unique terroirs that Antonio Moretti Cuseri has blended into a harmonious symphony. A magnificent tribute to the art of winemaking that shows how diversity can give rise to unity.

There are wines that you like to drink. And there are wines that make you fall silent. Two vineyards engage in a silent dialogue here: Buri in Buttrio and Filip in Rosazzo – vineyards that are bottled separately in great years but combine their voices here in the 2022 vintage. Buri brings structure and those smoky, creamy notes of cocoa and coffee reduction that Antonio Galloni once praised as "one of the most profound expressions of Merlot on the planet". Filip responds with immediacy and flinty-fresh elegance, with violets and delicate finesse. The result is more than just addition: it is synthesis. The vinification follows Enzo's credo of consistent restraint. Spontaneous fermentation without temperature control, ageing in French barriques – only a quarter of them new so as not to mask the fruit. No filtration. The wine decides for itself when it is ready.

Gant stands for greatness. This Merlot Riserva has been the flagship of Andrian for years. A wine that shows what this international grape variety can achieve at high altitudes in South Tyrol. While Merlot is often too lush elsewhere, here, between 250 and 300 metres above the Adige Valley, it finds its elegant side. The sites are perfectly chosen: Medium-heavy, sandy loam soil ensures good drainage and prevents the Merlot from becoming too fat. The cooler microclimate slows down the ripening process, preserves the acidity and ensures finer tannins. Exactly what this grape variety needs to develop character rather than just vigour. The vinification follows classic rules: Mash fermentation in stainless steel with gentle movement of the mash. After alcoholic fermentation, the wine is transferred to barriques for malolactic fermentation and further ageing. The wood integrates elegantly, providing structure without dominating. Time and patience are two of the secrets of Gant.

Spineda is an exceptional Merlot selection produced in honour of the Treviso family that began developing the Venegazzù area in the 1500s, where the very first Merlot was cultivated in Italy. The grapes come from a 2-hectare plot which, thanks to its soil and location, careful soil cultivation and extremely low yields, produces fruit of exceptional elegance. The label is a reminder of the deep connection with the territory and shows a section of a 19th century Napoleonic map of the Spineda lands with the vineyards and the rustic outbuildings that are still an integral part and centrepiece of the Conte Loredan Gasparini winery today.

While Tenuta Sette Ponti takes its name from the seven bridges over the Arno, Sette is named after the up to seven different vineyards that provide the fruit for this 100% Merlot wine: these are the Cypress, Salvareccio I, Salvareccio II, Poggio Sinistro, Sorbaccio, Nocetta I and Nocetta II vineyards. Aromatic and earthy, fragrant notes of cherry and cool blue fruit introduce a ripe and fresh palate that is light on its feet, vertical and balanced. The mid-palate has a stony element, while the red and blue fruits are supported by a network of tannins and good acidity. SUPERIORE.DE

For some years now, Riccardo Cotarella's Montiano has been characterised by great freshness and dark, concentrated fruit. In contrast to the vintages of the early 1990s, the wine has become much livelier and more dynamic. And the 2021 vintage brings a new nuance to this characterful Merlot: riper, denser and finer at the same time. The climatic conditions – an early summer temperature rise followed by cooler evening hours – allowed for slow, even ripening with perfect concentration levels. As always, the Montefiascone region delivers mineral-structured fruit and precise floral components.

On 27 November 1984, Benito and Giannola Nonino created something that had never existed before: ÙE, a grape brandy distilled together from the skin, pulp and juice. Not grappa, not brandy – something unique that combines the elegance of one with the character of the other. They had to fight for ministerial authorisation; today, half the distilling world follows their model. This Gran Riserva continues the legacy: exclusively Monovitigno Merlot from Friuli, harvested at optimum ripeness and processed immediately. Fermentation takes place anaerobically in stainless steel, distillation slowly in Benito's specially designed copper steam stills. Then the journey begins in the sherry casks from Jerez de la Frontera – for twelve years under customs seal, without a drop of colouring.

The name Tresette is derived from the fact that only 2,800 bottles of this single-varietal Merlot are produced each year and it is aged in three Liters French oak barrels. The grapes come from old vines on a plot 480 metres above sea level, and it is only vinified in the best years. Tresette is a cool, archetypal Merlot that is very elegant and unique in Tuscany and is entirely in keeping with the house style. Juicy blackberry flavours, clove, herbs and spices on the nose. Pàtrimo is no ordinary southern Italian. Vinified purely from Merlot, this exceptional wine comes from ancient, ungrafted vines that Feudi di San Gregorio once discovered in the heights of Irpinia – a viticultural rarity and the foundation of one of Italy's most iconic red wines. Deep dark ruby colour with a violet rim in the glass. The bouquet shows Merlot in an unusual, Mediterranean way: Black cherry, ripe plum, liquorice and rosemary, underpinned by mocha, tobacco leaf, vanilla and graphite. Structured and opulent on the palate, but never overloaded: velvety tannins, extract-rich fruit, dark spice and a hint of balsamic freshness that balances the richness. The long ageing in new French barriques lends the wine noblesse without putting it in uniform.

Galatrona is a pure Merlot in a class of its own. Black-red ruby in the glass. On the nose, black berries, fine wood spice and some leather. Very generous fruit aromas and extremely complex on the palate, it glides elegantly into the depths until it is caught by a finely woven tannin and passes into a long and finesse-rich finish. Geremia founded the Ricasoli family in the 7th or 8th century – at a time when Chianti was not yet a wine name, but a battleground between rival noble families. Today, his descendant Marco Ricasoli-Firidolfi runs the same estate, on the same land, in Gaiole in Chianti. And he gave this wine the name of his ancestor. This is piquant in that the Geremia is not a Sangiovese. Marco planted Merlot and Cabernet Sauvignon on 2.5 hectares of his hills in 1997 – consciously, curiously, with a clear question: what does this terroir say in another language? The chalky-clay soils between 340 and 510 metres, the south-southeast exposure, the microclimate between Florence and Siena – everything that characterises Sangiovese is also available to the Bordeaux varieties here. Hand-picked in baskets, fermentation in temperature-controlled tanks, 24 months in medium-roasted Allier barriques, bottled unfiltered, 18 months bottle ageing. Certified organic.
