    La Morra, calcareous sandy soils, north-easterly slopes – this is where the 20- to 40-year-old Dolcetto vines for Elio Altareclassic wine grow. The Barolo revolutionary, who shook up the Langhe in the 1970s with Burgundian winemaking methods, remains true to his Dolcetto: an everyday wine, just as the local farmers have been drinking it with pasta for generations. Maceration lasts just two to three days in rotary fermenters at a controlled temperature, after which the grapes mature for ten months in stainless-steel tanks – in a purist style, without any influence from wood.

    An intense violet colour in the glass, with aromas of violets and black cherries; dry on the palate, yet smooth with delicate tannins. Medium-bodied, juicy, with full cherry fruit – an uncomplicated delight that also shines when served slightly chilled in summer. Altareanswer to the question: what is the perfect everyday wine?
