Count Otto Huyn (1927-1998) embodied the last splendour of the traditional South Tyrolean aristocracy – a nobleman from Eberstein in Carinthia, who owned his best vineyards in Siebeneich near Terlan, thus continuing a centuries-old winemaking tradition of the Tyrolean aristocracy. His privileged plots at an altitude of 250-300 metres, characterised by weathered porphyry soils of volcanic origin, were already considered the crown jewels of South Tyrolean viticulture during his lifetime. The Bolzano winery honours this heritage with its Collection Otto Graf Huyn, a selection that comes exclusively from the top vineyards of the historic estate, personally selected by the cellar master. The unique terroir of Siebeneich, where warm, sun-exposed slopes meet the nutrient-rich weathered soils of the Bolzano porphyry, creates ideal conditions for Bordeaux grape varieties. The cuvée of predominantly Cabernet Sauvignon and Cabernet Franc benefits from the continental character of this location: warm days and cool nights give the grapes the concentration and finesse that characterise this Riserva.

Roberto Anselmi and red wine? That doesn't really go together. While his colleagues in the Soave region have long since jumped on the lucrative Amarone bandwagon or, like Inama in the Colli Berici, produce exceptional red wines, the white wine purist has basically remained true to his line for decades. With one exception: at the foot of Monte Zoppega, hidden among his beloved Garganega vines, a little secret has been thriving for years: Realda, named after a historic church estate. Only 7,000 bottles of this single red wine in the Anselmi portfolio are produced each year – a little gimmick, as Roberto himself says, but a damn good one, in our opinion. 100 per cent Cabernet Sauvignon, matured for 18 months in French Troncais barriques, with a further six months of bottle ageing.

Zenato's Cabernet from the single vineyard Santa Cristina proves that serious red wines can also be produced here. The cuvée of 85% Cabernet Sauvignon and 15% Cabernet Franc combines Bordeaux noblesse with the mild microclimate of the lake. Three weeks of maceration in stainless steel with frequent pumping over extracts colour and structure. The wine then matures for 15–18 months in new and used French oak barriques before being left to rest for a further month in the bottle.

Palazzotto is the name of the two hectares of vineyard where only Cabernet Sauvignon is grown. Fausto Maculan vinifies a fine wine from these grapes. A spicy start in the glass: cedar wood and ground ginger give way to dusty roses and redcurrants. It's elegant yet refined, with creamy textures lifted by vibrant acidity, while a wave of mineral-tinged wild berries lightly wash over the palate. Leaves a tart note of citrus and raspberry and subtle, grippy tannins that frame the wine without slowing its momentum. Although already showing very well now, this beautifully balanced version of Palazzotto should improve even more with medium-term cellaring. SUPERIORE.DE

Powerful, concentrated and yet surprisingly fresh on the palate: ripe tannins, vitalising acidity and a balanced body carry the dark fruit into a long, spicy final with an elegant hint of wood.

Volpolo embodies the pure essence of this exceptional location between the municipalities of Castagneto Carducci and Bibbona; the name is a tribute to the ancient Tuscan grape variety Volpola and at the same time an expression of the deep roots in the Bolgheri terroir. Five years of patience transform strength into velvet. This Riserva matures for sixty months in the same French barriques that previously housed the Capo di Stato – a double legacy of wine and wood. Where the young grappa is crystal clear, the Riserva is a deep amber colour with copper reflections. The nose reveals what only long ageing can give: cocoa, leather, liquorice, cherry and blackcurrant. Silky softness and elegance on the palate, with a clean final in which the oak confirms the fruit rather than masking it. At 45% vol. it is a gentler drinker than its younger sister. The label bears Zancanaro's equivalent: "...et pour Monsieur la Bombe" – once created for President de Gaulle. The perfect accompaniment to a mild cigar or dark chocolate of the finest quality. World star with Italian elegance
Cabernet Sauvignon originally comes from the south-west of France – from a natural cross between Cabernet Franc and Sauvignon Blanc. The grape variety came to Italy in the 19th century, initially as an experimental planting in Veneto and Tuscany. However, its career only really took off in the 20th century – in places where people were prepared to break with tradition: in Bolgheri on the Tuscan coast. From the 1960s, Tenuta San Guido created the legendary Sassicaia, a single-varietal or almost single-varietal Cabernet Sauvignon, which initially had to make do without DOC status – but soon achieved world fame as a "Supertuscan". Cabernet Sauvignon was subsequently taken seriously throughout Italy – not as a substitute, but as an enrichment.
The character of Cabernet Sauvignon
In Italy, Cabernet Sauvignon generally produces powerful, deep red wines with a distinctive tannin structure, good acidity and great Storage potential. The typical flavours range from blackcurrant (cassis), plum, green pepper and laurel to cedar wood, tobacco and dark chocolate, depending on maturity and ageing. Many winegrowers use barriques to give the grape variety even more depth and structure. Despite its international origin, Italy is increasingly succeeding in developing independent styles characterised by terroir: powerful, but not overloaded; structured, but never rustic. Cabernet Sauvignon displays a fascinating balance, especially where there are fluctuations between day and night – for example along the Apennine slopes or in cooler zones near the sea.
Where CS makes history in Italy
The most important Italian hotspot for Cabernet Sauvignon is without doubt Tuscany, especially Bolgheri and the Maremma. This is where great wines such as Sassicaia (Tenuta San Guido), Solaia (Marchesi Antinori), Ornellaia (Tenuta dell'Ornellaia) and Guado al Tasso (Antinori) are produced. Cabernet Sauvignon also plays an important role in Veneto (e.g. at Maculan or Zýmē), in South Tyrol (Manincor, Tiefenbrunner) and in parts of Sicily – often as a cuvée partner in IGT wines, sometimes also as a single variety.
Dishes? Flavourful with pleasure!
Cabernet Sauvignon harmonises particularly well with hearty dishes: Grilled beef, braised lamb, game dishes, but also with mature pecorino, porcini mushroom risotto or baked aubergines. It is important that the dish offers aromatic depth and texture – then the wine shows its class. The ideal drinking temperature is 16 to 18 °C, although mature wines deserve a little air and a large glass.
Bordeaux in Bolgheri? Why not?
The first Italian wine made from Cabernet Sauvignon was initially not allowed to be sold under the DOC label. The Sassicaia had to be labelled as "Vino da Tavola" – a rather humble name for a later world star. Today, Bolgheri has its own DOC – with Cabernet Sauvignon as the king and style-defining protagonist. Marchese Piero Antinori, one of the most important pioneers of international Italian viticulture, once put it in a nutshell: "Cabernet Sauvignon has found a new language in Italy – with a Tuscan accent, but a global voice."
