Bagnara is a village between Cellino San Marco and Campi Salentina. Limestone hills, Mediterranean scrub, figs, olive groves, the wind from the Adriatic Sea. Here, along the old "Limite dei Greci" – the historical borderline of the Greek colonies in Apulia – grows the Fiano of Due Palme. A grape variety with a long history in Salento, already known at the time of Frederick II. Hand-picked, cold maceration at 4°C for 24 hours, temperature-controlled fermentation in steel. Straw yellow in the glass, fresh. The nose opens with citrus, white peach, a hint of almond and Mediterranean herbal spice. Lively on the palate, with good acidity and a long, salty, mineral finish. Apulia is the heel of the boot – surrounded by two seas, the Adriatic to the east and the Ionian Sea to the west. Cool breezes moderate the summer heat, the sandy limestone soil stores the heat of the day and releases it again at night. Fiano Minutolo grows in this climate – also called "Latina Bianca" here in Apulia – on vines over twenty years old from the Masseria Li Veli. The nickname "Minutolo" describes what the eye sees: Small, compact berries with concentrated flavours. Harvest at the beginning of September, fermentation at a maximum of 16°C in steel, ageing in steel. No interventions that remove the wine from its origin.

Irpinia is not Campania in the tourist sense – no sea, no Vesuvius, no Amalfi Coast. It is the inland region behind Avellino, a world of Apennine hills, chestnut woods and tranquillity, where viticulture has been deeply rooted since ancient times. Columella and Pliny mentioned Fiano as early as their time – then known as "Vitis Apicia", due to its ability to attract swarms of bees to the vineyards. Feudi di San Gregorio has been dedicated to this tradition in Sorbo Serpico since 1986. Pietracalda is their most precise expression of Fiano: a single vineyard of ten hectares, nestled between chestnut woods and old fruit trees at an altitude of 400 to 600 metres – a terroir that imbues the Fiano with freshness. Hand-harvested, fermented in temperature-controlled stainless steel tanks, then aged sur lie for twelve months – longer than the standard Fiano, and it is precisely this difference that defines the Riserva: more texture, more depth, more substance.

Campanaro is the flagship white cuvée from Feudi di San Gregorio – a masterful blend of Fiano and Greco, two indigenous grape varieties that develop their full potential in the cool, high-altitude vineyards of Irpinia. The grapes come from particularly well-ventilated plots with clay and limestone soils at an altitude of up to 650 metres – ideal conditions for fresh acidity, fine flavours and long ripening times. Brilliant straw yellow in the glass with golden reflections. Rich, complex aromas on the nose: yellow apple, ripe apricot, candied lemon peel, roasted hazelnut, some fennel herb and a hint of smoky minerality. The short maturation in barriques leaves behind delicate hints of vanilla and toasted bread without masking the fruit. Elegant and full-bodied on the palate, carried by the natural freshness of the vintage, with a firm structure and a lively, almost savoury length.

A renowned, single-varietal Fiano from limestone-rich, loamy-sandy soils in the Contrada Dispensa near Menfi. A bright straw-yellow colour with greenish highlights. The bouquet is complex and full of finesse: white flowers, Williams pear, ripe citrus fruit and a hint of exotic notes such as passion fruit and guava, underpinned by a salty, almost chalky nuance. On the palate, it is silky and expansive, with refined fruit, lively acidity and a cool, mineral edge. The texture is creamy yet remains clearly defined, convincingly expressing its terroir.

Cilento lies in the shadow of its more famous neighbours in Campania – Irpinia with its Fiano di Avellino DOCG, and Taurasi with its Aglianico. Luigi Maffini is one of the winegrowers who have given this coastal region south of Paestum a voice of its own, with the same high standards for Fiano that the more famous areas claim for themselves. Three hectares, facing west-north-west, trained using the Guyot method with 4,200 vines per hectare. The yield is deliberately kept low: 1.5 kilograms per vine, a level of concentration that many white wine producers would shy away from. Hand-harvested in the second ten-day period of September. The grapes are gently pressed; fermentation takes place directly in new barriques at a controlled temperature of 16°C, followed by around four months' ageing in the same oak.

The project aims to highlight the link between the vines, the wines and their territorial origins. The Mastroberardino family wants to recreate the style of winemaking of the indigenous grape varieties of Irpinia (Greco, Fiano and Aglianico) that took place between the late 1950s and early 1970s for the Taurasi and between 1970 and 1980 for the two white wines from Irpinia. It is the unmistakable style (the stilèma) of a family that has interpreted the natural heritage of its territory over generations and that today impressively emphasises the genuine character of the terroir, which by no means can be expressed through high concentration and intensity alone.

There comes a moment in the history of every small winery when it stops having to prove itself – and begins to remember. Clelia Romano started out in Arianello di Lapio in 1994, with just a few hectares and one firm belief: that Fiano, grown on these volcanic calcareous marl soils, at altitudes of between 480 and 620 metres, in the Apennine hills of Irpinia, could be one of Italy's great white wines. The critics proved her right – swiftly and unequivocally. Today, she runs the estate together with her daughter Carmela. The wine, which bears the founder's name, is a testament to both generations.

Fiano is one of the oldest autochthonous white grape varieties in Italy. It is mainly found in the southern Italian region of Campania. Probably cultivated by the Romans, it was widespread and very popular from the Middle Ages to the end of the 19th century. After the phylloxera disaster, international varieties such as Chardonnay or the easily cultivated Trebbiano varieties were preferred in many areas. Autochthonous grape varieties largely died out. So did the Fiano.
In the 1970s a return to the past began and it is thanks to Antonio Mastroberardino that the variety was saved. The Mastroberardino winery invested a lot in research. In cooperation with universities and grape nurseries, other old grape varieties such as Greco di Tufo, Falanghina, Piedirosso, Aglianico or Coda di Volpe have been successfully recultivated over the years. In 1990, there were no more than 500 hectares of Fiano in the whole of Italy, now there are more than three times as many, with a strong upward trend, very pleasing.
The relatively late ripening Fiano grape produces aromatic, spicy white wines with a peach and grape aroma reminiscent of Muscat, often with a delicate honey and nut bouquet. When properly matured, they have a long shelf life. If you happen to have read in Wikipedia that Fiano should be drunk young, please forget that. Mastroberardinos Fianos are still in the barrel for the drinking window indicated there. On the contrary, Fiano from the good growing regions Cilento, Sannio or Avellino only tastes really good after two or three years of bottle ripening in the cellar and remains a fine pleasure and a wonderful universal food companion for a few more years.
Wine journalist Steffen Maus describes Fiano this way: "Aromas of lime blossom, dried fruit, hazelnut, almond and wild fennel are just some of the complex aromas, always accompanied by a wonderful minerality and juiciness on the palate, which invites you to continue drinking. Wonderfully independent and not to be compared with other Italian or French grape varieties."
The most famous growing areas are the DOC Sannio, DOC Cilento and the region around Avellino, which has been upgraded to DOCG since 2003. The Fiano di Avellino is probably the best known. Its vineyards, situated in the heart of Irpinia, reach up to 700 m above sea level, are always well ventilated and particularly fine fruity due to clear temperature differences between day and night.
After new plantations in the last century, Fiano can also be found outside Campania on a small scale in Basilicata, Marche and Sicily, where Planeta has proven what impressive wines can be produced from Fiano.
