It offers a wide range of Sangiovese flavours with wild cherry, forest floor, crushed clove and medicinal herbs, but it also shows a plump density and a velvety texture. The grapes for this fine white wine from the north side of Mount Etna come from the 3-hectare Contrada Muganazzi in the municipality of Passopisciaro. The skeleton-rich and pH-neutral soils are rich in iron and nitrogen and offer ideal conditions for fresh, acidic and mineral white wines. The wine is aged in equal parts in wood and stainless steel for 12 months on the fine lees. Muganazzi is neither a lean wine, nor is it too full-bodied. It is somewhere in between, with thick layers of peach, apricot and lots of fresh citrus fruit. The mineral notes such as gravel, flint and volcanic ash are very evident. The name says it all – and rarely has a wine deserved its name so consistently. Quartz: a mineral that was formed in fire, has survived for millions of years and is still visible today in Terlan's soils as a fine speckle in the volcanic porphyry rock. 55 to 60 per cent quartz content, slightly acidic pH value, skeleton-rich sandy-loamy structure without carbonate – a soil that allows water to pass through, rations nutrients and puts the vine under controlled stress. This micro-stress is not a deficiency. It is intentional. It forces the plant to produce terroir-specific polyphenols, which give the wine the savoury tension for which Terlan is internationally renowned.

Gallule – a name that wafts over the hills of Castellina like a gentle breeze from times long past. It is the Lombard name for what was once the heart of this magical place: the Galla, the fruit of the centuries-old oaks that dominate the wide valley at the foot of the hills. Here, where the son of the Longobard king Berengario gave this land to his bride as a wedding gift back in 994, one of the most extraordinary Chianti Classico wines in the region is produced today. The vines that give life to this Gran Selezione are rooted in terraces that were created by man centuries ago – stone witnesses to a time when viticulture was still a craft. These UNESCO-protected terraces, nestled between olive trees and cypresses, create a microclimate of unique harmony. The Galestro-rich soils, interspersed with limestone and sedimentary stones, allow the Sangiovese roots to penetrate deep into the earth and extract the minerality that gives the wine its unmistakable signature.

Villa di Capezzana has been the Tenuta's flagship since 1925 and is a living testimony to Tuscan wine culture. This Carmignano DOCG epitomises the vision of the Contini Bonacossi family, who for five generations have been cultivating the heritage of a wine estate whose first documented mention dates back to 804. In 1975, Carmignano was the first Tuscan DOC zone ever to officially include Cabernet Sauvignon in the assemblage – centuries before the Super Tuscans discovered this idea for themselves. The tradition goes back to the 16th century, when Caterina de' Medici had Cabernet cuttings brought to Carmignano from Bordeaux.

The grapes for one of the most elegant and ethereal Vin Santo in Chianti Classico are dried before they are pressed and then sealed in barrels for nine years. Paolo de Marchi calls it "lazy winemaking" and admits: "The blending process is actually the most challenging part, as every barrel is different and after tasting 10 barrels, palate fatigue sets in". The result is a very elegant and pure Vin Santo that has beguiling notes of candied fruit, honey and sweet spices. The balance between sweetness and acidity keeps the wine light, lively and refreshing, and it has a smoky edge on the finish. Since the first bottling in 2004, this wine has embodied the purest and most direct interpretation of Bolgheri à la Le Macchiole - a Rosso of grace and intensity, easy to drink without compromising on structure and complexity. The historic winery, founded in 1983 by Eugenio Campolmi and Cinzia Merli as pioneers of the region, has distilled its understanding of terroir with this Bordeaux blend of 40% Merlot, 20% each of Cabernet Franc, Cabernet Sauvignon and Syrah. The challenging 2023 vintage with its changeable summer demanded precise decisions during the harvest – a test that Le Macchiole's experienced team under Cinzia Merli passed with flying colours. 15 days of maceration in steel, followed by 10 months of ageing, 70% in used barriques and 30% in concrete, give the wine its characteristic balance.

No other point in the Barbaresco geography is as geologically charged as Rabajà. Where the two ridges of the village meet – one sloping westwards towards the Tanaro, with loose, calcareous soil; the other facing north, with compact, calcareous subsoil –lies the vineyard. The secret of its complexity lies in the intersection of the soils: Rabajà combines what is otherwise separate. The south-westerly exposure provides warmth; the limestone gives tension. The result is a wine that does not play off elegance and power, but rather blends them together. The Produttori del Barbaresco first bottled Rabajà in 1970 – the entire production was purchased by Ristorante Guido in Costigliole d'Asti, a silent sign that this wine would become more than just an insider tip right from the start. Vinification: 28 days on the skins, thirty months or more in wooden barrels, one year in the bottle.

