It takes its name from a tool, not an ingredient: the "chitarra", a wooden frame with metal strings stretched across it, much like a guitar, over which the fresh dough is pressed. This results in a square rather than a round cross-section – thicker than spaghetti, with a firm bite that absorbs every sauce completely. Rustichella d'Abruzzo has been producing it in Pianella since 1924 using the same method: durum wheat semolina, bronze dies, and slow drying at a low temperature.
