Felline in Manduria stands for Puglia's indigenous grape varieties and the pioneering work of Gregory Perrucci, who has been shaping the region since 1992. Pietraluna is a single-varietal Negroamaro from Salento – strong, spicy, authentic. The grapes come from vineyards around Manduria, where calcareous soils with iron oxide deposits form the typical terra rossa. After manual harvesting, fermentation takes place in stainless steel tanks, followed by brief ageing to preserve the fruit.

The name reveals more than any label. Passamante – the forest right next to the Negroamaro vineyards of Masseria Li Veli near Cellino San Marco. A forest that bears its name from times gone by: "passare" and "amante" – the lover who steals away here unobserved. There are hardly any more romantic names for a wine. 100% Negroamaro, the great grape variety of Salento, on calcareous clay, 10 to 20-year-old vines, harvested in mid-September. Fermentation in temperature-controlled steel, six months in barrique – no more, no less. The Falvo family, who have been at the masseria since 1999, with Roberto Cotarella as Oenologist, do not experiment here. They make authentic wine far from the mainstream.

What began in 2004 as a commemorative wine to mark the 50th harvest of Salice Salentino – Leone de Castris has been producing this Apulian classic since 1954 – became an established tradition thanks to its resounding success. Since then, a new vintage of the "50° Vendemmia" has been released every year. A Riserva that demonstrates how Negroamaro and Malvasia Nera find their powerful yet elegant expression on the red soils of Salento. The blend of 90% Negroamaro and 10% Malvasia Nera di Lecce undergoes an 8- to 12-day maceration at a controlled temperature of 20 to 22 degrees following selective harvest, before the wine is aged for twelve months in 30-hectolitre oak barrels. A further six months of bottle ageing round off the wine's development.

For over three decades, this Salice Salentino Riserva has been the undisputed flagship of Cantine Due Palme – and a wine that proves year after year that greatness and a co-operative structure need not be a contradiction in terms. The Tre Bicchieri of the Gambero Rosso? For Selvarossa, this has long been a subscription. No other Apulian red wine has won this top award so consistently, and at a price-pleasure ratio that even cuvées four times more expensive regularly fail to achieve. The story of Selvarossa begins shortly after the turn of the millennium, when Angelo Maci – fourth generation of an old winemaking family and founder of Due Palme – realised his vision of uncompromising quality production. What began in 1989 with fifteen members now unites over a thousand winegrowers who together cultivate 2,500 hectares of vineyards in the provinces of Brindisi, Lecce and Taranto. The name Selvarossa – "red forest" – refers to the characteristic red-coloured, clayey soils around Cellino San Marco, rich in minerals, graphite and iron oxides, which give the terroir its unmistakable character.

F for Falò – bonfire. The name alludes to the traditional fires lit in Salento at the winter solstice. Cantine San Marzano has dedicated a single-varietal Negroamaro to this custom, which emphasises the dark, intense character of this indigenous grape variety. The grapes are grown on the calcareous, iron-rich soils between San Marzano di San Giuseppe and Sava. Following hand-picking, the wine undergoes extended maceration, followed by twelve months' ageing in Caucasian oak barrels – an unusual choice of wood that lends the wine its own distinctive aromatic signature.

The Donna Lisa vineyard is located in the heart of Salice Salentino. The Negroamaro vines are planted in the Pugliese Alberello – the old bush vine training style, which forces each vine to stand on its own. Around 7,000 vines per hectare, on average fifty years old. Those who have been standing in the Salento soil for so long have learnt to make a lot out of a little. Hand-picked at the end of September, maceration at a controlled temperature for at least 13 days, malolactic fermentation, then transferred to French barriques in spring – maturation for around 18 months, followed by at least six months in the bottle.

Selvarossa is a tribute to the autochthonous grape varieties of Salento: the Negroamaro – "niuru maru" in the dialect, "black bitter" – has been rooted in this soil for three thousand years and provides the dark, almost black depth of colour, the solid tannins and the bitter spiciness that justify its name. The Malvasia Nera provides a counterpoint of elegance and soft, velvety fruit. Both grape varieties are cultivated using the traditional Alberello system, the archaic bush training method without wire frames, which offers the vines protection from the scorching heat and naturally limits the yield. The grapes for the Selvarossa come from the oldest, most select plots and are harvested by hand in small crates when perfectly ripe, some even slightly overripe – some even slightly overripe to maximise concentration and sugar content.

A misconception made history. Generations of wine lovers interpreted "Negroamaro" as "black and bitter" – yet the name reveals a different truth: the Greek "mavros" and the Latin "niger", both meaning "black". Black like the berries, black like the night over the Ionian Sea, which has been lapping against the shores of Apulia since the 8th century BC. No wonder, then, that Gianfranco Fino calls his Negroamaro "JO" – after the very sea that laps the shores of Manduria and whose salty breeze sweeps through his vineyards. Whilst Fino's Primitivo is a "loud" masterpiece, JO whispers. Yet if you listen closely, you can hear the very soul of Salento within it. The vines, forty years old and trained in the classic Alberello bush style, are rooted in calcareous-loamy soil just a few kilometres from the Ionian Sea. Each vine yields barely 800 grams of grapes – concentrated essence rather than southern opulence. In mid-September, when the berries have already begun to dry out slightly, the harvest begins by hand. Two to three weeks' maceration, followed by nine months' ageing in French barriques, half of which are new and half previously used. No filtration, no fining – Fino allows the wine to retain its integrity.

The black black one. For love of opulence.
Negroamaro, with about 11,000 hectares, is one of the most important autochthonous varieties in Puglia. Besides and almost at the same time follow Primitivo, Aglianico, Malvasia Nera and also Montepulciano. The specialities Ottavianello and Susumaniello as well as some national and international grape varieties are currently experiencing a secret renaissance. The plateaus consist of clay, sand and calcareous layers, the regional climate is hot and quite dry, which is why in some regions irrigation is necessary during the summer months.Negroamaro is a relatively late ripening variety with thick berry skin, therefore quite resistant against diseases and very colour intensive, which is also expressed by the name. The result is powerful, dark, silky to velvety red wines with dark fruit and powerful structure, which can also mature well for a few years. The sometimes exuberant fullness is often underlined by a slightly higher residual sugar value, which gives the red wines a special courtesy.
