There are wines that seek their time. And there are wines to which time confides its secrets. Historical Vecchie Vigne is one of those rare gems that only reveal their true colours after more than five years of ageing – a tribute by the Bernetti family to Verdicchio and at the same time a radical statement: that even non-aromatic white grape varieties can be among the very best if they are given the time they deserve. In Montecarotto, where the hills of the Verdicchio Classico find their noblest expression, there is a small plot at 310 metres above sea level, isolated in the middle of the historic Vecchie Vigne. Vines over fifty years old are rooted here in brooding, fresh, loamy soils that provide Verdicchio with the minerality and substance that only old vines can give. Eastern exposure, perfect balance between growth and yield – these vines were planted in the early seventies and today produce grapes of a concentration and ripeness that are harvested by hand at the end of September, beginning of October, berry by berry intact.

The area is just under two hectares. Pajè is the smallest of all nine Produttori del Barbaresco vineyards – and yet, or perhaps precisely because of this, it bears one of the most striking signatures of the entire range: a freshness that never fades. The site lies to the south-west of the village, slightly lower than its higher-lying neighbours and more open towards the Tanaro. The influence of the river gives it a cooler microclimate; the soil is calcareous with veins of sand that drain well. In cooler vintages, a slight mint flavour can be detected that is rarely found elsewhere in Barbaresco. First produced in 1967 – then as a special label for the "Cavalieri del Tartufo" –since 1982 in the regular vintage. The vinification follows the basic principle of the co-operative: 28 days of maceration, thirty months or more in large wooden barrels, one year in the bottle.

The name says it all – and rarely has a wine deserved its name so consistently. Quartz: a mineral that was formed in fire, has survived for millions of years and is still visible today in Terlan's soils as a fine speckle in the volcanic porphyry rock. 55 to 60 per cent quartz content, slightly acidic pH value, skeleton-rich sandy-loamy structure without carbonate – a soil that allows water to pass through, rations nutrients and puts the vine under controlled stress. This micro-stress is not a deficiency. It is intentional. It forces the plant to produce terroir-specific polyphenols, which give the wine the savoury tension for which Terlan is internationally renowned.

Villa di Capezzana has been the Tenuta's flagship since 1925 and is a living testimony to Tuscan wine culture. This Carmignano DOCG epitomises the vision of the Contini Bonacossi family, who for five generations have been cultivating the heritage of a wine estate whose first documented mention dates back to 804. In 1975, Carmignano was the first Tuscan DOC zone ever to officially include Cabernet Sauvignon in the assemblage – centuries before the Super Tuscans discovered this idea for themselves. The tradition goes back to the 16th century, when Caterina de' Medici had Cabernet cuttings brought to Carmignano from Bordeaux.

The grapes for one of the most elegant and ethereal Vin Santo in Chianti Classico are dried before they are pressed and then sealed in barrels for nine years. Paolo de Marchi calls it "lazy winemaking" and admits: "The blending process is actually the most challenging part, as every barrel is different and after tasting 10 barrels, palate fatigue sets in". The result is a very elegant and pure Vin Santo that has beguiling notes of candied fruit, honey and sweet spices. The balance between sweetness and acidity keeps the wine light, lively and refreshing, and it has a smoky edge on the finish. This is a great Vin Santo, and although it has more than 200g/litre of residual sugar, it is surprisingly light, refreshing and easy to drink. SUPERIORE.DE

In the hills south of Castelnuovo dell'Abate, where the soils are characterised by galestro and clay and the view sweeps over the Orcia Valley, a Rosso is created that can hardly be called a "second wine". Poggio di Sotto elevates the genre of Rosso di Montalcino to an art form and the 2022 vintage emphasises this with rare clarity. The year was warm, but not impetuous: after a dry winter, the summer brought high temperatures, but also large temperature differences between day and night. The autumn, dry and mild, allowed for a late, staggered harvest: An advantage for a winery that harvests Sangiovese as selectively as if it were a Grand Cru. The wine is fermented spontaneously in open wooden vats and matured in large Slavonian oak barrels – for almost three years, although the law requires far less. What would be a Brunello in other cellars is deliberately bottled as a Rosso here. And that is by no means an understatement, but a stylistic decision.

