In 1968, a Turin father sent his fifteen-year-old son to the countryside as a punishment – the boy had marched in student protests. The son's name was Aldo Vajra, the land was Barolo, and the punishment turned into a vocation. Three years later, the winery was the first organic winery in Piedmont. Today, Aldo and Milena and their three children Giuseppe, Francesca and Isidoro run forty hectares in the highest vineyards in the municipality of Barolo – and prove with this Moscato that a house that cultivates legendary Nebbiolo crus such as Bricco delle Viole also takes the supposedly light wines seriously.

The name says it all: Grillo means cricket – and in Sicilian folk tales, the cricket is the fairies' horse that carries them through the night on its back. "Cavallo delle Fate" therefore – the fairy horse. A wine that takes its name seriously: light at first glance, but with an energy that carries. Grillo is one of the oldest grape varieties in Sicily, a cross between Catarratto and Zibibbo, long known primarily for Marsala. In Regaleali, it grows on the hills of Sant'Anna and Piana Case Vecchie, 480 metres above sea level, facing south-east, in deep loamy, slightly calcareous soil. Tasca deliberately plays with two harvest times: Some of the grapes are harvested earlier – for freshness and minerality – the rest later, for body and structure. No wood, no malolactic fermentation, four months maturation on the lees in steel tanks. Cool, precise, with respect for a grape variety that needs no disguise.

In the first century BC, the Pelasgians brought – immigrants from Thessaly – brought a grape variety to the hills of Irpinia that the Romans later called "Aminea Gemina" because of its characteristic two-part grape. Two millennia later, this vine still has the same character: unconventional, mineral, with a longevity that is unrivalled among white varieties. Mastroberardino has not only cultivated the Greco – the family rescued it when it had almost disappeared after the Second World War and made it the flagship of Campania for decades. The vineyards of Tufo and Petruro Irpino are situated at 450 metres above sea level, exposed to the south-east, in clayey and calcareous soils – and in Tufo the soil is literally named after the rock that was once important as a sulphur mine. This sulphur tone in the terroir is no coincidence: it is a signature. Hand-picked in the second decade of October, classic vinification in steel tanks at a controlled temperature, followed by several months of bottle ageing – precise, without distraction.

The loose, well-aerated sandy soils with calcareous gravel offer ideal conditions for the demanding Rheinriesling. The microclimate does the rest: the warm afternoon wind from Lake Garda alternates with cool morning breezes from the north, ensuring constant ventilation from April to October. The grapes undergo a 6–8-hour cold maceration before pressing – a process that releases the fine fruit flavours from the skins. Fermentation takes place at a controlled 19 °C in stainless steel.

The aromatic soul of South Tyrol. Gewürztraminer is considered the most typical of all South Tyrolean white wines – full-bodied and unmistakably aromatic. At Peter Zemmer, this grape variety grows on low-growing rootstock in the Guyot system, in the best vineyard sites on the valley floor around Kurtinig at 220–230 metres above sea level. The favourable location, ideal sunshine and good aeration of the grapes create ideal conditions for this demanding variety. After destemming, a six to eight-hour cold maceration follows, which transfers the valuable flavours from the skins into the must and intensifies the characteristic bouquet. Gentle pressing and subsequent fermentation at a controlled temperature of 19 °C in stainless steel preserve the varietal aromas in all their splendour.

Sauvignon bianco doesn't come from here. And that was never a problem – on the contrary. The variety from the Bordelais has long since found a second home in the hilly locations of the Collio Goriziano: The windy slopes, the marly soils of Eocene origin, the cool nights between the Julian Alps and the Adriatic Sea – all this forms a Sauvignon that has nothing in common with Loire or Nouvelle-Zélande. It's simply Friulian. Mario Schiopetto knew this. He had travelled Europe, learned precision in German cellars, elegance in France and elegance in Capriva del Friuli – and in Capriva del Friuli turned both into something of his own. His Sauvignon bianco was one of his early passions. The Pompiere version that Emilio and Alessandro Rotolo bottle today is the direct, accessible interpretation: hand-picked at the beginning of September, gentle pressing, fermentation in steel at a controlled temperature, a few months on the lees.

