Balisca is made from 100% Cabernet Sauvignon from the winery's vineyards in Panzano. It is deep, rich and very layered, exuding tremendous purity from start to finish. The notes of the grape variety are very finely sketched in a smooth, very expressive wine with lots of personality and character. 2021 – a Tuscan vintage for the ages. In the annals of Bolgheri, this year will be remembered as the one that revealed the perfection of the Mediterranean terroir in its purest form. A rainy winter, which replenished the water reserves for the coming summer, was followed by a growing season of classic elegance: a cool spring initially delayed budding, but when temperatures rose at the end of May, the development of the vines accelerated in an ideal way. The summer of 2021 was characterised by the Mediterranean drought that makes Bolgheri so unique – three months without any significant rainfall, but the vines did not suffer. The deep, sandy soils, enriched with limestone and stones, had stored the winter moisture and continuously nourished the roots. The exceptional day-night temperature difference, which was amplified by the nearby coast, was decisive and gave the grapes the freshness that makes the 2021 so distinctive.

Monumental and very concentrated single-varietal Cabernet Sauvignon with hints of sour cherries and a fine cedar wood and liquorice note. Montalcino and Cabernet Sauvignon – at first sounds like a marriage against nature. Sangiovese reigns here, Brunello grows here, the grape variety has found its expression here for centuries. The fact that Count Alberto Marone Cinzano nevertheless planted Cabernet Sauvignon on the hills of his estate in the early 1980s was neither a coincidence nor an experiment – it was a conviction. The conviction that this terroir, these soils, this altitude are capable of more than just one wine. Today, Olmaia is a monument to this vision. The vineyard – 365 metres above sea level, planted in 2005 – bears his name. The DOC Sant'Antimo, founded in 1996, created the legal framework for just such wines: international grape varieties, grown in Montalcino's chalky soil, with the ambition not to imitate, but to interpret.

"Sassicaia really was our house wine back then," says Priscilla Incisa della Rocchetta, daughter of the president of San Guido, Marquis Nicolò Incisa della Rocchetta. "It was more of a wine experiment that was only tested within the family and among friends, until we went on the market for the first time with the 1968 vintage. Today, this wine is all about elegance and balance. We like this style, which is not so much about the body. Sassicaia is a good representative of what we want to convey as a style."

There are wines that have made history. And then there is Sassicaia – the wine that started a revolution and changed Italy forever. The first commercial bottle saw the light of day in 1968, at that time still classified as a modest Vino da Tavola, today the only wine in Italy to be honoured with its own DOC. What began as an experiment by a visionary marchese became a legend. The name says it all: "Sassi" – stones. An idea that Mario Incisa della Rocchetta had in the 1940s is rooted in the stony, calcareous soils of the Bolgheri hills, between 100 and 400 metres above sea level. Inspired by the great wines of Bordeaux, he dared to do the unthinkable: to plant Cabernet Sauvignon and Cabernet Franc in Tuscany, where only Sangiovese had reigned for centuries.

The single-varietal Cabernet Sauvignon Toren is the only red cru from Tiefenbrunner's rare Vigna line and comes from a 0.6 ha micro-location with clay and limestone gravel soils: sparkling garnet red with a slight violet tinge. Very intense and appealing nose, with aromas of cassis, blackberry, tobacco and mint. Rich, concise fruit on the palate, mountains of cassis and cranberries, juicy and dense, builds beautifully with ripe tannins, long final. The name suffix "Secundo" was chosen for this vintage as there was unfortunately only a tiny harvest in 2021 and, unlike its predecessors, the wine is characterised by more finesse and elegance than the usual unbridled power and opulence. Every year, Fratta is a groundbreaking blend of Cabernet Sauvignon and Merlot that you can't help but love. Fratta proved the Veneto's potential for winemaking when it was first produced in 1977, the year Angela Maculan (a second daughter) was born. Deep, complex fruit bouquet, rounded off with fine sweet spices, tobacco and coffee. On the palate, beautiful lines and a sharp focus with dry mineral tones framing dark fruits, dried cherries and exotic spices. Angelo's grandfather spoke of a disgrace when Angelo planted a vineyard with Cabernet Sauvignon. This word (Darmagi in Italian) ultimately gave the single-varietal Cabernet its name. The result is anything but a disgrace: black fruits, espresso, grilled herbs and cassis in a rich and dense bouquet. Elegance and harmony on the palate, flavours of leather and a certain earthiness increase the complexity. Giacomo Neri's Pietradonice is Cabernet Sauvignon at the highest level and has become a legend, as there is hardly a wine in Montalcino that can even come close to it. Monumental and very concentrated, with hints of sour cherries and a fine cedar and liquorice note. The name Darmagi – which means "what a disgrace" in Piedmontese – stems from a family anecdote: Gaja's father Giovanni uttered this exclamation when Angelo had Cabernet Sauvignon planted instead of Nebbiolo. Today, this experiment is considered a masterpiece for Gaja, subtly redefining the region. In the glass, Darmagi is a deep purple colour, almost black, with a shiny violet rim. A luxuriously dense aroma unfolds on the nose: blackcurrants, espresso, roasted herbs and smoky, woody notes interweave with cassis and foliage. On the palate, this Langhe Rosso is brooding and velvety: softly flowing tannins, fine acidity and mineral precision lend elegance and presence at the same time. The overall impression is rich, clear and seductively comprehensive.

Giovanni Gaja, the tradition-conscious patriarch, could not believe his eyes: His son Angelo had actually dared to do it. Cabernet Sauvignon vines had been planted on the best Nebbiolo terrain, directly below the village of Barbaresco. French grapes! On sacred Piedmontese soil! Only 5,000 bottles leave the estate – a silent witness to Paolo De Marchi's uncompromising obsession with quality. From the best Galestro and Alberese soils at high altitudes, one of Italy's most convincing Cabernets has been produced here since the 1980s. The 2018 embodies the soul of an exceptional vintage: 24 months in French barriques, forty per cent of which were new, followed by three silent years in the bottle. This patience shapes a wine of rare depth – dark blue fruit, lavender, mocha and espresso weave themselves into a complex tapestry of flavours. In the quiet of 2019, Paolo De Marchi's decades-long vision of Cabernet Sauvignon as an authentic terroir expression of the Tuscan soul came to fruition. After more than forty years of tireless viticultural revolution, the maestro proved once again that international grape varieties do not become commonplace wines on the Galestro and Alberese soils of Isole e Olena, but express their new home in every drop. Only 10,000 0.75-litre bottles and 240 magnums were produced from the south-west-facing vineyards at altitudes between 350 and 400 metres. The 2019 benefits from an almost ideal vintage: mild winters, balanced rainfall in spring and a classically dry Tuscan summer produced grapes of exceptional concentration and elegance. 24 months in French barriques, forty per cent of them new, followed by three years of bottle ageing – this patience creates a wine of impressive complexity.
