Far from the fame of the Vino Nobile vineyards, this Chianti was created in the "Pozzi" vineyards, where Federico Carletti ventured an oenological experiment. At an altitude of 350 to 450 metres, with a view of the famous San Biagio church, densely planted Sangiovese vines thrive on stony clay soils of almost skeletal permeability. Ninety-five per cent Sangiovese blends with five per cent other Tuscan varieties to create a Chianti of uncompromising authenticity. Six months in stainless steel preserve the youthful freshness of this DOCG composition, which Federico deliberately conceived as an alternative to modern velvet gloves.

The steep slopes of St. Magdalena near Bolzano, between 300 and 350 metres above sea level, are home to this legendary South Tyrolean red wine speciality. The autochthonous Vernatsch grape thrives here in ideal climatic conditions on moraine debris soils facing south and south-east. The cuvée of 90% Vernatsch and 10% Lagrein is vinified by the renowned St. Michael-Eppan winery, which has been one of the leading co-operatives in South Tyrol since 1907. The grapes are hand-picked at the beginning of October and carefully selected. After fermentation in stainless steel tanks, the wine undergoes malolactic fermentation before being matured in steel tanks.

The world knows Montefalco above all in its dark red colour – sagrantino, tannin, depth. The fact that the Caprai house, which helped write this red legend, also produces white wines of distinction is its best kept secret. The Bianco Montefalco combines two very different partners: Trebbiano Spoletino – the autochthonous Umbrian grape variety, aromatic, fresh and acidic, with a subtle floral flavour – and Chardonnay, which adds fullness and flavour to the blend. No wood, just steel and time: three months of ageing, three months in the bottle. The result is not a white wine that tries to show off, but one that has a very respectable balance.

Dry Moscato from the Noto coast – unusual, but all the stronger in character. Allemanda comes from the south of Sicily, where the calcareous, sandy soils of Tenuta Buonivini and the Mediterranean climate create a unique terroir for aromatic grape varieties. Maturation in stainless steel tanks emphasises the purity and finesse of this rarely dry Muscat variety. Pale straw yellow in the glass with silver reflections. The aroma is clear and animating: lychee, white peach, lemon balm, wild flowers and a hint of nutmeg. Lively and dry on the palate, with a lean structure, well-integrated acidity and a delicate, almost salty finish. No opulence, but precise flavours with a fine spiciness. This characterful Müller Thurgau, which embodies the cool elegance of South Tyrol's north-easternmost growing region, comes from the high vineyards at the beginning of the Eisack Valley and on the Ritten at an altitude of 600-700 metres. The Isarco Valley, where sunny, warm days follow cool alpine nights, offers ideal conditions for this sophisticated cross between Riesling and Madeleine Royale with its mineral-rich, sandy and gravelly soils. The grape variety, named after the Swiss botanist Hermann Müller from Thurgau, finds the best conditions here on warm hillside terraces with a delicate soil structure. The harsher climate with increasing altitude and the marked differences in temperature give the wine the freshness and variety of flavours that make it so popular.
