    Fine as a hair, almost fragile – and therein lies the art. The capellini from Rustichella d'Abruzzo have been made according to the same principle since 1924: the best durum wheat semolina, pure Apennine spring water, bronze mould. What takes minutes in industrial production takes up to 52 hours here – slow drying at 35 to 40 degrees so that the grain retains its character. The result is a thread that looks delicate but has bite. For light broths, fine butter sauces and cold summer dishes. SUPERIORE.DE
