    Cerasuolo means cherry red – and the name says it all. What Illuminati vinifies from Montepulciano grapes as rosato has nothing to do with the pale summer rosé that you forget between two deckchairs. Only 15 hours of maceration at a cool temperature – just enough to extract colour, aroma and the characteristic Adriatic salt fingerprint without taking any tannin or heaviness with it. Then fermentation in white, steel, care.

    Bright, rich cherry pink colour. On the nose, strawberry, wild berry, wild flowers, Mediterranean herbs and that subtle hint of the sea that the hills of Controguerra get with every breeze. Fresh and juicy on the palate, with lively acidity and a long, slightly salty, mineral finish. A rosato that knows what it is – and shows it with conviction. SUPERIORE.DE
