Donnafugata's impressive declaration of love to Etna, currently the hottest wine hotspot, began with the Sul Vulcano line. Carricante is one of the most exciting grape varieties in southern Italy, capable of complexity and terroir-driven expression in the right soils. The vines for Donnafugata's only white wine from Etna grow on volcanic soils rich in minerals at an altitude of 700-750 metres. The wine is fermented in steel tanks before maturing partly in concrete tanks and partly in second and third choice barriques for 10 months and then a further nine months in the bottle.

When Giuseppe Russo talks about his rosato, his eyes light up with the same intensity as the powder-pink glow that settles over the Contrada San Lorenzo in the early days of October. Here, where eighty-year-old Nerello Mascalese vines are rooted in volcanic soil at an altitude of 700 metres, one of Italy's most elegant rosés is created – born from the perfect balance between timing and technique. The magic begins with the early manual harvest, when the grapes have that crystalline freshness that only the cool Etna nights can give. Giuseppe uses a traditional vertical press in which the whole grapes are gently pressed for five hours – long enough to extract the delicate colour, short enough to preserve the mineral elegance. No maceration on the skins, no artificial intervention: just the natural connection between grape and volcanic terroir. After spontaneous fermentation with indigenous yeasts, the wine matures for six months in stainless steel, where it develops its characteristic finesse.

What followed was no ordinary wine story, but the metamorphosis of a pianist into the poet of the volcano. Until 2012, this wine bore the name of the estate itself – passopisciaro. However, when Andrea Franchetti began to vinify his best individual vineyards separately in 2008, he renamed the basic Etna Rosso: Passorosso. A blend from different altitudes and contrade – from Malpasso to Guardiola and Santo Spirito –which shows the full range of what Nerello Mascalese can achieve on Mount Etna. The higher vineyards lie on coarse-grained lava gravel, the lower ones on finer, oxidised lava powder: each layer contributes to the complexity of this wine. 80 to 110-year-old vines, fermented in steel tanks, matured for 18 months in large neutral wooden barrels and concrete tanks, bottled unfiltered.

When Andrea Franchetti arrived on the northern slope of Mount Etna in 2000, he found an abandoned volcanic landscape – dilapidated vineyards, overgrown terraces, the gloom of a forgotten wine region. But he recognised the potential of these extreme altitudes. Passobianco, first vinified in 2007, is his white answer to the volcanic terroir: pure Chardonnay from the Contrada Guardiola, planted between 850 and 1,000 metres on steep terraces, where the powdery lava soil glistens black like the night. Fermented in steel tanks at cool temperatures, matured partly in concrete and partly in large wooden barrels – a vinification that preserves purity and creates complexity.

Calderara is a wine with 100% volcanic DNA. Born on one of the most prestigious single vineyards (Contrada) of northern Etna. The site is located at an altitude of around 750 metres near Randazzo, where barren, dark soils of lava rock and basalt are weathered and large porous stones flank the rows of vines. The name is derived from "caldera" – a heat-accumulating rock structure that stores heat during the day and releases it again at night. It is this interplay of volcanic power and cool mountain climate that gives Calderara its incredible precision and depth.

The Nerello Mascalese vines of Contrada Montedolce were planted in 1975. Almost five decades of roots in volcanic lava sand, north-northeast, 730 to 750 metres. Low yield, high concentration – a depth that younger plants simply cannot reach. 2021 was a dry, concentrated year on Mount Etna – and an exceptionally good one for the Nerello Mascalese: the vines struggled for water, the grapes remained small and the flavour became compact. Davide Rosso harvests by hand in mid-October, vinifies for ten days in stainless steel with daily pumping over and a délestage at half-time. The wine is matured in French oak barrels of various sizes – a deliberately flexible decision that leaves room for the vintage and the parcel to express themselves.