Anyone who understands Ribolla Gialla understands Friuli. The variety is old, unique and uncompromising – it gives the best of itself on poor soils and does not forgive any laziness in the cellar. It is no coincidence that the small vineyard around the archbishop's castle in Capriva del Friuli is still home to Ribolla Gialla today: as a silent commitment to the regional identity of the house. The soils of the Schiopetto vineyards – flysch, called "Ponca" in Friulian, from marine sediments of Eocene origin – are the ideal terrain: poor, stony, draining. The vine has to fight, and this fight shapes the character. Harvest at the end of September, fermentation in steel at a controlled temperature, short ageing in steel – the technique takes a back seat, the fruit takes centre stage.

South Tyrol's autochthonous king grape variety finds its ancestral terroir on the permeable gravel and crushed stone soils of the Bolzano valley floor at 250 metres. Here, where "Lagrinum" was first mentioned in a document as early as 1379, Lagrein thrives in its heartland – the warm, sun-drenched vineyards around Gries with their extreme day-night temperature fluctuations. The traditional mash fermentation in stainless steel with controlled fermentation and gentle mash movement, followed by malolactic fermentation and six months of ageing in large oak barrels, gives Rubeno its characteristic structure and elegance.

While the Blanc des Rosis brings together four grape varieties, the Friulano speaks only for itself. That is intentional. Because Friulano – the historic grape variety that Mario Schiopetto was the first to bottle pure and unblended in 1965 – needs no company. It is Friuli. The vineyards of Capriva del Friuli lie on Eocene clay and marl: soils that impart minerality and a cool, herbaceous depth to the grapes. Harvest by hand in the second and third decade of August, fermentation in steel at a controlled temperature, eight months on the lees – no wood, no effort that would distract the wine from itself.

Pinot Grigio has a difficult time. Too often softly rinsed, too often vinified for quantity – a name that promises more than it delivers. Things are different in Capriva del Friuli. Here the variety was once called "Ribolla di Capriva", here it is at home on Eocene marl and clay, here it is the last white vine to ripen – it is only harvested in the last decade of September, when the nights get cooler and the flavours settle. Emilio and Alessandro Rotolo vinify the Pinot Grigio with the same rigour as all the wines in the Pompiere line: soft pressing, fermentation in steel at low temperatures, short bottle ageing. No effort that goes beyond the fruit. The wine is allowed to show what the soil has to offer.

A house that is world-famous for its monumental Barolo crus produces one of the best Moscato d'Asti ever – this is not a contradiction, but a Piedmontese matter of course. The grapes come from forty-year-old Guyot vines in Castiglione Tinella, on soils rich in limestone and clay, where Moscato Bianco has been at home for generations. After gentle pressing and natural cold clarification, the must is stored at the lowest possible temperature without the addition of sulphites – and only fermented in batches in an autoclave when required. At around 5.5 per cent by volume, a cold shock stops the fermentation and thus preserves the natural residual sweetness and delicate aromas.

The classic grape variety from the Loire finds its southern alpine perfection on the calcareous clay soils between 300 and 500 metres. These medium altitudes offer ideal conditions for Sauvignon Blanc: The alpine microclimate with cool nights and warm days preserves the typical varietal flavour and lively acidity. Pale straw yellow in colour with greenish reflections. The intense bouquet reveals the variety of aromas typical of the variety: elderflower harmonises with ripe gooseberries, tropical nuances of passion fruit and kiwi blend with subtle herbal notes. On the palate, the Sauvignon Blanc is gentle yet structured with perfectly balanced acidity. The six-month yeast ageing gives it a silky texture and additional depth and length.