Sigmund Freud defined the "id" as that part of the psyche that only obeys a single principle: lust. Unbridled, unregulated, beyond space and time. When Gianfranco Fino gave his wine this name, it was not marketing – it was a manifesto. In 2004, the former olive consultant bought his first vineyard: just 1.3 hectares near Manduria, planted with Primitivo vines over fifty years old in traditional Alberello cultivation. What began as an experiment became a revolution. Six years later, Fino stood on the stage of the Gambero Rosso and received the "Winemaker of the Year" award – the first ever winemaker from central or southern Italy. Beneath the village of Terlan, on the slopes of the Adige Valley, lies a geological mystery: a subvolcanic rock formation whose composition and character differ from anything else known in the world of wine. The porphyry forms the foundation – volcanic, millions of years old, interspersed with fine quartz inclusions. The soils that result are sandy-loamy, slightly acidic, free of lime and low in nutrients. Highly permeable, they naturally limit yields. A soil that puts the vines under stress – and thereby forces them to reach deeper, to become more concentrated and more mineral. Since 1893, 143 members of the Cantina Terlan have been cultivating these slopes. What they produce here is unique in the world of wine: white wines that stand the test of decades, whose longevity is reminiscent of the Grands Crus of the Côte d’Or. Cellar master Rudi Kofler named the ‘Quarz’ after the rock to which he owes everything. ‘As delicate as the fine quartz inclusions in Terlan porphyry – that is our Sauvignon.” Delicate texture. South Tyrol's Chardonnay legend writes another chapter. Since 1994, the Löwengang has characterised the perception of Alpine white wine excellence like no other. The historic estate above Margreids holds a secret: Chardonnay vines, whose roots reach up to five decades deep into the South Tyrolean soil, thrive on barren limestone soils between 230 and 330 metres. The warm microclimate with its nightly drops in temperature produces grapes of concentrated minerality. The Lageder family gives this terroir free rein. Organic farming without compromise, spontaneous fermentation in hand-picked barriques from the Tronçais and Vosges forests. One third new wood lends structure, while eleven months on the lees give the wine its silky texture. A further twelve months of ageing in the cellar bring the final harmony.

Mazon is not silent. If you listen carefully, you can hear something different in every vintage – sometimes warmth, sometimes coolness, sometimes the Alpine downdraughts that sweep across the plateau in the evening and sharpen the flavours of the grapes. The 2020 is a vintage that listens and responds: fresh, transparent, with a precision in the fruit that only emerges in calm conditions. The Barthenau estate, built 150 years ago by Ludwig Barth von Barthenau, has belonged to the Foradori-Hofstätter family for decades. The single vineyard Vigna San Urbano – south Tyrol's first officially classified single-vineyard wine, declared a "Vigna" by Paolo Foradori in 1987 – lies at the heart of this estate. Clay-limestone over the Werfen formation, vines over 65 years old, a site that gives the Pinot Nero what it needs: mineral subsoil, cool nights and the time it deserves. Harvested entirely by hand, completely destemmed. Fermentation in concrete vats, ten days of skin contact with remontage. Then twelve months in barrique, eight months in large cask, eight months in bottle – always in the cellars of Barthenau, where the temperature remains constant and the wine finds its own peace.

Poggio di Sotto was founded in 1989 in Castelnuovo dell'Abate, at the south-easternmost tip of Montalcino, where the view extends over the Orcia Valley and Monte Amiata breaks the hot summers. The estate lies at an altitude of 200 to 400 metres, on Galestro and Alberese – those slate-rich, poor soils that leave the Sangiovese no choice but to grow deep roots and concentrated yields. 20 of the 48 hectares are planted with vines. More than 180 Sangiovese biotypes grow here – a genetic heritage that no clone in the world can replace. The Rosso di Montalcino comes from the same vineyards as the Brunello – selected according to the same criteria, with the same hands, at the same time. What distinguishes it is not the quality of the grapes, but the time of release. Fermentation in wooden and concrete vats, spontaneous fermentation, long maceration periods, then 24 months maturation in 30-hectolitre Slavonian oak barrels. Unfiltered.

Le Serre Nuove carries the DNA of Ornellaia in every fibre, born from the same vineyards, shaped by the same philosophy. What Marchese Lodovico Antinori began in 1981 as a visionary experiment – french vines on the Tuscan coast, four kilometres from the Mediterranean Sea – has long since become a legend. Le Serre Nuove, the estate's "Second Vin" since 1997, is much more than just the younger brother: it is a preview and invitation to discover the Mediterranean Bordeaux style that made Bolgheri world-famous. After a mild winter and early budding, the 2023 vintage brought frequent rainfall during flowering and fruit set, which reduced yields but gave the grapes the perfect physiological balance that characterises great wines. Cooler summer conditions and precise August rains enabled ideal ripeness. The cuvée of 65% Merlot, 25% Cabernet Sauvignon and 10% Cabernet Franc is vinified separately from the grape varieties and matures for 15 months in French oak – 25% in new barrels and 75% in one-year-old barrels.

