Cabernet Franc is a grape variety that seeks the sea. In the Loire, in Bordeaux, on Long Island – wherever maritime influences slow down ripening and maintain freshness, it finds its most convincing voice. On the Tuscan coast, it is increasingly coming to the fore: warmer coastal locations give it density and concentration; cooler, higher altitudes with acidic soils such as Montebamboli give it something else: tension, precision and a Mediterranean originality that imitates neither the Loire nor Bordeaux.

The two plots at 371 metres – one south-facing, 21 years old, one west-facing, 10 years old – are harvested by hand at the end of September with careful grape selection, cooled to 5°C overnight. Destemming the next day, optical sorting, gravity filling of the fermentation tanks. The ripest 15% remain as whole bunches and enter the fermenter first. After alcoholic fermentation, 20 days of warm maceration on the skins to polymerise the tannins. Then the ageing: 50% for ten months in new French oak barriques, 50% in concrete. After blending, a further four months in concrete and six months in the bottle.

Bright ruby red colour. On the nose, blackcurrant, raspberry, wild strawberry, with sage, green tea, balsamic – a hint of cocoa and graphite in the background. Light-footed and juicy on the palate, carried by a lively, taut tannin structure, with a fresh, graphite-edged, mineral final that lingers for a long time.