North-west of Montalcino, where the hills become wilder and shadier and the view extends towards the Maremma, lies Castello Romitorio in a secluded location that lives up to the name of the estate. Romitorio – hermitage. When Sandro Chia acquired the dilapidated castle in 1984, it had been uninhabited for decades, most recently a shelter for shepherds and their flocks. He paved it with art and planted the slopes with old Sangiovese clones – without knowing what speciality this north-western microclimate strip would one day bring to the bottle. The vineyards receive less direct sunlight than the southern slopes, the temperatures are cooler and ripening is later – conditions that give the Sangiovese elegance rather than vigour.

It also epitomises the vibrancy of Sangiovese, which initially appears medium-bodied and then gains strength as firm, dusty tannins wrap themselves around a tangy core. The finish is energetic and uplifting - an elegantly moulded Brunello with impeccable symmetry and purity of fruit. The grapes come from family-owned plots in Serralunga d'Alba, La Morra, Grinzane Cavour, Monforte and Mosconi. Each vineyard is harvested separately by hand and fermented in stainless steel; long maceration times with gentle remontages ensure a fine, complete extraction. For ageing, the winery predominantly uses large Slavonian oak barrels (botti), supplemented by a smaller proportion of French oak, which adds lustre to the texture without masking the origin. Thanks to a stable summer and cool nights in autumn, 2020 produced ripe, healthy harvestwith a clear acidity line and precise aromas.

There are locations that you know without ever having visited them. Asili is one of them – a gentle hollow to the south-west of the village of Barbaresco, protected from the Tanaro by the ridge, warmer during the day than the neighbouring vineyards, quieter, more concentrated. Marl and limestone alternate in layers, the vines are deeply rooted and the result is less impression than personality. The Produttori del Barbaresco have been vinifying Asili separately since 1967 – as one of the first five sites to be bottled individually by the co-operative. The process is the same as for all nine crus: maceration for 28 days at 30 degrees, followed by at least thirty months of ageing in large Slavonian oak barrels with a capacity of 25 to 50 hectolitres, and finally a further year in the bottle. No secret – but a craft that requires exceptional patience. 2021 gives the Asili a special depth. The frost in April decimated the harvest, the remaining grapes grew in concentration during a long, temperate season; the harvest only began after 8 October – almost like in the old days.

Between Montestefano and Ovello lies Montefico – has always been recognised by connoisseurs as the most precise, intellectual wine in the Produttori range. The site opens up to the south and south-east, sharing the limestone-rich subsoil with its mighty neighbour Montestefano, but is at the same time exposed to occasional northerly winds that blow through the narrow valley between Barbaresco and Neive, refreshing the mornings even in hot summers. This gives the Nebbiolo here a characteristic coolness that it wears with dignity. The Produttori del Barbaresco vinify Montefico according to the same logic as all of their other nine crus: 28 days of maceration, then thirty months or more in large Slavonian oak barrels – without haste, without compromise. The April frost of 2021 reduced the harvest to the essentials; the grapes ripened slowly and completely, and the harvest only took place after 8 October – under almost perfect conditions.

Le Ragnaie is located on the highest vineyards in Montalcino. Riccardo Campinoti, who took over the estate in 2002 together with his American wife Jennifer, has created a vineyard here at an altitude of – 530 to 600 metres above sea level, surrounded by oak forests, olive groves and a small lake – has realised a philosophy that cannot be taken for granted in Montalcino: maximum transparency. No purchasing, no concentration through technology, no new barriques. Natural yeasts, concrete tanks, long macerations, Slavonian oak barrels. The wine tells what the vineyard says – and nothing more. The name of the estate refers to the ragnatela, the spider's web – the shape of the traditional bird-catching nets that were once spun here when Montalcino was poor and people caught birds to feed themselves. The history of Brunello has changed this. But the nets – in the figurative sense – have remained: fine, taut, precise. Brunello di Montalcino is the assemblage of all the parcels of the estate – a combination of the different exposures and altitudes of the central zone, vinified separately and only bottled together after three years.

South Tyrol's Chardonnay legend writes another chapter. Since 1994, the Löwengang has characterised the perception of Alpine white wine excellence like no other. The historic estate above Margreids holds a secret: Chardonnay vines, whose roots reach up to five decades deep into the South Tyrolean soil, thrive on barren limestone soils between 230 and 330 metres. The warm microclimate with its nightly drops in temperature produces grapes of concentrated minerality. The Lageder family gives this terroir free rein. Organic farming without compromise, spontaneous fermentation in hand-picked barriques from the Tronçais and Vosges forests. One third new wood lends structure, while eleven months on the lees give the wine its silky texture. A further twelve months of ageing in the cellar bring the final harmony.
