In 1400, the Duke of Milan gifted Captain Stefano Quadrio a castle in Chiuro. Quadrio became governor of the Valtellina, planted vines, sold wine and had cellars built on four levels beneath the house. Just under five hundred years later, in 1897, Nino Negri arrived from Aprica, married Amelia Galli and established a winery in the same village. The old cellars still exist today, and they are integral to the wine: Castel Chiuro matures there in barrels and bottles for at least ten years. It is produced only in the finest vintages.

The Nebbiolo, known as Chiavennasca in the Valtellina, grows on south-facing terraces at altitudes of between 300 and 600 metres, supported by dry stone walls which, throughout the Valtellina, stretch for a total of 2,500 kilometres. The soil consists of ancient slate; it is stony, with sand and silt, and so shallow that the roots are forced to penetrate the rock. The climate combines significant differences between day and night with a Mediterranean influence. The grapes are harvested by hand in October, destemmed, and the must is pumped over during fermentation. Deep garnet red. Redcurrant and black cherry, rosemary and thyme, lavender, along with mint and eucalyptus, with a hint of wet stone in the background.