High up on the southern slopes of Mount Etna, where the Contrada Manzuedda in Biancavilla rises 900 metres into the sky, lies an extraordinary vineyard, as old as the dreams that gave birth to it. Here, between the eternal snow of the peaks and the flames of the volcano, where the first Carricante vines sank their roots into the volcanic earth in 1950, A' Puddara, "the hen", is born. This is what the Sicilians call the Pleiades in dialect, the seven sisters in the firmament that shine from the sea above the volcanic peak in summer. Silvia Maestrelli, the visionary pioneer of Fessina who sadly died far too early, dedicated the starry sky of her Sicilian nights to this wine, a fitting tribute to this island of dreams and fire.

In 1975, the Carricante vines were planted, which today bear the Etna Bianco by Giovanni Rosso. Almost five decades of roots in volcanic lava sand, at 730 to 750 metres, exposed to the north-north-east – where the sun has to fight all day and the grapes ripen slowly, cool and with rare aromatic precision. Davide Rosso discovered this spot in 2014 and bought the property two years later. What attracted him was the same logic that guides him in Serralunga: not terroir for the sake of terroir, but one that characterises the wine, without help, without make-up. The soils of the Contrada Montedolce – volcanic sand, ash, mineral-rich subsoil, aerated and drained like hardly any other site on the northern slope – gave him what he was looking for. The old Alberello vines, trained with a double inverted Guyot, bear little. But what they do bear is concentrated. Hand-picked in October. Spontaneous fermentation at cool temperatures in stainless steel for 15 to 20 days. Five months sur lie with weekly bâtonnage. No wood. The vinification is silence – the wine should speak.

Because Chardonnay on the northern slope of Mount Etna, at an altitude of 740 metres, in the Contrada Rampante – sounds like an experiment that shouldn't actually work. And yet it is exactly the opposite: proof that the volcanic soil of this mountain moulds grape varieties that behave differently elsewhere.

Animardente is a pure Nerello Mascalese produced from vines planted in bushes at an altitude of 700 metres on partly sandy and ashy, partly gravelly and pebbly soils that are exposed to extreme temperature fluctuations between day and night. The name of the wine is derived from the bowels of the volcano, from its incessant activity, the heat and the colour of the magma. The vines grow in a kind of amphitheatre created by volcanic eruptions, which over the centuries have produced a valuable substrate for viticulture: On dark volcanic soils formed from lava flows, mainly free-living, rootless vines develop here, which are exposed to the most extreme climatic influences. Animardente was born a few years ago in this almost moon-like landscape. A name that tells of the soul of the silent volcano, unexpected and incandescent, breathing life into perpetual motion. In 2002, Benanti dared to do the unthinkable: a Metodo Classico from pure Carricante – the first ever bottle fermentation from Etna from this noble indigenous grape variety. What was then an experiment is now a reference: hardly any other Sicilian sparkling wine comes close to the perlage quality of this house. The grapes come from the eastern and southern slopes of the volcano, where 20 to 60-year-old vines are rooted between 700 and 850 metres in mineral-rich volcanic sands – partly as traditional Alberello, partly on the trellis. Hand-picked, gentle whole-cluster pressing, fermentation at 16–18 °C in stainless steel. The wine rests on the fine lees until late spring, followed by bottle fermentation with selected yeasts. After 24 months on the lees, disgorgement and dosage take place; a further three months of rest complete the maturation.

Nerina Russo, mother of Giuseppe and widow of the late Girolamo, is more than just the namesake of this extraordinary white wine – she is the living heart of a family that has given Etna all its devotion. At harvest time, when their famous dishes mingle the flavours of the kitchen with those of the fermenting grapes, it becomes clear that wines are made here out of love, not just passion. Giuseppe has created a monument to his father with the winery, but has dedicated the wine that perhaps best expresses the essence of his family to his mother. Nerina embodies the soul of the Sicilian white wine tradition – a harmonious union of all the autochthonous grape varieties of Etna, which once thrived together in the mixed vineyards of the Contrade. This rosé spumante is Benanti's declaration of love for the Nerello Mascalese – the noble red grape variety that is otherwise synonymous with elegant red wines with a Burgundian grace on Etna. As Metodo Classico, it reveals a completely different, no less enchanting side. Hand-picked, whole bunch pressing without destemming, fermentation at 16–18 °C in stainless steel.