“Bocca di Lupo” Aglianico Castel del Monte DOC 2018 (BIO)
The wolf's mouth. This is the translation of Bocca di Lupo – a name that captures the wildness of this landscape. Here, in the heart of the Alta Murgia near Minervino Murge, a dream began in 1998: the Antinori family, creators of legendary super Tuscans, recognised the dormant potential of Apulia and invested in a terrain that could not be more barren. Limestone tuff soils, karstic hills, an almost lunar panorama at an altitude of 250-300 metres. But it is precisely this barrenness that is the secret. At the centre of the project: the rediscovery of Aglianico – the noble, once underestimated grape variety that is to find an authentic Apulian voice here. The organically cultivated vines yield slightly overripe grapes that fully develop their phenolic potential. After manual harvesting, the must ferments at 25–27 °C in stainless steel, maceration takes place over 15–18 days with gentle remontages and délestages. Malolactic fermentation takes place in French barriques, where the wine matures for a further 15 months. This is followed by a full 24 months of bottle ageing – this wine is only released onto the market after a total of three years (+).

Venice, 1967: Charles de Gaulle and his wife Yvonne are guests at the Hotel Gritti, invited to the Biennale. A red wine is served at the state dinner, which the president considers to be a great Bordeaux – and publicly praises. When the sommelier reveals that it is a Venegazzù from Montello, just fifty kilometres away, the surprise is perfect. Conte Piero Loredan, descendant of the Venetian Doge Leonardo Loredan, then commissioned the artist Tono Zancanaro to design two labels: Dionysus with the dedication "des roses pour Madame" for the president's wife, the goddess of wine with "...et pour Monsieur la Bombe" for de Gaulle himself. The Capo di Stato was born – a wine for heads of state. To this day, bottles are sent to the Élysée Palace every time a new French president is elected.

The world-famous Caiarossa is an extremely exciting blend of the Cabernet Franc, Merlot, Cabernet Sauvignon, Petit Verdot, Sangiovese, Syrah and Alicante varieties, with the rich, dark fruit flavours of the Cabernet grapes taking centre stage. On the nose, a beautiful first wave of dark fruits that never appear too ripe, which greatly benefits the elegance of the wine. The palate is very balanced and focussed with blackberries, cassis and slight hints of salty or rusty minerals. Caiarossa displays a good degree of elegance, not least due to its fine and taut tannins, and despite its density and complexity never comes across as opulent or even overloaded. SUPERIORE.DE

There are moments in the history of Italian viticulture that shine like beacons through time. 1962 was one such moment when Fabrizio Bianchi, driven by a vision and surrounded by the scepticism of his contemporaries, made a decision that would change Chianti Classico forever. He dared to vinify the grapes from a single vineyard separately: Il Poggio. What began as an experiment became a revolution – the first cru of Chianti Classico was born. Il Poggio – "the hill" – lies in the heart of Monsanto like a natural amphitheatre, surrounded by wild cypresses, juniper bushes and strawberry trees. Here, on the characteristic Galestro soils between 280 and 320 metres above sea level, the Sangiovese vines have driven their roots deep into the slate-like rock over the decades. These soils – a gift of geological history – give the wine the mineral depth and structural complexity that have made Il Poggio a living legend.

Livio Felluga has three wines that bear witness to the estate – wines that are not only among the best in his portfolio, but also part of Friuli’s history: Terre Alte, Picolit and the Sossò. The word comes from the Friulian language and refers to the slow, deliberate sipping – the opposite of drinking. A hint as to how this wine is intended to be enjoyed. Sossò brings together three characters from old vines in Rosazzo: Merlot provides the fullness and the smooth integration. Refosco dal Peduncolo Rosso – — named after its red stalk, documented in writing in Friuli as early as 1390, then the favourite drink of Livia, wife of Augustus – brings darkness, tannin and the wild side of this landscape. And Pignolo, the ‘pine cone’ – one of Italy’s rarest grape varieties, saved from extinction in the 1970s, with compact, pine-cone-shaped grapes and a naturally high tannin content – lends a complexity and longevity that no other vine in this region can match. Matured in small French oak barrels. Then bottle ageing in climate-controlled rooms.
