A Grand Cru of Franciacorta – from a single, high-altitude Pinot Nero parcel, selected and vinified with the utmost precision. The 2013 matured on the lees for more than seven years and was disgorged without dosage in order to reveal the pure character of the vineyard. In the glass, it shines in a rich gold colour with copper reflections, interspersed with an ultra-fine, persistent perlage. The nose is deep and multi-faceted: ripe apricot, candied orange peel, rosehip, fine brioche notes, hazelnut and a hint of smoke. Powerful and focussed on the palate, carried by taut, crystal-clear acidity and a silky texture. The fruit remains subtle, while salty minerality and fine toasted notes create great inner tension. There are wines that define a region. Saffredi is one of them. In 1987, when Elisabetta Geppetti – just in her mid-twenties and with the vision of helping the sleepy Maremma region achieve world fame – created this wine together with the legendary Giacomo Tachis, nobody could have guessed that a Supertuscan was born here that would rival Sassicaia and Tignanello. The name is a loving tribute to Fredi, Elisabetta's father-in-law Alfredo Gentili, who sparked her passion for wine and planted the five-hectare vineyard in the 1980s from which the grapes for Saffredi are still sourced today. The single vineyard Saffredi near Pereta lies at an altitude of 250 metres, south-west for the old vines and south-east for the newer plantings. The soil is the result of millions of years of geological history: Sandstone origin, rich in limestone marl and iron minerals, poor in organic matter, with clay layers only from a depth of 30 centimetres. On clear days, the view from here sweeps over the hills to the Mediterranean 25 kilometres away – a proximity to the coast that gives the wine its special freshness and tension.

There are vineyards that are named after the place where they are located. And there are vineyards that give the place its name in the first place. Podernovi is one such case – the three hectares of Sangiovese that have been growing on this plot for over thirty years are so inextricably linked to the hill that the vineyard and district bear the same name. When San Polo bottled the first single-vineyard Brunello from this vineyard in 2015, it was less a debut than a recognition of what the soil had long known. Podernovi lies at 450 metres above sea level, facing south-east, where the view sweeps across the Val d'Orcia to Monte Amiata. The soils are a kaleidoscope of Tuscan geology: marl and galestro, the slate-like clay that gives the best Sangiovese vineyards in the region their unnerving minerality, interspersed with clay that stores water and supplies the vines even in dry summers. What sets this vineyard apart from others is not just its terroir, but the rigour with which San Polo cultivates it: four to five grapes per vine, no more – 700 to 800 grams per vine, a yield that is reminiscent of Burgundy conditions and forces the Sangiovese to achieve a concentration that it rarely reaches elsewhere.

Cerequio is considered one of the grand cru sites of Barolo and has been an integral part of the Michele Chiarlo icons for decades. The steep slopes between La Morra and Barolo face south-east and south-west, with calcareous marl and fine veins of sand that give the Nebbiolo here an unmistakable combination of depth, finesse and flavour. The vines, some of which are over 30 years old, produce wines of remarkable complexity in mature vintages. The 2019 vintage was characterised by a balanced vegetation cycle: a cool spring, followed by warm, sunny summer months and moderate temperatures in September, which allowed for slow, complete ripening. After gentle fermentation in temperature-controlled stainless steel tanks, the wine matured for two years in large French oak barrels before being further refined in the bottle.

Vittorio Moretti, a pioneer with an irrepressible spirit, created more than just a winery with Bellavista. He created a philosophy of perfection. The Riserva that bears his name is produced exclusively in exceptional years. It is the quintessence of what Franciacorta has to offer: the best soils, the most beautiful exposures, the oldest vines. Chardonnay and Pinot Nero, blended in almost equal parts, from historic plots more than 30 years old. Vinification takes place in small white oak barrels, followed by a long journey: seven years on the lees, during which the bottles are sealed with cork stoppers – a tribute to the traditional method.

In 1977, a 34-year-old manager from Bergamo came to the Tuscan coast. Pier Mario Meletti Cavallari had had enough of balance sheets and meetings – the wine journalist Luigi Veronelli had persuaded him that his place was among the vines, not in offices. What he found: a piece of land without electricity, without running water, overgrown and forgotten. Only the name reminded him of a distant past: Grattamacco – the slag heaps of the Etruscans, who smelted iron here two and a half thousand years ago. Five years later, in 1982, Meletti Cavallari bottled his first wine – as a simple Vino da Tavola, three years before Ornellaia even existed.

Three generations bear this name: The grandfather, who always encouraged Giampaolo Motta in his wine dreams. The son who carries on the torch. And in between, this wine, the highest expression of a man who left the leather goods business of his Neapolitan family to create his Bordeaux in the Conca d'Oro of Panzano. The "Golden Basin" – cultivated since 1490, planted with Merlot and Cabernet for almost 400 years – became Motta's stage in 1992. He experimented with Chianti Classico for ten years, then the break: he left the Consorzio because the rules stood in the way of his vision. "I wasn't really happy with the result after ten years of work," he explained laconically. What followed was pure consistency – and, since 2008, a partnership with Stéphane Derenoncourt, perhaps the most influential consultant on the right bank of Bordeaux.

The grapes for the "Suolo" Brunello selection come from the vineyard of the same name and from the estate's oldest vines. They lie at an altitude of 320 metres on soils of clay-limestone marl rich in skeletons and fossils. It is the ideal terroir to fully express the character of the old Sangiovese Grosso clones and gives the wine an acidic, spicy profile. Only part of the vineyard parcels are used for this label. Long ageing in 15-hectolitre Allier oak barrels and a resting period in the bottle complete it and prepare it for the market and the challenge of time. Around 5,000 bottles are bottled only in the best vintages.

Marassio is Giulia Negri's highest Barolo parcel and lies at an altitude of just under 540 metres on the western edge of La Morra – a cool, windy location where Nebbiolo ripens particularly slowly and evenly. The soil, rich in limestone marl and fine clay, gives the wine a distinctive minerality and firm structure. The wine is aged for 30 months in large, neutral wooden barrels to preserve the pure expression of the vineyard. 2020 offered a balanced climate with warm, dry phases and sufficiently cool nights, which gave the Nebbiolo a rare balance of aromatic richness and precise acidity.

Barolo Ornato is a great wine every year. It captures the true character of Serralunga with its wild herbs, minerals and ferruginous notes. Its bouquet shows small berry fruits and cassis, framed by gravel, forest floor, blue flowers and candied orange peel. The wine also has a dusty, mineral note and is intense on both the nose and palate. Ornato sets in with finely integrated tannins and an acidity that sustains all these fruit flavours. The year 1991 was the first. With the 2021 vintage, Poggio di Sotto is celebrating its thirtieth Brunello – an anniversary that the estate is marking with a special label in gold print, discreetly and without pomp, entirely in the style of the house. Thirty vintages that have proven that elegance is not a weakness. 2021 was not an easy year. Late frosts in spring decimated the harvest, summer brought heat, August finally brought rain – a sequence that could have been disastrous in other hands. Cellar master Leonardo Berti sees this as the special character of this vintage: fewer grapes, more concentration and an intensity gained through stress, which was kept in balance by the freshness of the long growing season. The soils – a mosaic of white and red clay, galestro and grey marl – did the rest. Spontaneous fermentation in wooden vats, maceration for at least 30 days, 42 months in large Slavonian oak barrels, unfiltered. The recipe is the same. The wine is not.
